Looking forward to some interesting store cupboard creations!

Ours is nachos with pulled pork on top with Mexican spiced (probably completely inauthentic) rice. Pork and rice both from previous meals and out of the freezer, will add a tin of sweetcorn and maybe kidney beans depending on whether it looks enough (large family)

Crisps and dips bought this week as they were pretty much the only aisles that still contained food.

Carb heavy but I don’t care, I’ve had to cancel my wedding 😭

Orzotto, from the recipe someone kindly posted recently.

It’s supposed to be with pancetta and peas, but in the absence of pancetta I shall use some of the streaky bacon that’s been in the freezer since Christmas.

Funnily enough one lonely bag of orzo was the sole remaining item of pasta on denuded Asda shelves well over a fortnight ago. Usually I only put it in soup, so I’m glad I bought it.

Tonight will be pasta bake

Will make a spicy tomato pasta sauce, add left over roast chicken from yesterday, peppers, onion and then add sliced mozzarella on top pop under the grill to melt the cheese

Hot dog macaroni cheese. I put peas and sweetcorn in it & cut up tomato slices for the top. Can't wait!

We did a weekly shop on Thursday and M&S was the least busy so although it was expensive I got a lot of nice food. Tonight is stirfry with vietnamese pork and noodles. Tomorrow I got a tiny gammon to roast and will use lots of the veg. I'm not going out to pick up the odd bit here and there, just shopping once a week so the meals might get more interesting as the week goes on!

We had to go out for food today, and in the butchers DH pointed out that as we'd usually be out for dinner on a Saturday we could treat ourselves to something nice for dinner...so we're making beef Wellington from scratch for dinner. We actually had everything except the beef (flour, butter, mushrooms etc)

Balancing that decadence with a snack Milky Way and a share bag of crisps from the polish supermarket (flavour has yet to be translated, maybe chilli and cream cheese?) that I found at the back of the snack cupboard for lunch.

DH is making his chicken casserole tonight, we haven't had it in ages, and I love, love, love it! That goes on rice, and also takes care of lunches for the next few days. Oh, and wine. And maybe crack out a bar of chocolate afterwards.

It's dark times, but I feel grateful that I have good food, good whanau/family, and good friends. And good wine.

I hope everyone is staying safe, and staying sane. Cake Wine Flowers

Copius amounts of wine... may as well eat good food & drink good wine while in lockdown

Dh went for our weekly shop this morning and the roast chicken place was open!! Yeah! It's the nearest to a take away we can get off season in Spain! That's this week sorted!

Linda McCartney's Country pies with veg for kids & fish cakes with veg for dh & I as we only had 2 of each.

I've also got a chocolate brownie baking in the oven for pudding. I was going to bake a Dorset apple cake too but didn't have enough apples. So that will be for another day when I've got more apples in.

Salad (mushrooms and sliced cucumber) sandwiches, baked potatoes with a very tiny amount of cheese and Alpen bars. Coming to the end of quarantine, thankfully.

Tonight we had pork meat miso which we normally put in ramen, but we had it with stir fried veg and soba noodles that had been in the cupboard for a year 😂. I made a double batch of the meat miso to freeze.
Managed to get all our shopping delivered today from Sainsbury's. Just got to go to our butchers on Monday.

Pan seared scallops and black pudding on colcannon. ( managed to find cabbage AND leeks!)

Tomorrow will be root veg curry, or spiced chickpeas, maybe both, on rice.

I had a pork joint that I cooked a fortnight ago and sliced up and froze. So pork, roasties, veg, yorkshires and gravy. I’ll make a steamed pudding and custard too.

DH has just reminded me we have a lamb joint in the freezer so it's defrosting in water as per US lamb board recommendations!

Sausage ragu today. Sausage, red pepper, onion, tinned chopped tomatoes, and fennel seeds. Usually with pasta but we've got more potatoes than pasta so thinking we'll try it with mash today instead.

Making Nadiya's chicken shawarma tonight, should do two meals with the amount of meat I've got. She serves it with flatbreads and a broccoli slaw, but given we had wraps last night I might save that for meal two and serve it with jewelled couscous tonight. Will use up some of the veg that's on its way out then as well, and I have some pomegranate seeds in the freezer.

Unable to get the ingredients for what I had planned, I am going to have to improve some sort of sausages in a tomato sauce with not-enough gnocchi. Will have to make 2 sauces so one is vegan. Am terrible at improvising recipes, hate cooking sausages, tired and miserable and working a night shift tonight.
