Veggie sandwich ideas (for someone who doesn’t like cheese)

We’ve been gradually cutting down our meat intake. Started with meat free Mondays and now we rarely have meat for dinner or breakfast at all.

I’m struggling for veggie lunchtime sandwich ideas though?

I was just checking in case you literally were trying to think up enough sandwich ideas for it never too get boring! Feel free to disregard my previous suggestions then, and my suggestion for sandwiches is that pretty much anything can go in them.

Kidney bean and cocoa powder sounds really interesting. I think we need to experiment more with bean based dips. We sometimes have toasted rye bread with olive tapenade (I know it’s not a bean) with mixed leaves, tomatoes and onion on top and I think bean dips would lend themselves well to that.

M&S Plant Kitchen No-chicken Kievs are really good, they’re vegan I believe.

As for sandwiches, I’m loving toasted / grilled mozzarella, pesto & sundried tomatoes sandwiches at the moment.

These chipotle pulled Portobello sandwiches are really good (I just leave out the feta) trendland.com/chipotle-pulled-portobello-sandwiches-with-feta-cilantro-topping/

I'm not sure if already mentioned (and not technically a sandwich) but bruschetta, any kind of crostini, or garlic mushrooms on sourdough bread are also all delicious and sandwich-adjacent!

Toasted sandwich with pesto, grated cheese, mushrooms, courgette, tomato and capsicum. Delicious as sandwich, but even better on ciabatta bread.

hummous and mango chutney or hummous and pickled beetroot is amazing. Especially with a bit of salad for crunch

Thanks they look good. The “chicken” Kievs are mainly for DD. I’ve been hesitant about feeding her fake meat as the salt content looks quite high in most.

A really delicious bean paté is a drained tin of kidney or cannellini beans in the blender with a fistful of fredsh coriander, slug of lime juice, cumin, a small garlic clove and some olive oil, and season to taste.

Blend it up and use as a dip for veg or tortilla chips, or on a sandwich with cucumber and lettuce.

(the kidney bean one looks really unappealing because the red and the green make a sludge colour, but it is honestly so delicious)

Asda do some own brand fake chicken that is hands down almost as good as roast chicken. It's frozen. We add it to guacamole, salsa and a bit of sour cream in a wrap. Amazing.

Also love a good veggie sausage and boiled egg sandwich

Tesco do good veggie sausages and the do (or def did) a 'chicken' Kiev. Or you could make your own from Quorn fillets.

Re veggie sausages - Linda McC red onion and rosemary ones are amazing for bangers and mash. We’ve also recently tried these Heck vegan ones and they are perfect on a bbq for hot dogs as have a slightly smoky flavour and stay moist if you put a tiny bit of oil on them before cooking. Not tried any others that don’t go dry and tough on a bbq.

I make crispy fried tofu to go on top of stirfry and make extra for sanswiches and wraps.

Also like avocado and feta with salad but you could replace the feta with anything salty.

Different flavours of hummous to mix things up.

Add pickles or relish for a bit of tang or sweetness.
