What’s for dinner?

Looking forward to some interesting store cupboard creations!

Ours is nachos with pulled pork on top with Mexican spiced (probably completely inauthentic) rice. Pork and rice both from previous meals and out of the freezer, will add a tin of sweetcorn and maybe kidney beans depending on whether it looks enough (large family)

Crisps and dips bought this week as they were pretty much the only aisles that still contained food.

Carb heavy but I don’t care, I’ve had to cancel my wedding 😭

We are having all the leftovers with little regard to health
so
salad
tortilla chips with salsa and guacamole and queso
garlic bread
deep fried green beans
airfried chips

Waxonwaxoff0 · 26/03/2020 20:24

We had chicken fajitas. I'm shopping as I normally would at the supermarket, I've got neither the space nor money to store much food so there's nothing spare at the back of my cupboards.

MamaGothel · 26/03/2020 20:36

We had hunters chicken, oven chips and bread and butter. Not healthy at all but very yummy and comforting.

Tonight will be cauliflower chickpea curry. Should have had spinach too but it went slimy really quickly 🙁

Ctas · 27/03/2020 06:33

Oh that Amok fish curry sounds good. I was wondering what to do with some frozen white fish,. That might be perfect,

2MapleMuffins · 27/03/2020 06:37

we had vegetable ried rice last night with a fried egg on top and chilliflakes.

But I like the idea of fish curry- and DH can have it with chickpeas. DS might have pasta something, maybe also with a bit of coconut milk in it for something new.

mbosnz · 27/03/2020 14:11

Mmmmm, fish curry sounds gorgeous!

Tonight would normally be takeout night, but I'm a little bit leery of takeout at the moment, so instead we're going to fire up the barbie and do home-made pizzas.

(This is my favourite 'little bit of normal' thread!)

Fishcakes and green beans, I've been freezer foraging! Wine Wine

Giggorata · 27/03/2020 14:25

Fish pie, using mash from the sacka spuds, fish pie mix from the freezer, tinned fish, leeks, spinach and a big spoonful of kelp powder from the Stash. White sauce from the out of date milk and our precious flour store. Carrots and kale side serving.
Home made raspberry yogurt.

chocolatesaltyballs22 · 27/03/2020 14:41

Chicken fajitas tonight, managed to get massively overpriced organic chicken from M&S so it should be good!

delilahbucket · 27/03/2020 14:50

The dish that ds has been waiting patiently for all week - carbonara!

GETTINGLIKEMYMOTHER · 27/03/2020 14:50

Thai style egg fried rice, with a few bits of leftover roast chicken and sundry veg added.

JonHammIsMyJamm · 27/03/2020 14:54

Ah, I’m sorry about your wedding OP, that’s shit Flowers.

We’re having chicken, leek and pancetta pie with mash and broccoli. I wanted to put chestnuts in it as o thought I had a vacuum pack somewhere but it turns out I don’t. Bum. Should be v nice though.

P1nkHeartLovesCake · 27/03/2020 15:09

Going to roast a chicken tonight and use half of it in a tarragon cream sauce with baby potatoes & broccoli

Then will use the leftover chicken in something tomorrow

pallisers · 27/03/2020 15:41

spanish chicken and rice tonight with a big glass of spanish red wine.

2MapleMuffins · 27/03/2020 16:27

deffo fish curry for us. We have onions and white fish and tinned green green beans, madras powder and coconut milk.

Oddly enough this whole thing is making me more creative!

happypotamus · 27/03/2020 16:56

Ham and mushroom pizza with salad

TwoZeroTwoZero · 27/03/2020 16:56

Moroccan flavoured cous cous and fried halloumi.

mbosnz · 27/03/2020 17:14

I forgot to add an essential component of tonight's meal. . . NZ Sav Blanc.

cravingthelook · 27/03/2020 19:12

I've just made a risotto with chorizo, red peppers and peas (loads of wine and Parmesan obviously)
I made a bacon, lentil and carrot soup for lunches
And tried cherry scones with frozen cherries, need to adjust the recipe next time as it went too wet (obviously) and the scones went flat but they were soft and fluffy inside and tasted amazing and needed no butter so I am taking it as a win. Especially since DD loved them.

thecatschampagne · 27/03/2020 19:24

Pan con tomate with the end of a stale loaf for lunch, pizza delivery for dinner Halo

Sexnotgender · 28/03/2020 13:30

Didn’t have my chickpea spinach curry last night so that will be tonight’s dinner.

Marmite27 · 28/03/2020 13:32

We were going to have HM pizza, but as we had sausage and egg muffins for breakfast and hotdogs for lunch (DH in charge of food today) then I’ve put my foot down and stipulated lasagne and salad.

Spam88 · 28/03/2020 13:43

Beef and bean quesadillas I think. Will go further than just serving with wraps or as a chilli and then can keep some to have on jacket potatoes another day.

JonHammIsMyJamm · 28/03/2020 13:59

Some lovely sounding meals on here. Useful inspiration.

Last nights’ pie was delicious. I’ll definitely add that to our rotation. DH is cooking today, but it’s actually a freezer special he cooked a while ago and froze the extra. Lamb curry, rice & flatbreads.
