Old lo-carb thread was 'too big' and wouldn't let me post this. It's for a almond meal pancake - I find one is really filling (I have it with total yoghurt and blueberries) and leave the mix in the fridge to have another next day.

Ingredients:
?1 cup almond flour
?2 eggs
?1/4 cup water (for puffier pancakes, you can use sparkling water)
?2 T oil
?1/4 teaspoon salt
?1 T sweetener
Preparation:
Mix ingredients together and cook as you would other pancakes. I like to use a nonstick pan with a little oil. The only real difference is that they won't "bubble" on top the same way as regular pancakes. Flip them when the underside is brown.

Yield: Six 4-inch pancakes

Nutritional Information: Each pancake has 1 gram effective carbohydrate, plus 2 grams of fiber, 6 grams of protein, and 155 calories.

had pret chef salad for lunch and a plain yoghurt.

Dinner is chicken and lots of veg - tons in fridge and they will go off if I don't do something, They are taking over, arghhh. Prob something stir fry-ish. HAve red kale, mushrooms, scallions, peppers, courgette and prob a few others lurking. Might liven it up with some chorizo as I love the stuff.

Hello, hello new thread!

I went up town today and completely forgot to buy linseed flour, so no muffins for brekkie (boo!).

WhereamI - what's almond flour? Is it the same as ground almonds?

I too am firmly back on the wagon after my dodgy weekend. But I have come to a decision that I am going to be less hard on myself at the weekends; as I am a "maintainer" I can afford to relax a little. I will still eat cauli rice etc, mainly because I actually prefer it to the real stuff, but I'm not going to beat myself up about a couple of glasses of wine and the odd piece of toast. I might as well enjoy the cheating rather than feel guilty about it!! But I must be strict during the week, otherwise the podge will be back. I still need you guys, with all your yummy food ideas!

What made me decide this was seeing an old friend the other day, who I haven't seen for a few months. Her five-year-old son did an absolute double-take when he saw me, and said "your face has changed - it's gone all thin!" When you are 44 that is not something you want to hear, so I realised I don't need to keep cutting back or I'll get that "gaunt" look my perma-dieting mother always had. It is easy to get carried away.

So, low-carb Mon-Fri, and medium carb at the weekends. Let's see how it goes.....

Despite fake chocolate travails/etc of last week and subsequent stall, I woke up this morning feeling massively positive. Have decided am going to see it as a consolidation rather than a stall (doesn't that sound better). Still a solid 5lb loss and I can't complain about that in a week! Managed to stay in ketosis too which is a big deal as bumping in and out messes up my metabolism really badly.

Looked up my old weight logs from when I lost all the weight (went from 16 stone to 10 1/2 and maintained for 4 years, then had DC3 and got up to 11st 3lbs and then ate my way up to 12st 4lbs over Xmas and NY in the USA; literally put on almost a stone in two weeks and it's stuck!) - it took me THREE MONTHS to get from 11st 9lbs (where I am now), to 10st 7lbs (my goal weight). So I need to give myself a break and not expect miracles. Hoping have seen the back of 12 stone for good now.

Also need to ditch the polyols/fake sugar since sweetness is my downfall.

Had goats cheese wrapped in bacon and grilled for lunch with loads of broccoli and had pheasant pate in celery for a snack - was lush.

Black Farmer sausages for dinner - they're the lowest carb I can find. Kids are eating their dinner now and I am not tempted at all. Now if there was a cake around things would be different...

so today i made the best curry ever ever - and no i can't tell you the recipe - cos it was a throw in the spice kind of thing - i wish i'd written it down grrr!

with cauli rice natch.

and...and.. made curry quededillas with LC tortillas

fark me up the arse it was nice

I'm pretty sure almond flour is grund almonds. I made these pancakes at the weekend and they we're delish (I actually prefered them to regular pancakes, more flavour.)

I slipped again today, I had a chocolate. I sense this is going to be a difficult week for me. At least I'm not just saying 'ah, feck it!' and giving up.

Sharkadder - Pheasant pate sounds divine.

Sharkadder I am similar, lost 35 lbs when I first lost weight but it was at a rate of a lb and a half a week, so was slow. And will be slower now, ten years later; and I have more to lose this time (about 45 lbs I think). So realistically it is going to take me about a year Shock.

