Ahhh thrifty what a shame, thats so annoying when things go wrong.

Hello, I've been drawn in by the prospect of a full English breakfast with muffins!
I've lost 11/2 stones on a very diluted version of SW but it's taken about 18months and I now only have about 5 or 6 pounds to go.
But I'm at the stage of thinking I just want to get there now, not in 6 months' time.
I'm inspired to look at the website and make a start - wish me luck!

i don't know if i'm more disappointed at my lack of delicious breakfast,
or the fact that i have to go back to sodding tescos and buy some more ingredients!
or the fact that i wasted a whole eveing on it, in between shouting at the telly (another disappointmet)!
or the fact that its going to take me hours to clean the crockpot!
it was a huge pot of beans, was going to have some for breakfast and freeze the rest in pots for use at a later date. ah well,will try again later. maybe i'll get my full english tomorrow!

I read the email shortandsweet. A bit restricting for me compared to what I have been doing which I will stick to for the moment but I think I will try the strict one when I get back from Dublin - am going on Friday for 10 days. I then have 10 days before going to UK and I think I will do it again after that. Am planning on sticking to what I am doing even on holiday with a few treats thrown in so hoping I won't do to much damamge.

thrifty - you were not meant to have that breakfast this morning were you???

hi buda ;-) i was planning on having it for breakfast today, but nevermind. ended up having a banana, ryvita with peanutbutter and 2 cups of milky coffee, not ideal, but hey ho. have been back to tesco this morning, got distracted in the clothes section, and tried on some size 12 shorts, they were still too tight though, but i could do them up, so i felt better about my day.

anyway, have muffins markII prooving in the oven as i type, and they're rising, so fingers crossed for those. batch 2 of backed beans are in the scrubbed within an inch of its life slow cooker and the timer is set, so guess what i'm having for breakfast tomorrow. will treat myself to eggs florentine for lunch if the muffins are successful.

are you staying with friends/family when you go to dublin, buda?

riven - glad you've roped in some help for your shopping trip.

What beans are you making? I love baked beans but have never tried to make them. Hope muffins work out this time!!

shortandsweet - yes, the bread one. was hoping that they'd come out like the ones you get in mcdonalds,lol. anyway have had muffin success! however, they were so delicious that eggs florentine is off the menu. they've been scoffed already with butter and honey. DP and DS decided that they liked them too, so i will be making fresh tomorrow morning for breakfast. I just need to tweek the recipe a bit more as they were a bit flat (grew sideways not up), then i will post the recipe/method.

buda - thats handy that your staying with parents. i found it quite hard being away and eating out, cos you just don't know what your getting, i ended up eating a lot of salad in france.
am making baked beans in tomato sauce,using a tin of haricot beans,onions, garlic, pasata, finely chopped bacon, dash free from worcestershire sauce,paprika,salt,pepper and dash honey. will let you know if they're nice or not.

if i fancy something in particular i just google for what i want then adapt accordingly. for baking,my friend bought me Mary Berry's baking bible for christmas, i took the muffin recipe from there and replaced the sugar with honey and the flour with spelt. most of the things i've made have been trial and error (in the case of bread mostly error ).
there are recipe websites for low gi and low carb etc too.

english muffin recipe. makes 4 muffins.

these are best eaten straight away, torn in half with lashings of butter (nom nom nom). apparently they will keep in an airtight bag for 2-3 days, but will require toasting.

225g spelt flour
1 level tsp Quick Yeast (i used doves)
1/2 level tsp salt
150ml tepid milk
approx 1 tsp honey (and then a tiny bit more to be on the safe side.

I made these in the processor using the dough hook.

  1. measure flour, yeast and salt into bowl, mix it in a bit.
  2. heat milk to tepid and add the honey to the milk - stir until honey is completely dissolved, milk tasted sweet.
  3. start machine on medium speed (if making by hand keep stirring) and add the milk/honey mixture slowly.
  4. leave machine running until dough is coming clean away from the hook/sides. if its realloy sticky leave it a bit longer, i found this took 2-3 mins. do not overwork the dough.
  5. remove dough onto a floured surface and divide into 4. make them round and approx 1-1 1/2 inch high,as they will grow,but not upwards.
  6. place them, well spaced, on a heavily floured baking tray and cover with greased cling film (good tip - thanks), put in a warm place til doubled in size (approx 1 hr).
  7. before you remove them from the warm place,get everything ready for the next stage as the start to sink as soon as you take them out.
- heat a lightly greased heavy bottomed frying pan til nice and hot - use a slice to remove the muffins into the pan (if you touch them they will sink!) turn heat down on pan one you have added in the muffins. cook them approx 5 - 7 mins each side.
  1. remove and eat. yum!

