Old lo-carb thread was 'too big' and wouldn't let me post this. It's for a almond meal pancake - I find one is really filling (I have it with total yoghurt and blueberries) and leave the mix in the fridge to have another next day.

Ingredients:
?1 cup almond flour
?2 eggs
?1/4 cup water (for puffier pancakes, you can use sparkling water)
?2 T oil
?1/4 teaspoon salt
?1 T sweetener
Preparation:
Mix ingredients together and cook as you would other pancakes. I like to use a nonstick pan with a little oil. The only real difference is that they won't "bubble" on top the same way as regular pancakes. Flip them when the underside is brown.

Yield: Six 4-inch pancakes

Nutritional Information: Each pancake has 1 gram effective carbohydrate, plus 2 grams of fiber, 6 grams of protein, and 155 calories.

10st 5lbs this morning. Considering I started just last Friday at 10st 9lbs I think I'm doing quite well!!

Ok I really need a day off however, I hate this food and my appetitie has totally gone, I'm having to force myself to eat 3 meals a day. Who was it on here that used to low-carb all week and then have the weekends off? Will it damage my weight loss too much if I do that??

I want some chocolate buttons Sad (I know, baby or what)

BTW - light headed and dizzyness when standing - due to my change in diet or completely unrelated? I have a really important interview on Friday and I don't know whether to have a carby breakfast that morning or stick to low carb until Saturday? I'm assuming a carby breakfast will make me bloated?

krepsly - I had the worst headache and some lightheadedness when I started lo-carbing. It does go...it went after about 4 days or so with and y head got progressively clearer as time went on.

I would advise not to "mix and match" your low-carb eating with some carbs. But I am an all or nothing king of gal and, once in my zone, find it difficult to step outside of it Grin so you may not want to listen to me Grin.

I find that eating higher carb foods give me a mental fog now so tend to steer clear.

Hooray hooray 180.6 today, first time I've seen 180 since starting this in January. I have succeeded in maintaining my 'no peanuts' regimen, failed on the 'coffee with cream only once a day', but instead have focused on balancing my reward meal as I am supposed to and it seems to be doing the trick. I have a £50 Next voucher to spend on myself the day I see a number starting 17something so that is going to motivate me to keep going!

Today introduces the 8 glasses of water a day resolution.

Popbiscuit I follow a carbs-once-a-day plan rather than a low-carb plan, it's called the Carbohydrate Addicts Lifespan Programme, so it is possible to do. But weight loss is much slower, it is stricter outside the 'reward meal' than other low-carb plans, and for your carb meal you need to start with salad then balance carbs, protein and LC veg - so maybe not ideal for a breakfast! though I know people who do it that way successfully.

Getting your head around LC breakfast is sometimes very challenging for people; if you stop thinking of it as breakfast and start thinking of it as just another LC meal it can help. So you're not restricted to just your 'standard' breakfast foods of egg and bacon etc, you can have eg cheese and ham and cucumber, or poached salmon, or leftovers from the night before! And your appetite goes down when LCing anyway; I don't eat breakfast at all now, just have coffee with cream which fills me up and keeps me going.

10 3.25 this morning but 10st flat at the doctor's! Woo hoo!

I am relying on my own scales but it was a nice mental boost. I still got the "you are above your ideal weight" chat but meh.

Apparently my ideal weight is 9st 3. So that's the target now. I reckon it's not going to be possible but let's see. If I get to 9 7-10 then that might do me.

Also my mum noticed I had lost weight and my friend's partner. Now, a boy noticing! That's progress.

I am a bit off food at the moment. I am slightly concerned that I am not eating enough. I have been v busy and DH is on his 18 day in a row at work, poor sod, so I am home alone in the evenings, which doesn't help. Need to get a bit more creative.

I don't like this new message box - has it changed for anyone else?

I've just bought a new top - size 10! (shows off)

However, after a really bad peformance in an exam I succumed to the temptation of "we're off to the pub? you coming?" Hmm and I had half a lager. Will this totally damage my weight loss??

