Can we please have a 'What I ate today' thread, vegan style?

I'll start!

B: bran sticks and oat milk, glass of OJ.
L: Hummus and tomato toastie.
D: Stir fry: pepper, courgette, onion, garlic, ginger, carrot and Quorn chicken-style pieces, noodles and lots of soy sauce. First time I've tried the chicken-style pieces; they were on offer. Nice and low cal/high protein, but nothing special in terms of taste.
Snacks: apple, banana, bombay mix.

L: hearts of palm, avocado, chickpeas and kimchi
S: massive matcha latte with oat milk
D: pan-grilled asparagus and mushroom risotto, cashew yoghurt

Alpen cereal bar.
Pot noodle.
4 oatie biscuits.

Nibbled all morning while working from home: cashew yoghurt, chocolate and peanut butter stuffed pretzel bites, hearts of palm, grilled asparagus
Afternoon snack: hearts of palm and bitchin sauce, picked on DS Japanese rice and tofu leftovers
D: pizza, sangria and cake with chocolate and strawberries at book club

Yesterday was an IF day and looked like

L: handful of grapes and 25g unsalted cashews
D: Indonesian style curry with tofu, tomatoes and spinach served with broccoli

Meals a bit better today, snacks not so much :-)
Overnight oats with strawberry alpro, blueberries and banana.
Cheese toastie with salad.
Veggie sweet and sour stir fry with noodles.
2 apples, handfull of grapes, 2 satsumas.
2 packets of crisps

L: small portion of Moroccan chickpea soup, smallish portion of aubergine and chickpea stew with vegan sour cream
S: 2 large dates, 2 satsumas, snack a jacks
D: Dahl, small portion of veg korma, broccoli, rice, naan bread and mango chutney

Yesterday:
B: avocado on toast
L: pretty basic thrown together salad
S: salt and vinegar crisps and hummus, an orange
D: lentil and mushroom soup with toast, hot toddy

Doesn’t sound like a lot but my portions were huge

L: root veg (celeriac, carrot, parsnip) and lentil curry
S: grapes, Brazil/cashew nuts
D: veg burger in a bun with slice of cheese, lettuce and burger relish, large salad, sweet potato fries

B: porridge with cherries, seeds and soya milk and a satsuma
L: coronation chickpea on fresh granary sandwiches, handful of cherry tomatoes, cucumber sticks dipped in Caesar dressings
S: 2 dates, grapes
D: Yorkshire pudding, roast potatoes/parsnips/squash, peas, carrots, broccoli, cabbage and gravy

Yesterday
Bowl of shreddies and a banana
A whole load of party food from my son's 5th birthday party.
Big chickpea smoked tofu salad with tesco vegan Cesar dressing.
Bowl of swedish glacé ice cream.

Today
Fried mushrooms and tomatoes on marmite toast with avocado.
Cheese salad wrap. Braeburn apple.
Slice of chocolate cake.
Dinner will be a vegan beef pasty from aldi wit veg and gravy.

Yesterday was

B: shroomdog sausage, hash browns, spinach, tomatoes roasted in chilli oil, mushrooms and baked beans
L: marmite sandwich on granary bread, satsuma, grapes
S: scone with spread and jam in a local tea shop
D: cauliflower and mac cheese

@vegansprinkle - sadly not! These were made from a mix that I bought via Facebook and they might be ok but I think they were overdone. I need to try them again to know if I can recommend them. I have a couple of different recipes to try as well. Will definitely share if I find a good one though

Breakfast: Mixed frozen berries heated, mixed with oats, probiotic coconut yoghurt, banana, nuts and seeds and a few fresh blueberries.
Lunch: home made bagel with pro biotic cheese and gherkins. Four pieces of dark chocolate.
Dinner: Home made tortilla, black beans with fried onions and garlic, tomatoes, capsicum, avocado and lettuce with Mexican sauce.

L: 1/2 carton bean and chipotle soup, 2 slices granary spread with guacamole, beetroot, satsuma
S: nakd bar, snack a jacks, grapes
D: greggs steak bake with mash, peas, carrots, broccoli and gravy

Just had Tescos plant chef mushroom spaghetti Bol for lunch . Then a pear for afterwards. Not exciting but very tasty.

D: curried cauliflower, potato, chickpea traybake thing

Today
B: overnight oats with mango, pineapple and seeds
S: nakd bar
L: beetroot, cherry tomatoes, cream cheese and cucumber granary sandwich
S: small peanut butter sandwich, grapes, satsuma
D: tenderstem and green beans dressed in poke sauce (new sauce, delicious) with veg gyoza

Hoping everyone is safe and has food in the cupboards

Yes I hope the same Domestic Grin Flowers to all!!! I made up a fab apple crumble recipe (low cook, no sugar, gf). To use up apples or pears that you need to eat

3 chopped ,peeled if necesary , apples or a mix with pears, with one cooked quince (if you have one)
chopped small figs , dates, sultanas.
Good ground cloves. ginger etc. (as much as you like! ) we LOVE ground cloves, they're good anti viral!
I\2 to whole cup of pure unsweetened fruit juice , I used cherry juice for the Vit. and the juice of half a lemon ( used some of the skin too) it's full of Vit C, A little water if needed.
Ground almonds and walnuts (for the topping) with freshly ground nutmeg Or whatever you like. Mix with a little olive oil.

Put all the fruit with the juice\ water in a solid saucepan and cook very gently. Don't let it boil. Just till the apples are soft. (you could blend them if you liked) Put in dish let it cool then add the nut topping . Done !! I couldn't be bothered to put under the grill but you could . keep an eye on it. The nuts will burn easily.

Lockdown vegan dinner ideas? I am realising how reliant I was on enormous online shops or frequent trips for fresh veg and with a 80 item limit and a parent to shop for I’m trying to keep things simple. I’m also massively lacking motivation!

Laura Hugh FW is your saviour! His River Cottage Veg Everyday book is worth buying. There are many good ideas and they're SIMPLE not like Jamie Oliver's. ! Not totally vegan but very helpful.
