Veggie sandwich ideas (for someone who doesn’t like cheese)

We’ve been gradually cutting down our meat intake. Started with meat free Mondays and now we rarely have meat for dinner or breakfast at all.

I’m struggling for veggie lunchtime sandwich ideas though?

Also, I discovered a nice hummus salad the other day.

Broad beans and peas warmed and mixed with a bit of chopped mint, lemon juice, good quality olive oil and black pepper. Topped with a dollop of hummus and eaten with a toasted pitta. It was really good.

More a wrap filling, sorry!

I make a bean salad with red onion and a pepper diced, a couple of tins of beans drained and rinsed (my favs are kidney, black beans, cannellini and borlotti) and then I make a dressing with olive oil, tomato puree, chilli powder, cumin and paprika, salt and sugar and juice of a lime or lemon. I have no measurements because I just do it to taste, but I then mix that together with the beans.

Then I spread some cream cheese on a wrap, add some bean salad and lettuce.

I was trying to recreate the spicy bean wraps you can buy in Tesco, and it's pretty close.

Im a veggie and love:

Feta and roasted veg
Avocado and roasted veg
Mushroom pate
Quorn ham and mustard
Quorn chicken and stuffing
Glamorgan sausage and some kind of chutney

The Morrison’s one is really great. I bought a Waitrose/ Ocado one before which was pretty much inedible. I haven’t seen them anywhere else so if anyone else has, let me know!

Environmental reasons, health reasons (beans and pulses lower cholesterol) and cost - I don’t like cheap supermarket meat as it tends to be full of additives and buying good quality meat from the butcher is expensive.

One of the reasons I’ve been put off fake meat is due to the additives but I think if we only eat it now and again we should be ok.

Tesco frozen "Beetroot Burgers" are nice .They are a mixture of both Beetroot and kidney beans . Some salad and a little Tomato Ketchup and good to go! 6 for £3.00!

"While I’m here, could anyone recommend a good brand of veggie sausage please?" I like the original Linda McCartney ones best. Definitely the best ones for sausage sandwich or sausage casserole, great texture & well seasoned. I generally like quorn but don't rate their sausages they're rubbery and bland.

They're not for all veggies but I do like the quorn deli slices (except I can't eat the vegan ones they upset my stomach - no idea why but I keep getting them as subs for the veggie ones!)

If you do like quorn the quorn roast (once cooked of course) is great for "leftover" style sandwiches

Cauldron do similar and their "beef" ones are yummy.

Holland and Barrett are great for Spreads and pates, I especially like the smooth granvita ones in the tubes. The tubes are HUGE and rarely last 2 days in my house!

I have to say Morrisons aren't great for veggie products, I first tried Morrisons around 15 years ago as I was on a budget and heard they were cheap and they had sod all veggie stuff, I tried them again recently (before cv) and have to say I don't think they've improved much on this at all.

They're a veggie Lorne/square sausage I believe this is a Scots company and lorne sausage is very much a Scots thing.

I learned about the veggie version on here and was able to try and they are yummy and imo quite close to the meat version. Delicious in a sandwich with ketchup or brown sauce and of course also delish in a veggie glasgow fry which I'll make on occasion - howie sausage eggs, quorn rashers, mushrooms, beans, tattie scones and toast or fried bread with a massive mug of scottish blend tea - bliss!

Haven't been able to get the veggie black pudding to try yet.

With the “heatwave” here I’ve added cucumber to my online orders as I’m craving a classic cucumber sandwich -just soft white bread, butter and cucumber slices, but I like them with a little salad cream too sometimes.

I think a pp said egg and salad cream sandwiches - that takes me right back to childhood as mum made these with a little black pepper fabulous!

Might not be to everyone’s taste but I love butter beans and occasionally make them into a sort of chunky pate with olive oil, herbs and spices. Not got a recipe as such as it depends what I have in. Sometimes I’ll also mix in things like olives, sun dried tomatoes, pickled peppers, pickled garlic... as I say depends what I’ve got in

Also recommending Simon howie black pudding. Once cooked, spread about toast and have with a fried egg for a yum breakfast sandwich.

And not quite for your brown sauce butty, but Sainsbury’s shroomdogs are delicious - I forget the name exactly but there’s one that’s fake chorizo that is very yummy, good in sausage and chickpea stew, in a sandwich, hot dog bun etc.

Veggie sausages: Linda McCartney are good, but Cauldron (from the fridge bit rather than freezer) are better IMO.

Lots of pulses make good dips/spreads. Kidney bean and cocoa powder. Broad bean and anything. Red lentil and roasted pepper (I'd put cream cheese in this one too).

Do you always eat sandwiches for lunch? Maybe expand your repertoire a little, which will naturally increase your options and help with the monotony.

Salads of all types and variations - veg/grain/pasta (small amount)/potato/rice

Leftover portions of previous dinners (can usually be eaten cold for lunch to differentiate from dinner) - pretty much anything.

Fried mushrooms with garlic on toast is delicious and can probably just as easily be had in a sandwich.

No we don’t always eat sandwiches for lunch. Our diet isn’t monotonous as we eat a wider variety of food but this thread was asking particularly for interesting veggie sandwich fillings.
