I get veg boxes and had an unreasonable amount of cabbage in the last few weeks.
I don't really have a recipe as such but it will be something like
1 onion
1 tbsp olive oil
1 pepper
1/2 chilli (more/less depending on your preference)
1 heaped tbsp of harissa paste
1 tin of chopped tomatoes
1 tin of white beans
8 medium cabbage leaves
Brown the onion in the olive oil and add the peppers, chilli and harissa paste.
Chuck in the tin of tomatoes and cook down till reduced (probs 25 mins on a med/high heat)
drain the beans and add them in
shred the cabbage leaves finely(removing thick stalks) and add to the pot, lid on and cook until the cabbage is tender.
Serve in bowls, goes nicely with couscous or flatbreads for non low carbers. I usually put a blob of greek yogurt on mine too.
Red is a little trickier to use up than green my fave thing to do with it is stick it in the slowcooker in the AM with water, honey, vinegar and a chopped onion, then serve with sausages at tea time. It is also really nice grated into coleslaw, if you mix in a tin of tuna then you have a good lunch of tuna coleslaw.
You can also pull the leaves off individually and use as a taco shell/wrap.

I find the veg box sites really handy for unusual veg recipes, not tried any of them specifically but they look nice!
