Looking forward to some interesting store cupboard creations!

Ours is nachos with pulled pork on top with Mexican spiced (probably completely inauthentic) rice. Pork and rice both from previous meals and out of the freezer, will add a tin of sweetcorn and maybe kidney beans depending on whether it looks enough (large family)

Crisps and dips bought this week as they were pretty much the only aisles that still contained food.

Carb heavy but I don’t care, I’ve had to cancel my wedding 😭

Had chorizo and pepper spaghetti last night with pesto, olive and cheese bread.

Tonight will be bacon and leek risotto I think.

Stir fry with chicken, some beansprouts I grew out of lentils, and noodles - the DC love chicken chow mein but I'm not quite sure this will measure up!

Had planned white fried fish, potatoes and salad for last night but the fish smelt.... eggy when I took it out the pocket so I had to scramble around in the freezer and found a load of xmas party food that didn't get eaten - so southern fried chicken bite, lemon sole goujons, tempura prawns, potatoes and salad.

Homemade flatbread made into wraps with tuna fishcakes and salad.

Pudding is stewed apple with yoghurt with a spoonful of chia seeds over. Tomorrow tomato, pepper and lentil soup or dhal. I’m trying to eat more healthily.

Tonight was supposed to be chicken casserole. It is so not chicken casserole weather.

So we're having lamb racks, with veges.

I spent a 30 minute lunch break whipping up a quick lamb and chickpea tagine.
(It baked in the oven for longer obviously)
And I discovered we had a garlic crusher which I never knew we had in the 18 years I have lived in this house

We had home made Nando's.
Nando's lemon marinade for the chicken which we grilled in wraps with perinase and salad and DD made a Mexican rice! Was yum!

drspouse this is the one I’ve had success with. I’m not good at any sort of bread: Makes 4.

1 & 1/4 cups plain flour
1 sachet quick acting yeast powder
1/2 teaspoon salt
1/2 cup warm water
2 tablespoons olive oil (I have rapeseed oil at the mo and it’s been fine)

Mix flour, yeast and salt in large bowl. Add oil and water. Mix And knead knead for 5 mins. Roll into ball and place in bowl and cover with cling film. Leave for 10 mins (up to an hour is fine though)
Cut ball into 4 even pieces. Roll each out thinly then place in heated, ungreased skillet or frying pan till dough bubbles up and gets brown patches. Turn and heat till other side is patchy . They are still soft the following day if you wrap them in foil.

Monday, I can't remember

Tuesday, DD made a chilli chicken stir fry with noodles, stretched out with an extra turkey breast to serve 3.

Last night, DD made BBQ ribs, a handful of chicken wings, steakhouse oven chips, boiled rice (she didn't want chips), corn on the cob, baked beans, and frozen peas.....an interesting amalgamation of fridge and freezer supplies!

Tonight, it is a chicken butter masala (readymade sauce from a local good curry takeaway and fry up the chicken to add). Probably DD cooking again (I am enjoying the break, although the results are, eh, interesting!).

Tomorrow, we are BBQing, steak for us, the last turkey breast for her, instead of takeaway to take advantage of the good weather (forecast not so nice over the weekend).

We are doing some more "interesting" combinations of single portions of meals from the freezer next week, so will probably try and do at least 1 curry night "family style" (3 different portions laid out in the middle of the table so everyone can serve themselves). And a night of different pasta bakes....

I may do homemade fish fingers because I have all the ingredients and DD will eat them, but it will be with Batchelors pasta 'n' sauce on the side...

Or Tesco southern fried chicken mini fillets - with Batchelor's pasta 'n' sauce on the side.

Oh, and broccoli!

BBQ tonight - lamb neck rubbed with harissa, with a feta, garlic, chilli & yogurt sauce, and a salad with roast peppers, tomatoes, red onion, chicory and quinoa. Already in the garden with a glass of cava. :)

Feeling a bit sorry for ourselves today, our very beloved, but special kind of stupid, indoor siamese cat managed to get herself locked out last night, and we only realised this morning. So we're down a vital, essential, key worker in the mental health sector in our family today, and possibly forever.

So it was supposed to be teriyaki salmon with stirfried Asian veges on udon noodles, but it could be wine and crisps, salted with tears. . .
