Veggie sandwich ideas (for someone who doesn’t like cheese)

We’ve been gradually cutting down our meat intake. Started with meat free Mondays and now we rarely have meat for dinner or breakfast at all.

I’m struggling for veggie lunchtime sandwich ideas though?

Mushroom pate.
Roasted red pepper hummus.
Sundried tomatoes and pesto.
Egg salad.
Beef tomato, beetroot and salad.

@Longdistance Do you have a favourite recipe for mushroom paté? I can't find it to buy anywhere at the moment.

DS is veggie (well he's technically pescetarian but for this thread that doesn't matter). He said Linda McCartney sausages are the best (although I've only ever bought those and quorn ones)
Linda McCartney pulled pork burgers are also amazing.

I buy him veggie kievs from Morrisons. Unlike a PP I find their range of vegetarian food is brilliant, and has increased massively recently.

One of my favourite sandwich fillings as a teen, with a veggie best friend, was vegetable fingers (I think they are birds eye) with sliced beetroot, cheese and whatever else we fancied from the fridge. Lettuce and salad cream were good.

Do you not like cheese at all? DS isnt a massive fan, but grated cheese, chopped grapes and mayo in a wrap is delicious.

The coronation chickpea recipe is great. We had it on a salad of lettuce, new potatoes and cucumber on the 1st day and on the 2nd we had it on seeded bread with a crunchy side salad.

I’m making the mushroom pate, recipe above, tonight.
