Looking forward to some interesting store cupboard creations!

Ours is nachos with pulled pork on top with Mexican spiced (probably completely inauthentic) rice. Pork and rice both from previous meals and out of the freezer, will add a tin of sweetcorn and maybe kidney beans depending on whether it looks enough (large family)

Crisps and dips bought this week as they were pretty much the only aisles that still contained food.

Carb heavy but I don’t care, I’ve had to cancel my wedding 😭

Last night, we had sweet'n'sour pork with extra veg (pepper, carrot, onion) to stretch the meat.

Tonight, it is chicken breasts in wraps - probably some kind of Mexican version, possibly with a small tub of Uncle Ben's rice, and whatever peppers there are left. And using up the rest of the tin of sweetcorn from Sunday night's pizzas. With crème fraiche, grated cheese (from a block), tomato salsa (jar) and guacamole made with an avocado that needs to be used.

I just took broad beans and some turkey stock from the freezer to defrost to make broad bean and courgette soup for tomorrow's lunch.

One evening last week, we had a vadagam curry (made from the spices, onion, garlic, ginger, tin coconut milk and tin tomatoes) but split into 2 pots so DH and I had the leftover roast lamb (from the Mother's Day roast the day before) in ours, while DD had some defrosted leftover cooked chicken in hers (she is really not a fan of most red meat).

I am enjoying going through the glut of things in my cupboards, as we have time to cook for a change, and come up with interesting things to eat. I have a lot of turkey steaks in the freezer that I am trying to find good ideas for - probably Chinese stir fry type meals mostly, I still have a stock of onions and garlic, soy sauce, and a half bottle of Chinese rice wine, so I can throw together a few variations with small bits of veg and I have a couple of tins of bamboo shoots and beansprouts, and some dried mushrooms.

French onion soup (not like we're going to see anyone is it...!) for lunch. No bread so used some crackers from the back of the cupboard that were going soft for the cheesey floating bits.

For dinner there is some chicken that needs using up in the fridge, and a bag of salad. Think we have some bulgar wheat somewhere so maybe some kind of Middle East-esq situation.

Last night we had chicken, potato and chorizo tray back which was delicious, its a BBC Good Food recipe.

Tonight we might have homemade pizzas OR honey roast ham with stuffed baked potatoes and kale. Whichever we don't have tonight we;ll have tomorrow night.

We made the BBC Good Food Ultimate Pizza's last week and they turned out really, really nice so we're keen to make them again.

We still have the makings of Spanish Omelette with salad, lasagne with garlic bread x 2 nights and potato, mushroom and bacon tray bake (another BBC Good Food recipe called Healthy Egg and Chips which we have tweaked over the years) and sausage and mash with red wine onion gravy and kale all still in the fridge and we have not shopped in a week now.

Lunch will be hot dogs - proper butchers sausages grilled and out into brioche rolls with ketchup, mayo and mustard

Other lunches this week will include chicken noodle soup, carrot and orange soup, leftover baked ham, cheese and tomato toasties, grilled bacon BLT bagels, cheese on toast with relish

Tonight we'll be feasting on roast duck. DH went to the supermarket and found a whole fresh duck reduced from £8 to 80p. It's just about to go in the oven and I can't wait.

Enchiladas with wraps from the freezer, butter beans, chickpeas, chicken breast from the freezer and will use a very precious tin of chopped tomatoes and spices for the sauce. Will use up all the odds and ends off cheese grated on top

I had all sorts of bits and bobs from fridge that needed using so boiled spuds and mixed veg then fried off some onion and a few sausages 6 eggs and some milk all mixed together in the oven and sprinkled with cheese was a bit like a fritatta had it with beans
