New Thread for Lo Carbers/non-carbers, etc

WhereamI · 07/02/2011 16:31

Old lo-carb thread was 'too big' and wouldn't let me post this. It's for a almond meal pancake - I find one is really filling (I have it with total yoghurt and blueberries) and leave the mix in the fridge to have another next day.

Ingredients:
?1 cup almond flour
?2 eggs
?1/4 cup water (for puffier pancakes, you can use sparkling water)
?2 T oil
?1/4 teaspoon salt
?1 T sweetener
Preparation:
Mix ingredients together and cook as you would other pancakes. I like to use a nonstick pan with a little oil. The only real difference is that they won't "bubble" on top the same way as regular pancakes. Flip them when the underside is brown.

Yield: Six 4-inch pancakes

Nutritional Information: Each pancake has 1 gram effective carbohydrate, plus 2 grams of fiber, 6 grams of protein, and 155 calories.

Hello all. Can I join?

I quite smoking on NY's Eve and have put on half a stone since then. Combination of not smoking and extending my Christmas scoffing into most of January, I'm afraid!

I would like to drop a dress size (I'm currently a size 14, ) and to shift a bit of my belly flab. I'm not looking for miracle results, just want to be a little bit lighter and slimmer. Just a little bit Grin.

I'm starting an exercise plan next week, but thought I would kick start things with some low carbing. i am an absolute carb./sugar addict, so this is going to be tough for me. Not doing the hardcore Atkins/Dukan thing, as I suffer from hypoglycaemia, but trying to limit carbs and cut out all the shit.

Started today and it went OK.

Breakfast: porridge oats made with water, a few raisins and a smidgen of honey
Lunch: Plain omelette; fat free vanilla yoghurt with raspberries
Dinner: Salmon fillet & steamed broccoli, more fat free vanilla yoghurt

I have drank a LOT of water, and a LOT of caffeine (4 cups instant coffee, 2 cups tea - this is my replacement for fags at the moment) and felt a bit headachey this afternoon, but not hungry at all. Really pleased about that!

Anyway, just thought I'd pop in and say hello, as no doubt I will be requiring your support at some stage soon (probably this weekend, when my DC's birthday party will mean lots of pizza and cake in the house...argh!).

headfairy · 10/02/2011 20:57

sal, I'm going to get on the scales every day and stare at that bloody number 15 (there I've said it) and that'll make me even more resolute. And that I will mostly be wearing my tightest clothes and feeling so squished I won't be able to eat :o

CointreauVersial · 10/02/2011 21:03

Aargh FBB - there you go again with your weird peanut butter and cheese combo!!

Sal - my weekend has already started - I don't work on Fridays, so I am half way down a glass of chilled Pinot Grigio. Blush

But I've had a very busy day - at a Sustainable Procurement Conference in central London (zzz.... bet you're all jealous, not). I was very good at the lunch - had a salmon steak and some greek salad - but then the biscuits came out and....ohhhhh...I really needed a boost at that point (four boosts, to be specific). BlushBlush

Anyway, for tea I had hard-boiled eggs, mashed with butter, with asparagus for dipping (from IPD). It was lush. Not sure why I bothered, what with all the biscuits and wine. Ah well....

headfairy · 10/02/2011 21:03

Hi tical, well done on giving up the ciggies. I did it 6 years ago and it's the best thing I've ever done. I don't regret it for one moment, even though I am a good couple of stone heavier. But it's so much better for your health.

Thanks headfairy.

I feel a zillion times better already and my skin looks completely different - didn't realise how grey smoking was making me!

I am quite scared about kid's birthday party on Sunday and all the temptations, so am going to have grilled bacon & poached eggs beforehand to arm me against cake cravings Grin, and reward myself with one mini bottle of white wine after it is all over and I have packed everyone off with all the tempting leftovers Grin

Well blow me down with a feather, the mini pizzas worked! V salty though, but oh my gosh it's nice to have some crunch.

headfairy, I was 16 stone plus when I started LCing the first time, and got down to ten and a half stone and stayed there for four years (til DC3); so it can be done!

headfairy · 10/02/2011 21:35

shark that's so good to hear. I'm fortunate in that being tall I'm still a size 16. However it is not good at all. I want to be 12 stone again. That puts me firmly in the size 12/14 camp, which is where I was before I had the dcs. Thanks for inspiring me a bit more!

tical your skin will really thank you! I've been amazed at how my voice changed too. You've done the hardest bit now! As for avoiding food temptation... well I'm hardly one to preach as I'm utterly rubbish at it. I'd have to stitch my hands in to my pockets as I just can't say no!

