What are you baking today?

Woke up at stupid o'clock and started a mental rummage through my cupboards and fridge. Have got up now leaving DP (who's 150 miles from elderly family and a bit down) in bed, and decided to make a lemon/orange drizzle cake. Haven't got a loaf tin but got something in remotely the right shape. Also only have duck eggs (as they were the last ones left when I last went shopping.) I will post a pic when it's ready....hope it's edible, don't fancy slinging out a load of perfectly good ingredients!
Anyone else baking today?

drspouse I think I'll do scones with my strong bread flour. I used up most of my plain flour making cakes and cookies. I am on the hunt for that and oats during my rare essentials shopping trip...

Yesterday I did an apple and pear crumble, using some ancient oldish coconut flour and oats for the topping

Today I did a small sponge using some ancient oldish gluten-free flour, plus some chopped bananas fried in syrup and a dollop of custard.

I seem to be a flour hoarder without ever realising it Shock

I'd just like to recommend this website Ration book recipes

There are almost 200 wartime recipes, many of which use store cupboard ingredients very frugally. The only pain is that it isn't sorted by name or ingredients, but really worth a scroll through.

Today we're making carrot and sultana steamed pudding, and carrot cookies.

If you've got potatoes and bacon, the Canadian bake is really nice

Another website to recommend is Thrifty Lesley. This is set up more with saving money in mind, but she does have whole meal plans, with shopping lists, plus all of the recipes split into breakfast/lunch/dinner and bakes. The oaty biscuits recipe I posted a few days ago came from there, and I can also really recommend the jammy oaty bar (use any jam or curd or mincemeat) and also the carrot and raisin loaf (bread based and freezes like a dream).

I have just brought some dough out of the freezer that I froze a couple of weeks ago. Making pizza with precious tinned tomatoes.

@Vebrithien - let us know how the carrot cookies turn out - i have an excess of carrots and a recipe that doesn't require an egg looks like a good option!

We baked banana and strawberry bread using frozen fruit a couple of days ago, it was delicious. Making pizza bases today.

I made a huge batch of 7 veg tomato sauce for pizza or pasta, it is frozen in tubs in the freezer and very handy!

BennyVegas the carrot cookies were brilliant! Used lemon essence rather than vanilla, but they were really tasty, sweet and crunchy on the outside and chewy on the innards. We will be making them again! My 3yo devoured them, so I had to hide the rest! You couldn't tell by taste that they were carrot, and with the lemon essence, the carrot bits tasted more like candied peel (lots of wartime recipes used carrot and lemon essence to mimic citrus fruit).

The carrot and sultana steamed pudding was a triumph as well, DH really enjoyed it with custard.

This has reminded me we have a lump of cookie dough somewhere in the freezer (I made it late at night for a school bake sale and was too tired to bake them all so froze half).

Plum crumble later as I found an ancient pack of "crumble mix" in the cupboard (I know, but I feel great about it now as we're short on flour etc!) and some very tired plums that look like they have had a hard life. I'm sure some cloves and a good bake will liven them up Grin
