What’s for dinner?

Looking forward to some interesting store cupboard creations!

Ours is nachos with pulled pork on top with Mexican spiced (probably completely inauthentic) rice. Pork and rice both from previous meals and out of the freezer, will add a tin of sweetcorn and maybe kidney beans depending on whether it looks enough (large family)

Crisps and dips bought this week as they were pretty much the only aisles that still contained food.

Carb heavy but I don’t care, I’ve had to cancel my wedding 😭

Ooh thank you @Raera. I'll look that up.

Raera · 05/04/2020 18:27

You're welcome. No more dangerous knife techniques!
Found below recipe and had the ingredients so just done prep. I'm going to add the half red onion I have left

Had a very lazy Sunday morning, had half an Easter egg and several cups of Monmouth for brunch. Really decent coffee was the only thing I'll admit to stockpiling (because I knew I wouldn't be able to jump on the tube to get a bag of my favourite).

We did our weekly shop at the greengrocer yesterday and I picked up fresh horseradish which I LOVE. So I've blended some of that with some smoked mackerel and half a tub of philly we had going off in the fridge, and made a loaf of bread. So patê on toast for dinner, with some roasted rhubarb and clotted cream that I also grabbed at the greengrocer.

Quorn burgers and wedges .. we were going to create a nice curry cooked from scratch but then got a bit pissed in the garden.

paperdreams16 · 05/04/2020 19:17

Lamb shank, mash, kale and Yorkshire puddings as I fancied them!

Jasfc · 05/04/2020 19:52

Toast. The little loaf I have is going stale and won't last until tomorrow. I will probably do a tin of beans or spaghetti to go with it, but that's mostly what it will be. This means I have to shuffle to Tesco tomorrow to get a big loaf to last until I get paid the following week (but makes a nice change from having to get a loaf because the dog ate the current one while my back was turned!)

drspouse · 05/04/2020 20:06

Lots of lovely roast beef left over but we are out of potatoes. What can we do with it?

GreenTeaMug · 06/04/2020 07:50

Tonight we may have beef stroganoff.... but I am tempted to use the steak for a lunchtime steak sandwich.

chocolatesaltyballs22 · 06/04/2020 10:55

Make a curry out of it @drspouse? And sandwiches for lunch?

We are having a Russian Roulette freezer dinner tonight. I think from the smell of it that it's chicken curry.

ellanwood · 06/04/2020 11:45

Chicken, leek and pea risotto with roast butternut squash.
lemon cake because I put lemon instead of almond essence in the almond cake by accident

mbosnz · 06/04/2020 11:47

We seem to have been doing a lot of cooking over the last few days, so tonight we're having a break and having spaghetti and meatballs.

P1nkHeartLovesCake · 06/04/2020 12:37

Going for an easy dinner here tonight of chicken Kiev from the freezer, cheese and chive mash, green beans

InsaneProbably · 06/04/2020 12:50

Chicken soup (from the freezer - the product of some ancient MN chicken, no doubt) and homemade bread.

Running quite low on anything fresh here; the fridge is pretty empty. DH doing a shop, so really hoping for some fruit and veg in the near future.

mbosnz · 06/04/2020 12:54

I could quite happily throttle my offspring at the moment.

Had been looking forward to cold lamb from the roast lamb, and left over potato salads - and they threw the bloody potato salad out!

I am not a happy camper. Two bedroom doors have been very softly, but firmly closed. . .

handslikecowstits · 06/04/2020 13:04

Pumpkin crumble www.theguardian.com/lifeandstyle/ng-interactive/2015/oct/16/ruby-tandohs-butternut-squash-and-spinach-casserole-with-herbed-feta-crumble

We haven't got any feta so I'm going to use cheddar and ordinary onions instead of spring onions.

Waxonwaxoff0 · 06/04/2020 13:55

I'm doing a fish pie tonight.

Xiaoxiong · 06/04/2020 14:05

@drspouse Thai beef salad is my favourite way to use up roast beef.

Tonight we're having slow roasted salmon, can't decide what to have alongside - either colcannon, or a cheesy gratin of cabbage topped with crunchy breadcrumbs.

BiddyPop · 06/04/2020 14:18

We are having an easy night - turkey steak diced into a jar of curry sauce with rice. Maybe with puppodums (ok, probably with puppodums - I have plenty to cook).

Last night, DH made his DM's liver with stuffing and bacon (a Saturday night staple) that he had never made, and couldn't talk to her about it while trying to make it. It was much drier that DMIL's version, but still worked well and was tasty. I think he will attempt to get the proper recipe from her and make it again when we can get liver again.

Saturday was bbq steak with fried mushrooms and baked potatoes (DD had turkey steak in a garlic and honey marinade).

pinkfluffybunny · 06/04/2020 14:21

We are having beef which has been in the slow cooker since this morning, dauphinois potatoes, Yorkshire puddings, cauliflower cheese and carrots. I cannot wait to make gravy from the stock from the beef. Simply delicious.

Spam88 · 06/04/2020 14:40

@mbosnz My DH binned apple crumble the other day 😑

We're just going to have a bacon and cheese pasta bake tonight from a jar. I've earnt a lazy tea 😂

SallyWD · 06/04/2020 15:04

A pasta bake dish with roasted veg, mozzarella, tomatoes and olives.

Sexnotgender · 06/04/2020 15:08

Caramelised onion quiche, wedges and salad.

namechangenumber2 · 06/04/2020 17:15

We're having gammon and stuffing baguettes

hellsbells99 · 06/04/2020 17:50

handslikecowstits - that recipe looks good. I fancy trying that later this week.
DD2 has volunteered to cook tonight and is doing a paneer curry apparently. There are five adults temporarily living here so a lot of food is being used.

CoffeeandPainting · 06/04/2020 17:52

Fish , Mash, Carrots and broccoli.

Was so bored, we had it at 4.30 😋