I haven't had the greatest weekends but have still lost a quarter of a pound so far

Does anyone have a receipe for turkey mince?

Can believe I am eating bread and still losing. I know it's spelt or rye bread but still yummy.

The muffins sound so yummy, may give them a go with cinnamon and raisins.

Housewife hope your felling better!

Thanks for the email. I think I need something a little less restrictive in terms of menus, and certainly that I can either put together very quickly or also feed my family!

Interesting to read though and some good ideas for some low carb meals.

i don't have a recipe for turkey mince, but i'd probably try turkey burgers with it, seeing as though its bbq weather :-)
i never thought about adding other ingredients to the muffins, thats a great idea :-)
my tea's arrived yesterday, and they are all yum.
Oh and i totally blew the budget yesterday and bought a wii fit as they had them in costco. Am very impressed so far, hopefully it'll give me the motivation i need to do some exercise too :-) my calf and bum muscles feel tighter just from playing the games on it last night. i kinda justified myself in that at under 70 quid it was cheaper than joining the gym.

Morning thrifty,

I ended up making turkey lasanga last night. I only cheated with the pasta sheets, made the cheese sause with spelt flour and it was actually really nice. Will get wheat free pasta sheets in the future.

The wii is great and you are right the gym would cost a lot more in the long run

ooo . Turkey lasagne sounds lovely. I tried making spelt pasta, having never made pasta before, despite having bought a pasta machine years ago. The first attempt was a bit crap, the second attempt was better (i sifted the flour), i made lasagne sheets. It tasted ok, but not quite like pasta, iykwim. So i bought some brown rice penne from tesco, and tbh, that doesn't taste like pasta either, though is more convenient. I've not tried the other gluten free pasta's. If you try them, do let me know if they are nice :-)

Thrifty is was really good and had it again last night.

I am finding this diet quite hard without the book to read and really don't want to pay the £40. I have a book called the harcombe diet which is not too dis-similar to this diet. I think I will just change the carbs to wheat free and have spelt bread and no pasta.

I have weighed again today and my weight has gone up which puts me off and can't help the daily weighing

Will still up date on this thread but looks like its just you and me thrifty

its good to have a buddy though.

I've fallen off the wagon this week and had vivaldi potatoes (not many, literally 2 small potatoes with a meal) 3 times since the weekend. they are supposed to be lower carb. i shall find out on saturday if its effected my weight loss.

apart from that, i havent really missed the bread (i had leftover muffin yesterday with my lunch). I'm lucky in a way as i start work really early in the morning so i'm home for lunch, i think it makes it easier. i have instant porridge pretty much every work day for breakfast, as it's all i can rustle up on the van.

i think i miss puddings the most, but i know its not forever. I went through a bit of a rut after about 3 weeks, i had an initial weight loss of about 4lbs and then all of a sudden i found it really hard to stick to and was uninspired with eating boring food and just felt i couldn't eat anything. rosemary connoly's diet website has some nice recipes that can be adapted. the sticky chicken is particularly tasty.

i have basically cut out wheat, sugar, potatoes and additives whereever possible. don't beat yourself up if you slip/cant find an alternative. i have vegetable crisps (cooked in vegetable oil) if i have a crisp craving.

dont weigh yourself everyday!!!! ok, if you do, dont take it as your weight, do that once a week.

what kind of recipes are in the harcombe diet book?

Thanks thrifty you are doing so well.

The harcombe diet has 3 phases, the 1st phase lasts for 5 days, your aloud as much unproceesed meat, fish, eggs, tofu, natural live yoghurt, salad and some veggies as you want. You are aloud 50g of dry weight brown rice per day.

Phase 2 - you reintroduce dairy, berries and carbs but you are not aloud to mix the carbs and protein/fats together.

I haven't read up on phase 3 as never got that far

I have bought the receipe book but have never made anything out of it so don't know what there like.

The veggie crisps sound fantastic, must give them a go.

I am the same as you start woark at 6.30am and finish 2.30pm, I do have my lunch at work but so nice leaving early.
