Looking forward to some interesting store cupboard creations!

Ours is nachos with pulled pork on top with Mexican spiced (probably completely inauthentic) rice. Pork and rice both from previous meals and out of the freezer, will add a tin of sweetcorn and maybe kidney beans depending on whether it looks enough (large family)

Crisps and dips bought this week as they were pretty much the only aisles that still contained food.

Carb heavy but I don’t care, I’ve had to cancel my wedding 😭

Tonight we are having our traditional family celebration meal in honour of the return of the prodigal cat. Chicken in a creamy onion sauce on a bed of tagliatelle. With pina coladas as pre-dinner cocktails. . .

And here is a photo of the lardy arsed, bat brained, wonky whiskered feline herself. Who woke me up every hour on the hour for loves, and then as soon as the door opened this morning has been busily trying to bust out again. . .

I'm having a go at paella. It won't be authentic as I'm using a bag of frozen seafood. But I do have the right rice!

Our standard salmon meals are teriyaki salmon with stirfried veges (capsicum, courgette, spring onion, snow peas, baby corn and pak choi a favourite) on udon noodles.

The other one I do is to make tinfoil parcels for the salmon, whack in a dollop of butter, white wine and lemon juice, and oven bake these for twenty minutes. Gorgeous with roasted potatoes and veges.

I made a salmon en croute the other day which was lush. And so easy. Shallots, garlic, bag of spinach fried together then some Philadelphia in it, spread on bottom of ready made puff pastry then salmon on top folded over and baked. YUM

Homemade sausage rolls and veggie chickpea based alternative with chips and beans/peas. Fairly lazy but I’m also making a lasagne for tomorrow’s lunch as I think it’s better after a night in the fridge!

I could do with some ideas. I got my veggie box yesterday and some of the veg is on the edge of squishiness... ,and my bananas are ripe!😲😡

@Lordfrontpaw if you have tomato purée and chopped tomatos you could do a minestrone with the celery, carrots, courgette and I always throw a handful of Kale in with mine at the end. Some broke up spaghetti, onion and some chopped up bacon if you have any (and not veggie).

Monk fish done in tinfoil with butter, wild garlic, pine nuts, red chilli and chucked on the BBQ and then going really uncouth and serving with fries (and probably mayo)

DH is going to make a Prosecco and coconut rum cocktail to have while we catch the rest of the evening sun so could possibly be a frozen pizza!!!

Yes 3. I had to chop off the manky ends. Grrrr.
I have also realised that I made a pan on Napoli sauce last night which we didn’t have - so we will need to eat that as it’s been sitting on the hob (lid on). Those veggies will be horrible by tomorrow. Need to be a curry I suspect.

I did make a lovely banana and apple loaf though. Mmmmm.

Last night was chicken goujons, mash, and mashed carrot and parsnip.

Tonight, I am using a mix of spag bol and lasagna sauces from the freezer to make sufficient for the family, but it will be lasagna. (Next week, there will be a curry "feast" with 3 or 4 different curries, all in 1 person portions, although I may have the mix to make fresh Bombay potatoes to accompany that - all stuck in the middle of the table).

Tomorrow, we are having duck breasts somehow. (They usually have long dates but teenage pickers just grab from the front).

Wednesday is mussels with pasta (same problem as Tuesday).

Thursday is possibly sausages and mustardy mash, thai monkfish red curry, or butternut squash risotto/curry. If I don't find a used for the squash before then (possibly lunch soup...).

I attempted bread over the weekend - a rye yeast loaf. It was a little malty, and didn't rise all that well, but it was edible. I may try white next weekend, if it would work with the last of my cream flour (I don't have strong and have loads of self raising but only about 1kg of cream left). Or be really brave and try cinnamon buns...
