Looking forward to some interesting store cupboard creations!

Ours is nachos with pulled pork on top with Mexican spiced (probably completely inauthentic) rice. Pork and rice both from previous meals and out of the freezer, will add a tin of sweetcorn and maybe kidney beans depending on whether it looks enough (large family)

Crisps and dips bought this week as they were pretty much the only aisles that still contained food.

Carb heavy but I don’t care, I’ve had to cancel my wedding 😭

For lunch I am having chicken Cesar salad with Dickinson coleslaw....

DC and dh are having pita bread with grilled Nando chicken and halloumi and peri peri sweetcorn (all homemade inc the pitta)

Tonight’s tea... is homemade mac n cheese and bacon

If we have time (painting the decking) we are making salted caramel shortcake....

Some bolognese sauce from the freezer, mixed with some fresh pasta that’s been in the fridge for at least a fortnight, a bit of grated cheese on top, whacked in the oven for half an hour.

Thai tomato soup with some manky tomatoes and the half jar of curry paste that's been in the fridge for ever. Found a can of coconut milk in the cupboard so it's nice and creamy. I'll toast of the end of a loaf of bread.

Creamy prawn linguine for dinner. I'm a fully confessed, unashamed pasta snob and haven't had dried pasta for years so I'm not super excited about it. Using cream left over from saturday's dauphinois so it'll be really garlicky at least.

Seabass with Asian salad. Absolutely no shortage of fresh veg so might as make the most of it and eat all the vegetables 😂

Bolognese (from a couple of months ago when DH made a massive pot of it and we froze what was left) with dried pasta, probably linguine as I think that’s what we have.

I’m emptying the freezer/making space as I don’t want to go to the shops until at least Wed, I’m trying to cut my supermarket shopping trips dramatically. Prior to covid19 we shopped every day/every other day, I’m now trying to get that down to 7-10 days. I know there’ll be people on here who’ll scoff at that because they already shop fortnightly/monthly but we don’t and prior to covid haven’t done a weekly ‘big shop’ for over 15yrs, so going back to it is a challenge.

My Tesco delivery just arrived with no items missing. I have rice! Hurrah! So I'm going to add some tomatoes to my beef and bean enchilada filling and have it was rice instead.

2nd of a pack of 2 lamb steaks from Morries I bought before lockdown with the rest of the sweetheart cabbage I've got lurking in the veg drawer, stirfried with sliced onions and fresh chilies. Gotta get my chili kickWink No tats cos I'm saving them for a potato and pea curry.

Over the weekend we had veggie chilli, pork steaks in a creamy sauce with mash and veg and toad in the hole with veg. Tonight will be beef goulash and rice.

I had a shop come last week so meals were normal but my next shop isn’t coming until the 10th so things may start to look a bit strange here Grin

I've made a stew of lamb mince, cubed carrots/squash/sweet potato (because I didn't have many left of any of these), dried mixed herbs and a bay leaf, the end of a bag of red lentils, a leek, a tin of tomatoes and because I have no lamb stock or stock cubes I mixed in a couple of spoonfuls of pan drippings from a lamb roast we had a few weeks ago and I saved in the freezer. Mixed it all up and stuck in the oven for 90 mins - it smells amazing!

It's actually from a Little Dish recipe book and probably meant for toddlers, but we all like it Grin

We're having a cupboard surprise pasta bake for tea tonight and tomorrow.

Sausages fried in garlic oil with BBQ sauce and honey and chopped into chunks; red onion, cherry tomatoes and red peppers roasted in garlic oil with honey, chilli powder, smokey seasoning and some smoked paprika; a pot of tomato pasta sauce; penne pasta; blue cheese and grated cheddar.

All mixed up, baked in the oven and served.
