Looking forward to some interesting store cupboard creations!

Ours is nachos with pulled pork on top with Mexican spiced (probably completely inauthentic) rice. Pork and rice both from previous meals and out of the freezer, will add a tin of sweetcorn and maybe kidney beans depending on whether it looks enough (large family)

Crisps and dips bought this week as they were pretty much the only aisles that still contained food.

Carb heavy but I don’t care, I’ve had to cancel my wedding 😭

I now have ten tonnes of potatoes. I really must stop getting pre-boxed veg boxes... I never realised how few spuds we actually eat.

I have potato scones to make - maybe gnocchi.... definitely mash. Bubble and squeak... ummmmm

Oops, I missed a day!

Last night was steak in a red wine jus, with kumara and potato mash, with broccoli, carrots, asparagus, and leek.

Tonight is Spag Bos.

Last night was chicken breasts covered in grated cheese, chopped up ham and breadcrumbs, jacket potatoes and homemade coleslaw.

Tonight we’re having gammon - just put in the slow cooker in some cider with a crust of whole grain mustard and maple syrup - with potato wedges, grilled pineapple and peas.

Mmm that gammon sounds lovely.

Saturday we had salt and pepper chicken and chips, yesterday was a bbq.

Tonight will be beef and bean quesadillas with a salad of some description.

Fell off MN for a bit but I’m so pleased to see this is still going!

We’re having what I’m calling mezze tonight but is really using up various random things that there aren’t enough of to make a meal from

Dolmades
Greek style butter beans
Halloumi
Pitta
Peppers
Tabbouleh
Bean salad
Cucumber and pomegranate salad
Greek style potatoes...

I'm doing nandos style chicken and spicy rice tonight to appease the teens that miss it terribly Grin whether or not it'll be up to scratch, I'll let them be honest and report back!

Serves 2 - Jar of tesco free from bolognaise sause, 3 thinly sliced mushrooms (can be omitted), 6 birds eye vegan meat balls, white fusilli, black pepper. Gosh it was good!

@HelenaJustina is that the green roasting tin recipe? Been meaning to try it (but no one else in the family really likes lentils. Or Feta for that matter)

Pasta and meatballs yesterday, tonight will be some kind of veggie coconutty curry. Any recipes gratefully received!

I ended up trying a Catherine Fulvio recipe with the duck last night - smearing ginger and cumin into the breast and serving with an orange, ginger and chilli sauce. It was quite tasty!! (Mash, broccoli and leeks on the side).

Today, we are having chicken thighs on the bone, marinated in hot chicken wings sauce, and roasted. I plan to turn leftover mash into potato cakes to bake in the oven - some gently fried onions mixed in, and then given the "flour, egg, panko crumbs" treatment.

I think we are sticking with the lamb meatballs plan for tomorrow.

Leftovers I suspect though DS wants prawn crackers and chow mein from the Chinese takeaway...
