Veggie sandwich ideas (for someone who doesn’t like cheese)

We’ve been gradually cutting down our meat intake. Started with meat free Mondays and now we rarely have meat for dinner or breakfast at all.

I’m struggling for veggie lunchtime sandwich ideas though?

I really love cooked Quorn nuggets, cooled and used as a filling for a pitta or wrap with some salad and mayonnaise.

Watercress.
On it's own, loads of it with thickly butter bread and a sprinkling of salt
With humous
With egg/egg mayo

Also tabbouleh with/without humous in a wrap

I like grilled aubergine with humous.

I am quite curious what meat you used to eat at breakfast? I can't think of anything stranger on a normal day.

With a hangover and staying at a nice hotel a cooked breakfast is the bollocks, but any other time? Nah too 1950s for me!

Just a fry up on a Saturday. Normal breakfast is usually eggs or something on toast. Although DP would sometimes have a ham omelette.

Also clotted cream and treacle: called thunder and lightning. One of my faves is a simple salad sarnie with thick crusty white bread and butter, crispy romaine, cucumber, thinly sliced onion and firm tomatoes. The hole in the wall opposite our office used to make it, and it's a triumph.

Sainsbury or Tesco Cumberland sausages that are made mostly from mushrooms are delicious.

American style grilled cheese sandwiches are fab - butter the outside of the bread, put cheese and mustard or marmite in the middle and fry in a medium non-stick pan for 2 minutes each side. I usually put a lid on the pan to make sure the cheese melts before the outside burns.

And whilst I'm on a Meera tip.... not sure these work for packed lunches but maybe more for a Saturday home lunch (or even light supper) but her tofu Bahn mi is very good

Just noticed you asked for sausage recommendations.... Heck, both sausage and burgers are amazing, and better than any meat version.

Sausages by Richmond, if you like an old fashioned salty pink sausage, do a vegan version, and is fab in a dirty fry up.

@MarmiteyCrumpets I'd love your veggie meatloaf recipe if that's ok?

Here you go @Graphista. I make the bolognaise in the microwave, but it works just as well on the stove.

I start with finely diced onion, carrot, celery, capsicum and mushrooms, plus lots of garlic, a little dried chili seeds, Italian herb mixture, celery salt and pepper. Cook in olive oil until soft (a little red wine is nice but not essential).

Add 1 sachet tomato paste and cook for another minute. Next stir in 1 package (I think 200g) of dried soya mince granules of your choice - I'm not in the UK so our brands are probably different, but I like the savoury flavour. Give this a good stir.

Next add 1 litre of boiling water, with about 1T each vegetable stock powder/concentrate and Marmite, a couple of bay leaves, a little Worcestershire, 1 can of chopped tomatoes, and about 1T of sugar.

Bring this to a boil while stirring (or nuke on high for about 3 minutes).

Then simmer for about 15 minutes, stirring regularly.

Now, you can serve this as a bolognaise on pasta, or let it chill a little to make a meatloaf.

I add a little oats (maybe 2 - 4 T) and a flaxseed egg (1T ground flaxseeds stirred into 3T water then left to sit for 10 minutes until it has that viscousy eggy consistency). Let the mixture cool and thicken a bit.

Grease a loaf tin, bung the mixture into a +-200C oven and cook for around 45 minutes.

Lovely with mashed potatoes and sauerkraut or cooled and sliced on sandwiches.

I had some baba ganoush (mashed up grilled or baked aubergine innards, tahini, garlic, cumin, lemon juice and salt) in toasted pitta for lunch.

I made it myself. It was very nice.

Thanks everyone for suggestions, this week will be the first full veggie week we’ve had since we started with meat free Mondays, a couple of years ago. There are so many good suggestions on here that it will take a month to get through them all, which is fab! We’ve decided to aim for a veggie June.

I’d definitely recommend the baked bhajis recipe above, they are a lot lighter than the previous fried recipe I used. We had the leftovers for lunch on Sunday - we went for a walk and a picnic and took the bhajis, lettuce, cucumber, wraps and raita with us. We assembled the sandwiches when we stopped for lunch (so they didn’t go soggy) and they were a hit with all 3 of us 😁.

We’re having coronation chickpea on new potato, lettuce and cucumber salad for lunch today and I’m doubling up on the coronation chick pea mis so we can try some on sandwiches tomorrow. I’m using the Gousto recipe - www.gousto.co.uk/cookbook/vegan-recipes/creamy-coronation-chickpea-salad.

We have some Heck and Richmond sausages to try later in the week and have quite a few more recommendations to get through over the next few weeks. We also need to go to Morrison’s to try some of their Deli slices. Looking forward to the bean dips too, as well experimenting with avocado and aubergine. This thread has definitely opened our minds 😁.

That's great OP! Glad you found so many nice new recipes. This thread has also been really helpful for me as it's easy to get stuck in a rut sometimes!

I'll definitely be trying the coronation chickpea recipe you posted, a cafe near me does one and since I haven't had it for months due to lockdown, I'm looking forward to trying to recreate it at home.
