Can we please have a 'What I ate today' thread, vegan style?

I'll start!

B: bran sticks and oat milk, glass of OJ.
L: Hummus and tomato toastie.
D: Stir fry: pepper, courgette, onion, garlic, ginger, carrot and Quorn chicken-style pieces, noodles and lots of soy sauce. First time I've tried the chicken-style pieces; they were on offer. Nice and low cal/high protein, but nothing special in terms of taste.
Snacks: apple, banana, bombay mix.

Yesterday -
B - porridge
L - mixed bean salad, apple & fry’s chocolate orange bar
D - lentil, aubergine and pepper bolognese with garlic bread

B - muesli & yoghurt
L - Greg’s vegan sausage roll Blush
D - black bean tacos with home made guacamole & salsa, followed by wicked vegan brownie which was lush!!

B: overnight oats with raspberries, blueberries and seeds
L: African sweet potato and peanut butter stew with brown rice and broccoli
D: shakshuka (tofu, spinach, capers) with crusty bread and (flora) butter
S: 3 dates, 2 satsumas, Brazil/cashew nuts. Might have something else later, it is Friday after all Grin

Oh my god I ate so much yesterday I can’t even begin to remember it all but it started well with lentil soup then was all the carbs and all the hummus and Girl Scouts cookies and everything in the fridge apparently

Large portion of chips from the chippy.

Probably raid the cupboard later.

Yesterday was

B: oat/PB/chocolate smoothie. It was like a reeses milkshake if anyone wants the recipe Grin
L: hm roasted sweet potato and red pepper soup with buttered granary bread (some of which also had marmite)
D: lentil shepherds pie with green beans, broccoli and cabbage. Almond Magnum for pudding
S: 3 dates, 2 satsumas, Fry's chocolate cream

Toasted pitta and hummous shortly
Lidl plant based mince in onion gravy with peas and carrots kinda stew type thing with roasted broccoli and asparagus.
Snacking on vegan jerky

B: 2 hash browns, baked beans, cherry tomatoes roasted in chilli oil then mixed with spinach and cooked mushrooms
L: marmite sandwich on granary, beetroot, grapes
D: puff pastry pie with hm filling of pulled king oyster mushrooms and veg with celeriac mash, peas, carrots, broccoli and roasted cauliflower. And gravy
S: hm shortbread biscuit and slice of Bosh classic Victoria sandwich (all in the name of research of course Grin)

B - toast with naturli spread and marmite, orange juice
Mid morning- Coffee and 2 dark chocolate digestive followed by crisps a bit later
L - tofu stir fry with baby corn, mushrooms, edemame beans, cashews, spring roll and miso soya sauce and soda noodles
Mid afternoon - liquorice tea, 3 dark chocolate cherries, grapes
D - beanburger in wholemeal bun with pickles, fried onion and spinach, homemade potato wedges, beetroot ketchup
Evening - some chocolate gingers.

Need to eat a bit less!!!

Yesterday I made a big pot of jackfruit biriyani from the blue jackfruit and ginger cookbook.

It was amazing.

Shall be eating mostly that today as well...
