Looking forward to some interesting store cupboard creations!

Ours is nachos with pulled pork on top with Mexican spiced (probably completely inauthentic) rice. Pork and rice both from previous meals and out of the freezer, will add a tin of sweetcorn and maybe kidney beans depending on whether it looks enough (large family)

Crisps and dips bought this week as they were pretty much the only aisles that still contained food.

Carb heavy but I don’t care, I’ve had to cancel my wedding 😭

Found some elderly risotto rice in the back of the cupboard so had fennel risotto with an oldish bulb.

Pork belly - loosely based on hairy bikers Calabrian pork ribs recipe. Super cheap. Served with Calabrian potato and peppers - basically sautéed onion, pepper and sliced potato, bit of water and juice from the pork. Yum, easy and cheap.

DD was supposed to be in Spain for a school trip, so instead we're bringing Spain to her - paella for dinner, was going to be churros for pudding, but we ran out of time, will do tomorrow instead.

I've become really great at calculating the exact amounts we need for dinner plus second helpings. I was very easy about this before- not anymore.

Roast chicken with colcannon and Yorkshire puds. I have a sad looking cabbage in the fridge so colcannon is the best way to jazz it up.
