Talk about shifting sands. Charged with things that are then dropped but other, unnamed offences are added to your charge sheet without your knowledge. Is this really standard practise?

Yes, it is actually. The point of a trial is to figure out which charges have anything to them and which don't. It is common for charges to be dropped during the trial.
