I have also roasted Brussel sprouts in oil, s&p and lots of chilli flakes. Pretty good!

could someone recommend a suitable ham option from either Waitrose or Sainsburys please?

I feel like I'm going mad trying to find the right sort. DP bought some yesterday that was very nice but there were only 3 slices and it's nearly all gone.

BIWI, I made a roast chicken today. I did roast potatoes and carrots for DP and dc plus some broccoli and roasted cauliflower which is what I had.

The roasted cauliflower was really good.

The chicken was actually not that nice. I think I over cooked it :(. I cooked it for the right amount of time and then poked a sharp knife into the fastest bit. The juices squirted out rather than ran out, so not sure what that means. I left it covered for 15 mins under foil but the breast meat was a bit dry and lacking in flavour. I'm just wondering if I did something wrong, like not season it enough? Or whether it was just a not tasty chicken :(. Also when I tried to slice it, it seemed really strandy, and came off in bits rather than slices, if that makes sense?

I have added myself to the list as I have been gradually been putting on the weight I lost 2 years ago, and need to put a stop to it before it gets back to where it was.

mumat39 - that's a shame. Maybe it just wasn't a good chicken. Was it a free range one, an organic one or just an ordinary one?

Re the ham, if you go on to the Sainsbury's website, as if you were going to do an online shop Look at this page . In case that doesn't work, you want to look at 'Cooked Meats' and then at the Taste the Difference ones. They are on special offer at the moment, 2 for £4.

Ruprekt - I have some sprouts in my fridge, from Sainsbury, and according to the packet they have 4.1g carbs per 100g.

Mummat - sounds like it was a bit overcooked... chicken is really difficult to get just right, next time hopefully it will be better. Why not try covering in foil when you cook it next time and then just remove the foil for the last 15 mins, this will keep the moisture in better.

I am a firm believer that all ovens are different (sounds odd but I have proved it when cooking at others houses or changing ovens), you have to "know" your oven and how it cooks and that takes time Smile

i've also been through some of the old threads and added some of the articles linked to previously

particularly relevant right now are the articles that biwi has linked to in the past that relate to restarting low carbing (for those of us who fell off the wagon over the festive period!) part 1 and part 2

DH did say today it was lovely to be on a diet where the food actually tastes good and not filled with artificial crap!

Oh for the love of God I am panicking about starting tomorrow as I have been quite naughty all weekend. I just can't seem to get my head round this full fat malarkey and despite all your fab recipes and tips, am scared almost to start.

However I will give it a go, even though I am not organised at all - have five others to cook for and back to work tomorrow as well.

Have got some total full fat Greek yog fir breakfast, will take spinach and mushroom soup and celery/cream cheese for lunch and eggs for tea.

Am I on the right track? And can I start from 100 please?

Couple of comments about bouillon (sp) in the articles which sounds like a good idea for times when you need a bit of a tasty pep up. Anyone examined carb counts on bought stuff? I checked my stock pot melty things and they are stupidly high in carbs, always a bad sign when the first ingredient is sugar..

aw nell, don't panic - just take it one meal (or hour, or minute) at a time

your food choices look fine (do add some butter to your eggs for tea), and just make sure you don't get hungry, as it's even harder then to resist the carbs

Yddraigoldragon - you're right - and that's why it's always important to check the labels. It's horrifying how much sugar/starch finds its way into processed/pre-prepared foods.

someone asked about this and i forgot to answer - for those with google accounts (e.g. gmail) who stay logged in, I'm not sure that your name won't appear in the top right-hand corner of the spreadsheet (where it shows other viewers). you may wish to log out from google just to be on the safe side - i have to log in to change things such as the spreadsheet title, and i log out once i've done it

Day off for me today. I went to a friend's house for dinner & didn't feel able to ask for adaptioions for me. It was delicious, but carby - two types of potatoes, parsnips roasted in maple syrup, carrots & sweetcorn Shock.

I'm on placement tomorrow, for 6 weeks, so I'll be strictly on the wagon! It's a clinic, not a ward, so hopefully not too many gifts of chocolates or biscuits knocking around to tempt me.
