Can we please have a 'What I ate today' thread, vegan style?

I'll start!

B: bran sticks and oat milk, glass of OJ.
L: Hummus and tomato toastie.
D: Stir fry: pepper, courgette, onion, garlic, ginger, carrot and Quorn chicken-style pieces, noodles and lots of soy sauce. First time I've tried the chicken-style pieces; they were on offer. Nice and low cal/high protein, but nothing special in terms of taste.
Snacks: apple, banana, bombay mix.

Not a great day food wise yesterday - very busy.
Toast and marmite with 2 cups of tea.
Cupa soup.
Vegan cheese and beetroot sandwich, packet of crisps,satsuma. 2 cups of tea.
2 aldi vegan sausage rolls.
Bournville buttons.
I did run 10k though so ran off some of the calories 😂

Toasted pumpernickel bread with violife cream cheese then chickpea and spinach madras with brown rice. Very low on ww points today but a lovely warm and comforting menu!

Yesterday was
Tofurkey salad wrap.
Chickpea and tabouleh salad.
Linda mac sausage casserole with mustard garlic mash and broccoli.
About 6 cups of tea. Doughnut. Mince pie amd 2 oranges.

Smashed avo, garlic mushrooms amd tomatoes on toaSt.
Roasted cauliflower soup. Bread roll. Apple.
Cold pasta salad - cherry toms/ pepper/ onion/ grated sheese/ sainsburys vegan coleslaw.

Today is vegetable chilli and brown rice for lunch (I batch cooked the chilli yesterday and portioned up for work lunches). Dinner is garlic, leek and mushroom pasta made with oatly creme fraiche. Haven't cooked with it before so will see how it goes!

Yesterday
Hash browns, mushrooms, grilled tomatoes, baked beans, toast, crumpets with marmite. 2 glasses of apple juice. Pot of tea.
We were away fro the weekend and this keot me going until about 8pm last night when we went to zizzi and I had
Olives
Jackfruit hot pizza
Million Aires slice dessert.

Eaten SO much today!

B: slice of white toast with peanut butter and banana, slice of brown toast with chocolate spread and banana, an apple

L: toasted homemade focaccia and carrot and lentil soup, big bowl of raspberries, cherries and blueberries

S: violife cheddar style slice and red onion toastie

D: Aldi chicken style burger, homemade coleslaw with Hellman's vegan mayo, fries, cucumber and mushy peas and a pint of beer.

Snacks: wine!

Today
Cheese and onion toastie.
Chickpea tuna salad wrap.
Minestronie cuppa soup.
Salt and vinegar crisps.
5 cups of tea.
Dinner later ( after a run) will be pizza.
Am sure they'll be more snacks too🙈

D: miso aubergine, roasted Japanese sweet potatoes with a salad

B - granola with hazelnut milk, a million black coffees because dd decides she hates sleep again.
L - bought fresh tomato soup.
D - brown lentils cooked with courgette, tomatoes, onion, garlic in bouillon with pan-fried Taifun smoked tofu. Bloody delicious!

L: left-over red lentil lasagne

D: quorn fajitas, lots of veggies and avocado and added quinoa

How does everyone get their iron in? Everything says snacking on nuts/ adding spinach to things

I think iron is tricky. Personally i use supplements but spinach, pea protein powder, flax seed, chia seed, lentils, pumpkin seeds, beans and dark chocolate are all very helpful!

@yorkshireteaspoonie I pay iron absolutely no attention at all and am always allowed to give blood so I guess my levels are fine!

Having said that, I do eat a lot of beans/pulses/spinach/broccoli etc!

Can always get it checked - my doctor checked m y levels recently because of my diet and I was actually higher than the average amount

B - Sojade yogurt (do try this, it’s the best vegan yogurt I’ve ever had and has similar live bacteria to natural yogurt) with granola & frozen blueberries.

L- meeting my friend so will head to the local market for noodles and dumplings.

D - mushroom bolognese, linguine, whatever cheese I have in the fridge.

Green tea and lemon for the morning. May have an apple later.

Lunch is wild rocket, baby plum tomatoes and sweet blush onion salad with some spicy roasted chickpeas and a little drizzle of soy yoghurt and mint raita.

Dinner is smokey aubergine chilli (ww recipe) with brown rice and leftover salad.

Yesterday -
Crumpets with cheese and marmite.
Smoked tofu salad with hummus topped rice cakes.
Dahl, bombay potatoes, veggie curry, popudums and lime pickle.
Chocolate orange cake (my birthday yesterday )
Lots of cups of tea. 3 glasses of oj. Hot choc with squirty soya cream.
