Veggie sandwich ideas (for someone who doesn’t like cheese)

We’ve been gradually cutting down our meat intake. Started with meat free Mondays and now we rarely have meat for dinner or breakfast at all.

I’m struggling for veggie lunchtime sandwich ideas though?

Yes, I think we need to try a bit of fake meat. We can do our weekly shop at Morrison’s next week and see if we can get hold of the deli slices.

I love hummus, grated carrot and beetroot. It can get a bit messy though!

Also falafel with lettuce or spinach.

Mashed chickpeas with dill. (The flavours work so well together)

Hot or cold cooked veggie burgers or sausages with chutney or pickle.

Cold leftover dhal used like a spread. I make mine with yellow split peas cooked with onion, garlic, ginger, tomato, turmeric, cumin, coriander, salt and pepper. We eat it hot as a side dish but I always make extra for lunch.

Cold boiled potatoes thinly sliced with salt and pepper. Love double carbing! Grin

On that note, Tortilla baguettes in Spain, so good 😊.

Richmond veggie sausages are nice. I hate the meat ones and reluctantly tried their veggie version when DD cooked them the other night ... pleasantly surprised

Naked glory are my new favourite veggie sausage, far better than any others I've tried!

I did have my concerns about Richmond, as people have said, the meat ones aren’t great. Maybe we’ll try the Richmond, Linda M and Cauldron ones and see which ones we like most.

Linda McCartney sausages are nice but there are much better. Richmond meat free (fridge section) or Naked Glory (some in fridge, some frozen) are the best sausages in my opinion.

The Cauldron one’s aren’t very convincing, more veggie than fake meat. Richmond and Naked Glory could fool a meat eater.

Any leftover curry in a sandwich is amazing. Thick bread to soak up the sauce. Try chilli paneer

Simon Howie veggie sausages have a great flavour and texture. They also do veggie flat sausage and black pudding.

Sandwiches - tomato with black pepper and mayo is good.

Veggie black pudding sounds interesting. I’ve never tried the blood one as it doesn’t appeal. I like veggie haggis but have never had the meat one. Even before thoughts of becoming veggie had appeared, I stayed away from anything offal like.

I think we need to look into chickpeas a bit more. There are some lovely sounding suggestions on here - mashed with dill, mixed with spring onions. We use chickpeas a lot in curries and in salads but hadn’t thought about using them as a sandwich filling (apart from shop bought hummus).

I love these www.quorn.co.uk/products/quorn-vegan-ham-free-slices dry fried in a pan, and used as a bacon alternative. I'm not such a big fan of them uncooked but fried they are nice and better than most bacon alternatives imho.

Spanakopita is my fave veggie dish (I use ricotta as it's milder than feta) and it's great cold - like a sandwich made of filo pastry!

Love falafels with chilli sauce and salad in a pitta too

Yes chickpeas are great in sandwiches. Coronation chickpea is another nice filler. I haven't made it for some time so I can't remember the exact recipe I used to use but there are many online.
