What’s for dinner?

Looking forward to some interesting store cupboard creations!

Ours is nachos with pulled pork on top with Mexican spiced (probably completely inauthentic) rice. Pork and rice both from previous meals and out of the freezer, will add a tin of sweetcorn and maybe kidney beans depending on whether it looks enough (large family)

Crisps and dips bought this week as they were pretty much the only aisles that still contained food.

Carb heavy but I don’t care, I’ve had to cancel my wedding 😭

Good Friday fish, so roast salmon in sweet chilli and soy with sesame and lime stir fry veg and noodles.

troppibambini · 10/04/2020 16:11

I was going to make spaghetti with chilli and prawns but the prawns have mysteriously disappeared Hmm
So roasted pepper and mushroom risotto instead.
The kids are having fish gingers except for the one who doesn't like fish who's having egg and chips.

BBQ tonight - nothing fancy, just some burgers and sausages. Followed by chocolate gateau of all things at my DH's request.

P1nkHeartLovesCake · 10/04/2020 16:17

Going to do spaghetti Bolognese tonight & salad (the sauce will cook for 3 hours, it really is divine)

Not ideal in this warm weather but we’d already meal panned a got the stuff from the shop, so we are sticking with it. We will eat outside

Then for dessert we have white chocolate tart

And fizz...tonight is a fizz night 🍾

So sorry about your wedding. Right my so, you’d feel gutted.
We’re having a sweet potato, chicken and roasted veg tray bake. Found the recipe in the Tesco website. Smells delicious

mbosnz · 10/04/2020 16:51

We're all managing to eat pretty bloody well, aren't we?!

One of my favouritest threads - a nice soothing oasis of normality. . .Wine Smile

@P1nkHeartLovesCake - one of the best things I ever learned from MN is that spaghetti sauce tastes better if you let it cook slowly for ages. When I first read that I thought, nah, the point of spag bol is you can put it together in 30 mins, Then remembered a spag bol I'd made for family once years ago that tasted out of this world and realised I'd started it at 7am and kept it on a low heat until lunch time. Hadn't worked out that was why it tasted better until a whole load of MN chefs mentioned how important it is to let it simmer for ages.

spinthebottle · 10/04/2020 17:10

We are having home cooked curry washed down with wine tonight Wine

caperplips · 10/04/2020 17:15

New York Style Buffalo Wings with skinny fries and coleslaw. Got an AMAZING recipe to cook them in the oven and they were the BEST chicken wings we've had. This will be my second time to make them this week (at dh and dd;s request!)
Red wine for me / beer for dh

RhymingRabbit3 · 10/04/2020 17:20

I found some lemon and pepper sole fillets in the freezer, so we are having those tonight. From the days when I could pop into the coop on the way home from work and buy a load of meat/fish for 75% off - these sole fillets were £1.05.
I seriously miss those days and resent paying full price for all my meat now!

MaryBoBary · 10/04/2020 17:31

We've got fajitas tonight. Never really fancy them but enjoy them once I'm eating

FrenchyQ · 10/04/2020 17:34

We were planning on having a bbq but our inconsiderate next door neighbours decided to pressure wash their dog crap covered patio (3 years worth) and the air just smells of poo. So will do chicken wings in the oven with salad

Floralnomad · 10/04/2020 17:36

We are having quiche and chips tonight , dd is having gf scampi .

totallydevoidofideas · 10/04/2020 17:46

We are having sausages from the freezer (naice ones I've been saving for friday) and I will do some sort of risotto rice thing with whatever needs using up to go with them. We might open a tin of pineapple for afters and we have some yoghurt to go with it, just about enough to go round 3 of us. I'm enjoying all of us just having the same to eat and being happy with it.

P1nkHeartLovesCake · 10/04/2020 18:19

Ellanwood Spaghetti sauce does indeed taste so much better the longer it’s cooked 😋

bellyislikejelly · 10/04/2020 19:14

caper please share the receipe?

Notso · 10/04/2020 19:22

Fish pie with runner beans and peas for five of us, cheese and onion mash in breadcrumbs for fish hater DC.

Homemade scones with cream and jam for pudding.

MogeatDog · 10/04/2020 22:39

The Chivken pie from Jamie’s dinners - using up leftovers and serving with roast carrots and baby potatoes - had a severe knife incident half way through and was lucky to avoid A&E with done steri strips and YouTube - more on order - no one wants or needs a trip to the ER.

SegregateMumBev · 11/04/2020 07:58

My Good Friday fish was dover sole. It was far too bony, I won't be rushing out to buy it again.

Tonight will be a roast pepper, aubergine and halloumi stack, with raita and salsa.

GreenTeaMug · 11/04/2020 08:07

I think I have just realised why my roast beef is always so dry and hideous. I tend to really slow cook it for hours. hair Bikers this monring cooked aLARGE lump of beef (fillet to be fair) in the oven on 180 for 35 minutes.

Last night we ended up having sausages with mac and cheese. Tomorrow will be the roast.

jess3817 · 11/04/2020 09:33

Last night we had pesto pasta with roasted veg and broccoli.
Today i think we''ll have Abergine caponata with rice and spring greens.
Not sure about tomorrow yet..Maybe three bean veggie chillie...Will decide tomorrow.