Krepsly - I don't have the weekends off, as such, but I recently made a decision not to beat myself up with the odd cheat at weekends, so I might have a hot cross bun, or a portion of apple crumble. But I really don't fancy most starchy foods now, so I don't go mad. I just decided that if I was going to cheat I would jolly well enjoy every mouthful and not feel guilty!

BUT I'm not really losing weight any more, having reached my target AND when I was losing weight I wasn't as fast as some others (but it did come off) AND I have a fast metabolism, so I seem to revert to ketosis fairly quickly. If I were you, I would try to stay in the zone as much as you can.

Well done all of you with your weight-loss!

Just popping in quickly to share this with you - chicken 'pizza'

Made it for my lunch and it was lovely!

Per person:

1 chicken breast - cut it in half and beat it flat, so it's no more than 1/2 cm thick, season with salt, black pepper and dried oregano

Pan fry in olive oil on high, for 2 minutes, then turn it over. Turn the heat off at this point.

Top the chicken (in this order) with:

1 sliced tomato
slices of pepperoni
fresh basil leaves
chilli/jalapeno (jarred ones, like Old El Paso/Discovery)
sliced 1/2 ball of mozzarella

Stick the pan under a hot grill until the cheese is melted and starting to brown.

I had a sudden craving for pizza today and this really hit the spot!

Mmm...sounds good. I'm always on the lookout for stuff the DCs will eat too, as I hate cooking different meals for everyone.

I'd probably leave the jalapenos off, bit of a chili wimp.

sal - I have had days like this, when there doesn't appear to be enough food in the house to fill me up. Sad I find that eating meat helps, so much so that I now roast meat at least twice a week so that I have cold meat in the fridge to cut slices from.

I would stay away from coke, diet or otherwise, tbh. Horrible stuff. Was once told that the stuff they use in it is also used to embalm dead bodies!!!! Shock

Try the exercise - it can help. I can sometimes eat through boredom?? Don't know if you are bored today??? Oh, and loads of water Grin

Sal anything with sweeteners in it makes me absolutely ravenous, I have had to cut out diet drinks altogether - you do get used to it but it is a bit boring!

i haven't ran at all this week. have had very productive week though, painted bathroom and a huge garden wall today - my arms ache!

i had chicken tikka quesedillas with celeriac chips.

last week i badly sliced my thumb peeling celeriac, dh came home from work and peeled a full one and bagged up portions for me - he's a love pot!

oh i wanted to ask you all about sour cream.

whilst having a mexican style chilli chicken quesedilla the other day i thought oooooooooh sour cream would go right nice with this.

so i asked dh to get me a pot frmt he spar - and it was carbs for the dinky midget pot which isn't encouraging.

how many carbs is the sour cream that any of you use...say if you were using 3 tablespoons of it?

Waitrose SC is 3.9g of carbs per 100ml. Pot is 300ml and I can't say that I could eat a third of a pot of the stuff. So about 2-3 carbs per meal?

10 4.25 today. Bouncing along near my lowest weight, which is what I expected this week. I am pretty tired but managed to eat a bit more sensibly yesterday.

I made a lovely sauce to go with lamb meatballs. Softened half a red onion, added 3 nuggets of frozen spinach and cooked until melted. Then add enough passata or chopped tomatoes to make a thick sauce. Cook down for a few minutes then pour over the 3/4 cooked meatballs and put in the oven for 10-15 mins and topped with grated cheese. It was really lovely - so much so that I am having it again tonight!

10st 4lbs this morning, I can't remember the last time I weighed this. Looked in the mirror this morning and I can see my chest bones quite clearly as well as my now protruding collar bone - not sure if I like it!!!

Ooh, more recipe ideas - lovely. I was going to do that Nigella Crumbled Beef thing this evening; got in all the ingredients.....except the bloomin' beef.

I am having lunch "al desco" at the moment - home-made squash soup with cubes of salami and cheese on the side.

DH got back from Nice last night; had an embarrassing moment at baggage screening when he took off his belt and his trousers fell down. The perils of weight-loss.

I went for a run this morning - glad you are sticking with it, Sal - you'll notice the difference not just on the scales, but your legs/bum will firm up too. I could crack walnuts with mine Grin Grin
