Old lo-carb thread was 'too big' and wouldn't let me post this. It's for a almond meal pancake - I find one is really filling (I have it with total yoghurt and blueberries) and leave the mix in the fridge to have another next day.

Ingredients:
?1 cup almond flour
?2 eggs
?1/4 cup water (for puffier pancakes, you can use sparkling water)
?2 T oil
?1/4 teaspoon salt
?1 T sweetener
Preparation:
Mix ingredients together and cook as you would other pancakes. I like to use a nonstick pan with a little oil. The only real difference is that they won't "bubble" on top the same way as regular pancakes. Flip them when the underside is brown.

Yield: Six 4-inch pancakes

Nutritional Information: Each pancake has 1 gram effective carbohydrate, plus 2 grams of fiber, 6 grams of protein, and 155 calories.

Got on the scales this morning, another lb down - I'm now 10st 7lbs so exactly 10 and a half stone Grin the lightest I've been for years.

I wish other diets worked as well as this one because I HATE low carbing! But it gets results so what can you do? lol

My return to the fold is being somewhat delayed by DH's birthday today and the cake I have baked him Blush

However, after today that's all the birthdays in this house over (until mine, which isn't until August!), so I have no excuse to get myself sorted.

DH and I are going away for a long weekend at the end of May, so that's my target/focus now.

Hi Lore, that's how I started too (never been one for looking things up and totting up points). I think your common sense tells you what is carby (startchy/sweet) and what isn't. It's worth being strict at the beginning, then you can ease off later, or have the odd cheaty day like me (hello house-brick-sized sticky toffee pudding at the pub last night Blush).

Krepsly - funny you prefer other diets - I'm the other way round! The thought of giving up butter, cheese, cream, mayo.......I couldn't possibly enjoy calorie-counting, although I know it works well for some people.

Sal - how's the Couch to 5K going? I went for a run yesterday, and for the first time since October I reverted to my off-road route, which has been too muddy and un-lit for the winter mornings. It was lovely - so much easier to feel like you are making progress than just ploughing up and down a two-mile stretch of road dodging the commuters and dog poo, which is what I've been doing. I was full of the joys of spring!!

Anyway, must get on, nice lamb casserole tonight, with veggies.

Ok I'm starting to remember the muscular trouble I had last time I low carbed. I'm struggling to get up the stairs. My legs feel like lead weights, I feel like I've been doing step aerobics for 2 hours. Does anyone else experience this? Some Atkins fanatic did explain it to me one time but I forgot what they said it was.

In theory it' cos your muscles are trying to work without sufficient glycogen. Usually glycogen is made from easily-accessible carbohydrate only using stored fat when there is no dietary carb. You aren't giving it any carbs so it is being forced to burn fat ie ketosis. Your body will get used to it but meanwhile your muscles are trying to work on less fuel. I am just about back to normal now and I've been lcing for 4 weeks.

Made myself a "pork salad" for lunch tomorow whilst I'm at college. I'm going to look like such a twat eating that arnt I.

I'm going on a night out on the 2nd April, obviously the low carb thing will go out of the window that day - should I just forget about the diet for one night or go for damage limitation?

Krepsly, it's up to you how you handle a night out. There are lots of strategies for avoiding carbs, but personally I tend to take the night off, forget about it and have fun. As long as it's only now and then it does you no harm (in fact, some diets advocate a "day off" or "carby meal" once a week or so). And try not to blow the whole weekend just because "you've started, so why not carry on?"!!

I never had the "lead weight" feeling. The only thing I noticed when I first started this was the yucky metallic taste. A bit like early pg. Confused

Hello!

I survived the Loand O' Spuds. 10 4.5 this morning, which is actually another Monday morning low weight! Although it wasn't a text book weekend of eating, I was broadly sensible. One piece of bread with lunch, rather than a whole loaf; plenty of veg (inc carby carrots because that's what there was) rather than lots of spuds. I did eat desserts (2 on Sat!) but not massive portions and not to the point of being over full.

Right, Hoping to see 10 3 again this week. While it would be nice to get to 10 1 or 2, I'm not going to get disappointed if I don't. The weight has been falling off me for the past week or so, I think I am due a plateau.

That's pretty much what I have for breakfast most mornings, minus the cream and splenda (because it's sweet enough for me).

I dispute what Sal says about a pot lasting ages - we get through about three a week in our house!

I am having one of those days when I don't want to eat anything and am not hungry. It sounds great but it isn't as I want to want to eat IYSWIM. Had a chicken leg and some coffee with cream but didn't much enjoy them

DH is away tonight so just me to cater for - I was wandering round Waitrose during my lunch hour, and was enticed into buying the ingredients for Heston Blumenthal's recipe of the month. It's basically steak - with rocket, parmesan, olive oil and lemon juice - right up my street and low-carb to boot.

I had my patented aubergine/onion/bacon/mozzarella/parmesan bake. I can't stop making it - it's so delicious. I've has a vey crap couple of weeks low-carb wise but I am newly spurred on having paid for the MN meet-up. Wink Especially as Custy might be going and she seems to be the skinniest thing on the planet at the moment.

10st 6lbs this morning so that's another lb off. It's wierd though, I'm actually feeling sicky and bloated which I know is unusual on low carb diets. My appetite has totally gone now but that's what happened last time, I just have to remember to eat my 3 meals a day or I'll undereat and weightloss will stall!

Ketostix are deep purple now. All going well Grin Wish I had the money to buy some decent stuff though, the tuna salads are started to wear a bit thin!!

Btw incase anyone is interested in this:

Pizza ommellette!

Fry a little onion in a pan, pour on your egg mixture, fry until not gooey (sorry, I'm not great with describing recipes!) spread a little tomato puree on it, add grated cheese, add sliced mushroom and a few slices of pepperoni (if you like it) and then flip into omellete.

Ok it's not as scrumptious as the real thing but it's a decent enough substitute :) apologies if someone has already mentioned this one.
