@OhRiRi yes I like tempeh, you need to cook it thoroughly otherwise it tastes really bitter but I sub tofu for tempeh in a lot of the usual recipes, always marinade and then you can bake or fry or air fry. I quite like cutting into thin strips, marinating and then frying to make it almost like bacon (not on it’s on but say in a burger or a hefty sandwich)

we were camping yesterday so grabbed some lunch at a winery on the way (v limited selection for me so a pretty boring salad minus blue cheese and bacon, and a starter of fried artichokes), then we did impossible burgers with all the trimmings on the fire, and baked mini potatoes and BBQ’d veg 😋

Thanks for the suggestions. I like tofu but I'd prefer it with more firmness/chew/texture, so I'm hoping tempeh will be what I'm after! Most things I've read suggest steaming it before marinating and cooking?

I'm working a 14 hour shift today 😴 I was v prepared yesterday though, so today looks like...

@OhRiRi have you tried freezing tofu? It's something I thank @KobaniDaughters for - press slices as normal and then freeze on greaseproof so you can defrost as many at a time as you want. Defrost and cook as normal. I much prefer the texture and have read that it helps with absorption of marinades.

Odd food day yesterday

L: good life nut burger, steamed broccoli, green beans and spring greens with gravy
Snacked on a handful of salted nuts and cherry alpro yogurt then took a bottle of salad cream with me to the cricket which I lashed onto a portion of chips 😂

Morning 😊

I had my first Riverford box arrive yesterday so have a few random things to use. Today will be the pak choi which I have quite a bit of! Any suggestions other than stir fry? Or apricots? Not the biggest fan of just eating them as they are.

Today is looking something like...

B - toast (really need to rethink my breakfast options!)
L - salad probably with new pots and squeaky bean bbq chicken piece things
D - stir fry and bao buns

I'm a regular riverford customer too @OhRiRi 😊 I'll be back on the pal choice question later (off out to meet friends for coffee and (hopefully!) cake of some sort)

Yesterday was

L: Thai red curry and sticky rice
D: hm flatbreads filled with kofta, hummus, cumin roasted baby carrots/courgette, quick pickled red onion and tahini sauce plus tomatoes and beetroot
S: chocolate digestives, love raw wafer bar, gelato sandwich

I was a die hard riverford receiver, can’t wait to get their boxes again! You could do an Asian inspired soup - maybe pho or some other clear broth based soup to have the pak choi in?

B: overnight oats with raspberries and dates
L: cucumber and hummus (a LOT of hummus for those who are concerned - a whole tin of chickpeas worth), blueberries
S: fruit bar thing, tangerine
D: katsu curry with roasted courgettes from the garden, Japanese rice and furikake fried tofu

Managed another fast day, long may the motivation continue (didn’t do any last week though), food was exactly the same as tuesday

I definitely did not have a fast day (to be honest I struggle to fast even when I'm asleep...)

B - hurriedly eaten toast
L - Wicked kitchen burrito - was out and about and it was nice to find something easily obtainable!
D - an entire bag of M&S chicken nugs (just about sums my day up)
S - I'm about to inhale an entire bar of Rhythm 108 choc washed down with a coffee.

Maybe tomorrow will be better!

On an unrelated topic, can anyone recommend a decent vegan friendly shampoo? I have very unfaffy hair, short, wash, towel and go, don't even brush it. I've been using Garnier something or other (smalls like bananas) but it just makes my hair look really greasy. I'd quite like a bar if possible (just moved to soap after 30ish years of shower gel)

Thursday

L: Mexican bowl - chipotle black beans, tomato, sweetcorn, beetroot, avocado
D: minestrone with garlic bread
S: really delicious slice of lemon fudge cake, gelato sandwich

Yesterday

B: sourdough toast and marmalade
L: more sourdough toast with baked beans, reggae sauce and nooch
D: spaghetti parmigiana (Jack Monroe recipe)
S: chipsticks, Lindt milk chocolate

B - chickpea flour omelette with onions, mushrooms, spinach, cherry Toms and cheese. First attempt and delicious! Going Going try making up a big one, portioning up and freezing for quick breakfasts
L - a very unauthentic pad Thai
D - not sure yet but have rainbow carrots to use up

Yesterday's dinner ended up being mushroom steaks with new pots and carrots roasted with thyme.

Today...

B - crumpets with avocado and paprika, and a concoction of mushrooms, onion, spinach, tomatoes and cheese (can you tell I'm back on the diet wagon 🙄)
L - pass! Just had a shopping delivery so probably some kind of salad
D - burger and chips (sorry diet!)

Lol at finishing the pak choi @OhRiRi. Sorry! It wasn't that much I had to say either 🙄😂 but I did have it 3 weeks or so in a row so did some looking around. It really is at its best with Asian flavours so it's hard to find things other than that but as well as stir fry I have a freezer full of Thai red and green curry as it's good in those. And I did this recipe (subbed maple syrup for the honey and used defrosted tofu slices) and that was good too

Saturday

B: porridge
Delicious lunch at my Aunty’s house - sweet potato baked with coconut and thyme, cous cous salad, smoked aubergine with peppers with olive bread and plant butter followed by fresh pineapple and dark chocolate mint thins
Followed by
Delicious dinner at a friends. Indian spiced potato and veg filo pie, aubergine curry, Chana Dahl, tomato salad, raita, poppadoms and pickles. Followed by chocolate and honeycomb ice cream 😋

Yesterday

L: toast topped with avocado and tomato with chilli, squeeze of lime and fresh coriander
Dinner at DimT - spicy veg dim sum, Korean plant chicken and steamed rice
S: alpro cherry yogurt, oggs mini chocolate cake

Oh and the shampoo thing. I have grown my hair quite long in the last few years but had short non faffy hair for a long time before. I used lush shampoo bars for a couple of years before I grew it long and it was fine. When it got longer I found them not so good though and switched back to liquid shampoo and separate conditioner.
I bought a bar at the vegan fair last month that I've started using though and am quite impressed. I didn't realise when I bought from him that he's VERY local to me (less than 2 miles!) as he delivered something DH ordered. He said his friend makes it and I'll be buying another one soon. I've used it for shaving a couple of times too which needs more practice (got to get enough lather). I haven't had it long enough to know how long it will last yet but here's a link if you're interested

I’m US so not sure if the stuff I use is available in the U.K. but have worked my way through so many different shampoo and conditioner bars (my hair is shoulder length and fine) but these are my favourite:

L: smoothie (lettuce/avocado/ginger/lime juice/frozen pineapple and banana)
FLT sandwich with Richmond facon and chipotle Mayo
Dinner and cocktails in a fab vegan restaurant in southsea. Tempura veg to start, mushroom tagliatelle for main and strawberry panacotta for dessert. The pasta was especially good - oyster mushroom, sun dried tomato, some heat, topped with some sort of Parmesan and rice paper facon
S: toast and marmite

L: Meera sodha butternut/tomato/cannellini/rosemary tray bake with crusty bread and plant butter
Pizza express for dinner (back to work tomorrow lol). Small salad with house (ranch style) dressing, stuffed portobello mushroom, garlic bread with mozzarella and nice olives. Strawberries with dark chocolate dipping sauce and a lotus biscuit for dessert

I think I was on the Vegan "What's For dinner?" threads with some posters on here, back in the olden days when there was no vegan forum on Mumsnet