CointreauVersial · 10/02/2011 22:15

Hiya Tical! Low carbing is great for belly fat - you will feel less bloated almost immediately. Keep some low-carb snacks handy on Sunday (such as chunks of cheese) in case you get tempted.

CointreauVersial · 10/02/2011 22:16

Sharkadder - so talk me through those mini pizzas....

Cointreau they were super-easy - put oven on full whack (could maybe have done with being a bit lower), put four of those biggish thinnish salami slices on a baking tray, put sundried tomato paste, mozzarella, weeny bits of red pepper and some black pepper on them and stuck them in the oven til the edges were crispy (about 10 mins for me).

The flaxseed pizza crust I made last w/e (link on here somewhere), was pretty nice too. But these were nice as a snack and v crunchy-edged, which is what I like about pizza!

CointreauVersial · 10/02/2011 22:23

Cor, those chips look good! I guess you could try any flavour/spice.

Wow, Sal! I didn't realise you had lost so much. How brilliant.

Tortington · 10/02/2011 23:40

CHIPS yay

i have a celariac = will make them on sunday! yay

now, i know someone made crisps - who was it and how is it done?

Tortington · 10/02/2011 23:48

wow sal thats bloody amazing

BecauseImWorthIt · 11/02/2011 08:47

SuperCusty (fantastic namechange Grin), you can make crisps with cheese - coarsely grate some Parmesan (or mature cheddar - but Parmesan gives a better texture).

Drop around a tablespoon on to a baking sheet (non-stick, or put some greaseproof paper on the tray), and then another one a good distance away, etc. You may only get 6 on a tray.

Put these into a hot oven, and let them melt/cook till lightly golden brown - it doesn't take long.

Take them out of the oven and let them cool. As they cool they will harden and go crispy.

You can add cayenne/black pepper/chilli powder, etc if you wish - but they're lovely on their own.

FauxFox · 11/02/2011 09:05

Wow Sal - that is such an achievement!

Those chips look good...I can see I will be buying celariac rather more often than I used to (ie never!)

So today for me:
B: Nuts and cheese
L: Burger mayo and avocado
D: Lamb chops with a bit of HM tomato pasta sauce and roast peppers and courgettes

I can't believe I have been alcohol free for 2 weeks! Haven't done that since I was pregnant! I def won't go back to drinking wine 5 nights a week now...it will be wine one night a week and vodka and soda if I want anything on other nights. I don't even miss caffeine...I don't know what to make of that because I was a coffee junkie since age 14ish Confused am drinking decaf at home but now the first 2 weeks are up if there is an option of nice coffee when out I would have it Smile (but with cream not milk natch)

Have a good day all!

Megglevache · 11/02/2011 09:08

Hello may I join you ladies?

I had great success with India's diet after I had dd- I lost quite a bit of weight but I have gotten lazy and poured it back all.

Looking for some inspiration here (preferably for brekkie Grin)

I've been moaning about it for ages but it's taken me till now to do something about it. I want my mojo back!

BerylStreep · 11/02/2011 09:25

About to have scrambled eggs and smoked salmon for brekkie. (Yummy eggs from a relative - tastes nothing like you buy at the supermarket, and the yolks are virtually orange!)

Last night I made ham, leek & celeriac pie from IPD cookbook. It was Very Very good.

I must not have wine though. My weight is up 2kg over the last 2 weeks (up 1 kg from 2 days agoShock - what's going on there?). There is a price to pay for cheating.

Sal, that's a fantastic achievement! I lost 3 stone last year, but have put 1 1/2 back on. Well done for keeping it off.
