I find the amount of lecithin affects the texture which is a shame.

@BackInTimeForTea the Belgium chocolate we use, milk is 36% white is 30% and dark is 60%. Some big chocolate manufacturers sell off the cocoa butter to cosmetic companies

Not RTFT but literally the best chocolate I've ever eaten (and now all I'll eat) is Dandelion. The depths of flavour are amazing and I've never tasted anything like it. It's expensive but you only need 2 or 3 small squares to feel satisfied. Here's the link store.dandelionchocolate.com/

Beautiful snap on the LC when it's been in the fridge. I couldn't eat a lot of it as much richer and creamier than DM. I do like it though.

"Thanks PerverseConverse. We looked at the original recipe and tried to keep it as close to it as possible. Back then it was a simple recipe with none of these vegetable fats or palm oil fillers in. Once we grow and have more funding then we will have full control of the supply chain and will be able to make something even closer (i dream of a Willy Wonka style factory haha). My family were philanthropists so I am really starting again from scratch and do not have big budgets but it will come.

The chocolate normally has a good snap, I agree it its probs due to the heat yesterday and this Morning which made it a little softer than usual.

I am working on the button ideas now and hope to have for Christmas! We are also working on Christmas and Easter ideas. We often put new design ideas on Facebook and have some great feedback which we really use.

Thanks for your review on Facebook too! We are going to be stocked in John Lewis from September :), and talking to Waitrose.

That's so nice of him Smile I tried the plain milk one and it was definitely different but appears to have a higher cocoa percentage than the cheap milk chocolate I'm used to, I got used to it very quickly. Will definitely be buying again.

I told him about this thread when I ordered. I expect other have too.

I like the idea that he’s starting from scratch and obviously wants to carry on the family tradition of chocolate making.

Thanks for the update Perverse. My LC order arrived today. I must say, i'm very impressed. It's the nicest chocolate i've tasted in a long time. Proper melty, without that horrid plasticy coating and weird after taste that is in so much chocolate today. Also, interestingly, i am not feeling the need to gorge on it. I've had a row and feel pleasantly full.

I complained to Cadbury about the quality and got the following back from them which isn't quite truthful is it??
"Thank you for contacting us about Cadbury chocolate, we always welcome feedback and comments from our consumers. 

We have always used a range of milk chocolate blends for different products, depending on their shape or consistency. We also use many different manufacturing processes to help deliver the required flavour profile for individual products.

All ‘Cadbury Dairy Milk’ products use the same delicious milk chocolate and usually feature the famous glass and a half logo on pack. Whilst we can’t discuss the specific details of our famous chocolate recipes – only a handful of people within the business actually know the full recipes – we can confirm that the magic ingredients which are listed on pack remain the same for all our products: milk, sugar and cocoa. Together with our secret blend of flavourings, they’re what’s made Cadbury chocolates famous for more than a century.

We constantly measure consumer feedback, and I have passed your comments onto our Marketing Department for their information.

What the Hell has the logo got to do with the chocolate ingredients?

Recipe for chocolate lovers:

Basic:
500 grams of good chocolate (preferably callebaut if you can find it/ order it)
1 tbsp of unsalted butter
A tin of condensed milk

Slowly heat the butter and condensed milk au-bain-marie. Add the chocolate and stir till its dissolved. pour into a greaseproof tin and let cool for the night. Slice into cubes and wrap in grease proof paper (baking paper).

Recipe 2: as recipe one but dip the cubes in melted chocolate for a hard chpcolate finish.

Recipe 3: add hazelnuts before pouring

Recipe 4: add pieces of biscuits, pistachios and cranberries before pouring.

Recipe 5: add whisky and walnuts before pouring

And so on, just make your own, it's lovely.

If you can't find good quality chocolate then try the big packet of light blue chocolate at Aldi. I don't remember the name but it's quite good.
