Looking forward to some interesting store cupboard creations!

Ours is nachos with pulled pork on top with Mexican spiced (probably completely inauthentic) rice. Pork and rice both from previous meals and out of the freezer, will add a tin of sweetcorn and maybe kidney beans depending on whether it looks enough (large family)

Crisps and dips bought this week as they were pretty much the only aisles that still contained food.

Carb heavy but I don’t care, I’ve had to cancel my wedding 😭

@thequeenbeyondthewall it's somewhere between a stew and a soup, flavoured with tomato and Parmesan rind. You can basically chuck any root veg in. I think it's Tuscan?

Leftover mackerel patê on toast for lunch, shredded chicken, mango and peanut salad for dinner. If the mango isn't mush...

Chilli. I didn't know it was going to be 20 degrees when I planned/ shopped. I can't remember what vegans eat in the summer that doesn't need lots of obscure ingredients (DH is vegan, DC and I are not)

Well, after the abortive fish stir fry last night (the fish was off), that turned into fast turnaround home made pizzas. Tonight it will be the chicken and sweet potato risotto.

And wine. . .

We had eggs, bacon, beans and bubble and squeak. Took me back to my childhood forty years ago. DC had never had bubble and squeak before but they loved it.

Tonight we are having a lovely River Cafe recipe chestnuts, sausages sage and homemade gnocchi - it's a labour of love but omg it's so good!

Must have been the day for meatballs. We had creamy Swedish meatballs with mushrooms and rice tonight. DD2 doesn't like tomato based sauces and we had bolognese last night (she had chicken nuggets) so didn't want to have to do something different for her again.

Yesterday was leek and chorizo risotto and today is beans on toast for the DCs and salmon en croute (Morrison's Dine In) for us.

Last night we had a honeyed halloumi salad with some pickled red cabbage, charred sugar snaps and iceberg. Made some caramelised onion hummus, although the jar of tahini I had in the cupboard was almost solid...I ALWAYS forget homemade hummus is so much nicer than shop bought stuff and it's so easy.

Today we have sourdough discard pancakes with honey for brunch and another salad for dinner, this time with tuna, capers and olives.

Good old roast chicken, bloody expensive organic one picked up by dh in M&S, but he didn’t check the use by date so needs to be cooked. Roast potatoes, plus the parsnips and spring greens that came in the long-awaited veg box. Probably carrots and peas, too, and lots of proper gravy.

Maybe a rice pudding afterwards, if I CBA. Or an old fashioned chocolate pudding, given that dd reminded me of it earlier when she phoned for the recipe to make it with Gdcs.

Last night was Mexican night in our household! We had chilli con carne made with chuck steak from the butchers, cornbread, nachos and rice. Today we’ve got leftovers plus a bbq for tea with sausages, halloumi and loads of veg 😊