It's hard, because what I really remember is the being thin bit, I maintained for 6 years; that seems a long way from where I am now! And also last time it was the first and only time I'd ever lost any weight at all, ever; so every few ounces gone seemed a genuine miracle. This time I'm more frustrated and impatient that I have so far to go. Need to get back to celebrating every 1/2 lb gone I think.

But I do feel sane again and can - will - eat like this forever, so it will happen in the end.

Hello. I'm an on-and-off low carber. Well, I was 'maintaining' until I realised that carb creep had totted up to half a stone. So I'm trying to be stricter again.

You can buy ground almonds in most supermarkets - I get mine in Tesco.

Hello new thread....

Well I made flaxseed muffins with my LSA mix this morning and they were horrible. But I was in a rush and DH was clogging up the kitchen with his cake making equipment, so just had with butter, but think I'll try with bacon or eggs tomorrow.

Just popped into supermarket on way to work, so got hot chicken salad for lunch with some cheese for snacking this morning.

Last night DH made a lamb stirfry which was gorgeous.

Find it really easy to stick to during the week, but weekends are really hard. Its DH and DS's parties this weekend so will try and stay on the wagon but don't think it will be easy!

systemsaddict, I think I must be massively IR as after the first week of LC-ing my loss always becomes glacial. I find it very demoralising (not that any other attempts at 'dieting' hsve ever worked).

Am I right in thinking you are doing carbohydrate addicts? I found that book really compelling if it works as I have always derailed myself in grand scale and not got back into LC properly for ages after that.

Is it working okay for you? I mean in terms of headstuff as much as anything. I am fondly imagining I could re-educate myself with a reward meal system (though the first one would probably just be ten tunnock's teacakes).

hi there,
you can buy almond flour in tescos but it's pricey - in the baking aisle. It's just ground almond so you can grind ur own but i don't have a grinder. I thin it's probably preferable to gringd your own as I read somewhere that i goes off tho I've never had a problem with it.
BUT!! this week I picked up almond flour/ground almonds in Aldi for alot cheaper. I really like the pancakes - they are very filling and make a change from bacon breakfast. I made an almond and tangerine cake with almond flour the other week and froze pieces - got a slice out when I fancied something cakey - have just come to the end of it!

custardo, have you tried chicken goujons with a parmesan 'crust'? It is gorgeous. Loads of pepper and parmesan and herbs, dip in egg then roll to coat. Delicious.

Sharkadder yes carbohydrate addicts, it def. works for me - it's more restrictive than Atkins for 23 hours a day, no nuts to snack on for instance, just protein and green veg, basically; but then, you can have anything for your reward meal (in balance - so your ten teacakes would be balanced with the same amount of protein and veg) so you never feel deprived - anything I fancy I can plan in for RM. So I have eaten biscuits, cake or chocolate every day of my diet so far Grin.

The flip side is that weight loss is slow - between 1 and 2 lbs a week normally. But, because I know (having done it before for 7 years) I can stick with this forever, I can live with that. I only came off it because of pregnancy and breastfeeding and general child-related chaos!

If you do want to try it, look at the more recent book, the 'Lifespan program', the food lists have been slightly updated there.

Lowest weight so far today! 181.0 - though I gave blood yesterday so I don't think it's a real weight!

Morning all, goujons with parmesan crust sounds lovely sharkadder might get the ingredients and do that next week...I have never heard of "Carb addicts" sounds good though, I might look into that one once i've got closer to my target as it does sound a good long-term plan that's perhaps easier to stick to.

So today:
B: left over pie from last night (was lovely Smile)
L: ham salad
D: Something with prawns I think...or a souffle with salad

10 9.5 this morning so looks like weekend wasn't too damaging.

HAd chicken and veg bake thing which was lovely. I steamed some red kale and then fried onion, pepper and courgette in some oil. removed and then fried chicken thigh in some oil , added back the veg and a couple of cloves of garlic. Stirred about a bit and then put in the kale, topped with some grueyre (sp!?) and put in the oven for 15 mins.

Was nice - the kale went quite crispy which was nice - I miss the crispness of carbs.

ad some dark choc too.

Brekkie this morning was two scrambled eggs. Working from home so will try to eat lunch at home.

Dinner tonight is sausages with something- not sure what.

Hi spam, if you lost a lot the first couple of weeks then yes I think it isn't unusual for it to slow or stop for a couple of weeks and then go to a more steady pace.
