Looking forward to some interesting store cupboard creations!

Ours is nachos with pulled pork on top with Mexican spiced (probably completely inauthentic) rice. Pork and rice both from previous meals and out of the freezer, will add a tin of sweetcorn and maybe kidney beans depending on whether it looks enough (large family)

Crisps and dips bought this week as they were pretty much the only aisles that still contained food.

Carb heavy but I don’t care, I’ve had to cancel my wedding 😭

Stewed rhubarb and Greek yoghurt for breakfast (I never eat breakfast usually but this made me think I should start...)

Leftover curried carrot soup for lunch

And I've made a funny Asian beef potato salad for dinner, a mash up of lots of 'bits' from the fridge. We made a pineapple and sweetcorn salsa to go with our tacos Saturday, and I've shoved a load of shezchuan pepper and more lime in in, mixed with some shredded carrot and rocket and baby potatoes I'd forgotten we had.

We had butternut squash 'steaks' with hummus and herby couscous realfood.tesco.com/recipes/butternut-squash-steaks-with-houmous-and-jewelled-couscous.html
with a random side of mushrooms that needed using up (my couscous wasn't jewelled as in the recipe because I couldn't get any pomegranate seeds). DC were very suspicious but ate it.

Chicken soup made with olive oil and butter, onion, leek, carrot, potato, green beans, chicken stock, bayleaf, seasoning, left over chicken from yesterday's roast, a bit of single cream, walnut bread and butter.

Bean tacos tonight - a tin of 4 bean mix, fried up with some onion and some tinned sweetcorn, seasoned with fajita seasoning.

Served with wraps, salsa (jar in fridge), crème fraiche (last of the tub), guacamole (last avocado and a wrinkly lime, some garlic, chilli and salt), lettuce (definitely needs using) and grated cheese. It was actually developed as a recipe by DD in a fit of boredom about 6 months ago, but works well to use up small bits of things.

Ribollita for lunch, using up a wrinkly swede and onion. Keeping Parmesan rind was something my grandma taught me to do, not sure why but it comes in handy! The tin of beans I opened for that was industrial sized, so we're having homemade beans on toast with bread I've just made, and a fried egg.

I rearranged our booze cupboard earlier and found a bottle of Campari, and we have a bottle of soda water in the fridge (that I'm using to try and make my wine stretch...Halo). So I'm now watching DH do Joe Wicks with my favourite 70s aperitif throwback even though I'm not yet 30.

What kind of roast, thequeenbeyondthewall?

I just realised that we'll be all lambed out for Easter weekend, because we did a roast lamb last weekend!

Tonight it's either going to be a fish stirfry that DH is keen to try, or Chicken and sweet potato risotto.

And I think we're going to be having chicken lasagne for lunch for the rest of the week. . .
