Last night, we had sweet'n'sour pork with extra veg (pepper, carrot, onion) to stretch the meat.
Tonight, it is chicken breasts in wraps - probably some kind of Mexican version, possibly with a small tub of Uncle Ben's rice, and whatever peppers there are left. And using up the rest of the tin of sweetcorn from Sunday night's pizzas. With crème fraiche, grated cheese (from a block), tomato salsa (jar) and guacamole made with an avocado that needs to be used.
I just took broad beans and some turkey stock from the freezer to defrost to make broad bean and courgette soup for tomorrow's lunch.
One evening last week, we had a vadagam curry (made from the spices, onion, garlic, ginger, tin coconut milk and tin tomatoes) but split into 2 pots so DH and I had the leftover roast lamb (from the Mother's Day roast the day before) in ours, while DD had some defrosted leftover cooked chicken in hers (she is really not a fan of most red meat).
I am enjoying going through the glut of things in my cupboards, as we have time to cook for a change, and come up with interesting things to eat. I have a lot of turkey steaks in the freezer that I am trying to find good ideas for - probably Chinese stir fry type meals mostly, I still have a stock of onions and garlic, soy sauce, and a half bottle of Chinese rice wine, so I can throw together a few variations with small bits of veg and I have a couple of tins of bamboo shoots and beansprouts, and some dried mushrooms.
