Can we please have a 'What I ate today' thread, vegan style?

I'll start!

B: bran sticks and oat milk, glass of OJ.
L: Hummus and tomato toastie.
D: Stir fry: pepper, courgette, onion, garlic, ginger, carrot and Quorn chicken-style pieces, noodles and lots of soy sauce. First time I've tried the chicken-style pieces; they were on offer. Nice and low cal/high protein, but nothing special in terms of taste.
Snacks: apple, banana, bombay mix.

B: porridge with sultanas, mixed seeds and soya milk
L: leftovers from the freezer kale, mushroom and leek subji with rice, with soya yogurt and beetroot. 2 small satsumas
D: bean and cider cassoulet (Jack Monroe, v nice) with broccoli, cabbage and giraffe bread
S: Brazil/cashew nuts, snack a jacks, cherry tomatoes, grapes

L: lettuce, lentil and hummus salad
S: chips and guacamole
D: fodmap friendly tempeh chilli with sautéed spinach and roast butternut (my BF is fodmap, bloody nightmare finding dishes we can both eat, this went down a storm!)
2 gin and tonics and a glass of wine

@IJumpedAboardAPirateShip vegan and fodmap together must be extremely challenging. I suspect I have fodmap traits but ignore them, partly because the title of this book sums up what I think it would be like

B: overnight oats with berries and mixed seeds
L: lentil and veg hotpot, Christmas cake
S: 2 satsumas, 3 dates, snack a jacks
Had friends over for dinner and had a few crisps/nuts, then fishless finger tacos, with guacamole, salsa etc. And some Mexican dresses salad. Then some apple crumble and alpro custard for pudding

B - cereal and oatly
L - salad with chickpeas
D - LM sausages with sweet potatoes fries & a cream mushroom sauce (fry onion and garlic, add 100ml veg stock then up to 1 carton of oatly cream) it was so lovely!
S - popcorn with Tesco free from chocolate buttons wouldn’t buy them often as expensive but did satisfy the chocolate craving

Dinner yesterday was pesto pasta with red onion, garlic mushrooms, fry chicken strips amd cherry toms with oatly creme fraiche mixed in too.
Today
Porridge with banana.
2 alpen jaffa bars.
Cheese sandwich
Packet of crisps.
Dinner will be chips, veggie fingers and sweetcorn, because I've done a 20 mile walk today as thats all I can be bothered with. Alot of snacks will be had later to I suspect.

@PartTimeDomesticGoddess yes it’s a nightmare!! It’s my best friend though rather than boy friend so don’t have to do it too often!

I have come down with a horrid cold
Yesterday:
My own body weight in freshly squeezed orange juice and some vile green juice
L: lentils, mushrooms, radishes, butternut squash
S: peanut butter stuffed pretzels
D: lentil soup and hummus and pita

Hoping DH will make me a vat of lentil soup to see me through the weekend

Yesterday
B - porridge with grated apple and oat milk
s- banana
L- wrap with salad and some siracha sauce (and two tiny pieces of tofu left over)
s- munched on some dark chocolate and ate some peanut butter out of the jar
D- home-made pizzas! - didn't bother with a cheese replacement - just loads of tomatoes and peppers

B: seeds and nuts, fruit, yogurt
L: chickpea 'tuna', roasted tofu, spinach and sun dried tomato salad
D: nut roast
Was so hungry in the evening, had a big plate of raw veg, some hummus and some chickpea crisps which were pretty nice actually, like vegetable wotsits Grin

@georginalou89 I'm not (and my DDs are a bit older than your age bracket) but I'm fairly new to it and they'll both try pretty much anything. DD14 woop batch cook for herself with beef mince, but DD17 can't be bothered and will therefore eat more plant based Grin

Today has been
B: seeded toast with PB
L: sandwich made with seeded toast and 2 fishless fingers, lettuce, mayo and jalapeños. Half a perfectly ripe mango and 2 large dates
D: curry night with Dahl, Bosh creamy korma, rice, naan and spicy mango chutney
S: 2 slices of vegan smoked Gouda, half a large apple and probably a fry's cream later

Had porridge with golden syrup for brekkie.
Have just out a load of veg in the soup maker for lunch.
For dinner we will have shroomdogs with broccoli and cauliflower cheese roast spuds with gravy and hm rice pud for dessert.

some handfuls of granola

B: one jus rol croissant with flora buttery and jam plus a slice of toast and jam
L: spicy lentil soup and buttery toast, 2 satsumas, 2 large dates
D: one shroomdog sausage, Bosh mushroom stuffing, roast potatoes, red cabbage, butternut, cauliflower, broccoli, peas, parsnips, celeriac mash. First attempt at golden syrup sponge with custard. Was edible (went down well with guests) but not the recipe I was looking for

Today's breakfast - porridge with oatly, grated apple, cinnamon and ginger. - yum.
Along with a cup of Pukka mint tea. #feelin'fancy Wink
