Woke up at stupid o'clock and started a mental rummage through my cupboards and fridge. Have got up now leaving DP (who's 150 miles from elderly family and a bit down) in bed, and decided to make a lemon/orange drizzle cake. Haven't got a loaf tin but got something in remotely the right shape. Also only have duck eggs (as they were the last ones left when I last went shopping.) I will post a pic when it's ready....hope it's edible, don't fancy slinging out a load of perfectly good ingredients!
Anyone else baking today?

Just made Fifteens - can you call a no bake, baking? Anyway it's in the fridge...the vultures will be circling soon🤣

15s has made me remember a fridge cake using rich tea biscuits I had at a party years ago. The hosts were Australian and said it was a common recipe over there. It was made similarly to 15s but layers of rich tea and whipped cream I think. Sort of like a chocolate roulade using rich tea biscuits, cream and chocolate. It was lovely and I'm still kicking myself for not getting the recipe. Does anyone recognise this dessert?

Now I want to bake a fridge cake but have no condensed milk and already done our shop for that week...dam!

I have a scone recipe I want to try though very kindly given from another poster. Does anybody know if I can like for like substitute plain flour for bread flour? Or would using bread flour means I would need to play around with salt and baking powder etc that is already in the recipe? There's some absolutely amazing bakers on this thread I know you ladies will be able to help. Smile

I was able to source a supply of strong white bread flour through a local bakery and am going to feed by starter to get a loaf ready to bake tomorrow. So happy, and I will never take our daily loaf for granted anymore!

@Yesterdayforgotten I don't think i would given how precious flour feels atm. How about making hot cross buns if you fancy something sweet.

@mooboy thanks but only dh likes hot cross buns in my household but i looked online and it said it was fine to sunstitite the flour so I went for it and they turned out okay anyway luckily Smile

First attempt at home made bread. I definitely need a bigger tin but quite proud of how it's turned out.

Tomorrow I'm making a large vanilla sponge with butter cream icing and some flap jacks in an attempt to fill up my bottomless stomached DC

Having a baking break as we're eating our way through the walnut crumbles, gingerbread and DD3 made choc chip cookies.

I’ve made an apple cake today. It uses oil instead of butter and I had some eating apples to use up. Mine seems to be more cakey than the picture in the recipe, it’s nice though. I only used 6oz sugar.

@BloomedAgain thanks that worked a treat, no need for cream it taste delicious (I did only use two egg yolks) I’ve found this recipe to use the egg whites thehappyfoodie.co.uk/recipes/macaroons 🤣

I'm 'shielded' so trying to improvise with the foods I can get in supermarket deliveries. I had a weird almost entirely carb free one last time (no bread, no rice, no pasta etc), so experimenting with egg whites and ground almonds could be a good way to make a sugary treat from my supplies.
