Looking forward to some interesting store cupboard creations!

Ours is nachos with pulled pork on top with Mexican spiced (probably completely inauthentic) rice. Pork and rice both from previous meals and out of the freezer, will add a tin of sweetcorn and maybe kidney beans depending on whether it looks enough (large family)

Crisps and dips bought this week as they were pretty much the only aisles that still contained food.

Carb heavy but I don’t care, I’ve had to cancel my wedding 😭

I am doing fillet steaks with macaroni cheese on the side instead of potatos. For no good reason I think this is a very American dish- or perhaps just Diners drive ins and dives.

I'm going to do a veggie chow neon tonight. Does anyone have a failsafe chow neon sauce recipe that actually tastes like one I could get from a take away? Mine always falls a bit flat lol

I honestly do not know. I have reached that point in lockdown where I just wish everybody would evaporate and leave me the hell alone! It could be hormonal. . .

It was supposed to be last minute Butter Chicken.

It could now be going to be M&S whatever the hell is left on the shelf. . .

Times like that mbosnz I usually do tinned soup with toast and butter followed by tinned fruit and custard.

My family think these are the best meals EVER [looks at shelves and shelves of cook books and weeps]

chow neon - never heard of it! Or is it a typo?

In which case - egg noodles, must have beansprouts, onions (spring and ordinary), baby corn, mushrooms, carrots and loads of soya sauce, and ginger.

Ah see I think sesame oil is the key to getting that takeaway flavour. Just a splash added at the end of cooking.

DH, bless him, sensing Mt Mbosnz was about to blow (can't think how, I'm very subtle), took the girls, and they went and got the stuff for Last Minute butter chicken and he is going to cook it around multitudinous teleconferences this evening.

That chow mein sounds interesting. . .

@YDYtrue yes it is, I’m actually in love with that cookbook. Not a duff recipe from it yet. Love that I can prep it, stick it in the oven, put the DC to bed and come down to a finished meal. Bloody bliss! The leek and puy lentil is incredible but you need to like lentils, the flavour is not disguised. If making it just for you, it is fairly easily halved and would make a generous two portions.
We’re having left overs of the above tonight and then whole roasted cauliflower with ras el ha out and pearl barley tomorrow.

Prawn summer rolls with satay dipping sauce. Quite therapeutic to make! I did them before I went out for my run, and it was lovely to have them ready for me on my return.

Had a monumentally crap day today and no shopping until tomorrow, so ordered from the first takeaway I found on Just Eat that also delivered wine. Pizza, chocolatey puddings and pinot grigio.

Cost a fortune but by God it was worth it!

Thanks @HelenaJustina, maybe I’ll ease them into it by doing it as a side dish...

@mbosnz I was well and truly at that stage last week (or possibly the week before). Getting out for a walk on my own has helped me.

Last week I also got to the thoroughly sick of meal planning stage (We usually eat all our meals at home anyway but I think not being able to just pop to the shops if I fancy cooking something, not always getting the ingredients I want/need in my shopping etc has made it harder/more boring). I’ve got a hello fresh box coming next week (50%off) and for the following 3 weeks (30% off) just to ease the pressure a bit. I think I always kind of thought they were for people who couldn’t cook (no offence to anyone who gets one) or who didn’t have time to cook from scratch but I’m actually quite looking forward to having one for a few weeks.

DD wanted to cook yesterday (Wednesday is a half day in school) so she got out lamb meatballs from the freezer that she'd made a few weeks back, and made a tomato sauce to bake them in, garlic bread, and pasta.

We'll do the chicken and potato cakes tonight.
