Veggie sandwich ideas (for someone who doesn’t like cheese)

We’ve been gradually cutting down our meat intake. Started with meat free Mondays and now we rarely have meat for dinner or breakfast at all.

I’m struggling for veggie lunchtime sandwich ideas though?

Mumbai Sandwiches are amazing in this weather. Just sub the potatoes with other veg (carrots / aubergene / cauliflower are particularly good)

Onion bhajis sound good, perhaps in a pitta with some chutney.

Or try raita instead of chutney, if you like it, with some crispy lettuce.

Smoked tofu plus various salads things. I like avocado and lashings of chilli sauce.

Yes that sounds delicious. I’m going to have a go at making Onion bhajis tonight - we’re having cauliflower, courgette and lentil curry. Will make too many bhajis and try them in a sandwich tomorrow.

Thanks for all the ideas. Avocado is definitely something we have been underutilising!

Veggie meatloaf (I make this from a bolognaise made with dehydrated soya mince) plus spinach, tomato, chutney and mayo

Sounds delicious, I made a meatloaf with puy lentils and mushrooms last week. Hadn’t thought of using it in a sandwich.

veggie sausage rolls cheesy (sausage type) rolls
curried cold baked bean sandwiches (grew up with these in Aus!)
falafel in mint yogurt wraps
samosas
mixed salad box with mixed nuts coleslaw/pot salad
fruit salad & yogurt
cheese & oat biscuits (pepper ones are nice)

Morrison’s do a meat free ‘meat slice’ which is sage and onion flavour, can’t remember the brand but it should come up if you search. It’s honestly my favourite ever!

I also love the new peanut butter marmite, and Aldi’s infused tuna tins on sandwiches

I'm not a huge cheese or sandwich fan so those are the sorts of sandwich I'd go for if I had to!

Veggie sausage wise I like the Birds Eye green cuisine range.

Quorn used to do a nice fresh chunkier sausage but I haven't seen them for ages!

Now this is tremendously hard to recreate as it needs my mum's spiced beetroot pickle Grin but that, with hummus is absolutely incredible. Might work with normal pickled beetroot and hummus. Best if the pickled beetroot is almost grated as opposed to thick slices.

The tang of the beetroot goes incredibly well with the creaminess of the hummus.

And oh gosh yes grilled halloumi, I like it in a wrap with that spicy peri mayonnaise and crunchy lettuce.

Sainsbury’s sell two pâtés made by VegRoot. They’re butternut and aubergine, they’re both delicious and currently on offer!
Cauldron Lincolnshire sausages are good, as are Richmond.
Linda McCartney shredded hoisin duck also makes a good wrap filling.

Tapenade with cucumber or avocado or tomatoes.

Get a selection of jars of Italian anti pasta vegetables in oil, artichokes, mushrooms, aubergines etc and use as as sandwich fillings.

Along similar lines, roast a tray of Mediterranean vegetables, eg peppers courgette tomatoes and when cold chop up & use a mix as fillings for rolls.

Houmous, grated carrot and onion marmalade
Avocado mashed with a squeeze of lime and spread on toast/crusty bread with a twist of black pepper

Jackfruit. You can buy pre-made teriyaki or BBQ mixes or do your own.
