Can we please have a 'What I ate today' thread, vegan style?

I'll start!

B: bran sticks and oat milk, glass of OJ.
L: Hummus and tomato toastie.
D: Stir fry: pepper, courgette, onion, garlic, ginger, carrot and Quorn chicken-style pieces, noodles and lots of soy sauce. First time I've tried the chicken-style pieces; they were on offer. Nice and low cal/high protein, but nothing special in terms of taste.
Snacks: apple, banana, bombay mix.

Porridge, soya & frozen winter berries (defrosted)
Leek & potato soup with flat breads & peanut butter
Falafels & crudités with humous

L - crisps & humous
D - Waitrose vegan mushroom pasta
S - popcorn and fry’s raspberry cream bar (like strawberry quality streets!)

B: tinned grapefruit, porridge with rice milk, blueberries and seeds
L: Asda steam bag quinoa and couscous plus some of those frozen Mediterranean oven veg
D: Bosh mushroom wellington (thick slice without any pastry), cranberry sauce, mash potato, onion gravy and ALL the veg Grin
S: grapes, marmite crumpet x2

@ForTheLoveOfCatFood the frys raspberry creams are lush but only place I've found to buy them from is eBay. Have you found them anywhere else?

L: taste tested a few soups I was batch cooking, 2 cashew yoghurts
S: crisps and hummus
D: tortilla soup, salad, nachos with guac, salsa and sour cream and half a lemon cupcake

I got them in B&M Bargains before Christmas, the shop assistant said they were flying off the shelves! I wonder is it because they are the only place that is selling them as I haven't seen them anywhere else.

This one is great for ideas but I'm actually not vegan.

I dropped off for several days (busy, small hospital procedure) but am back again. Everyone is still dishing up gorgeous food.

B: Vegan scone
L: Spaghetti and red pepper and almond pesto (homemade, no cheese) olives
D: I made these from an online hello fresh recipe. Added some peppers and courgette and left out the yoghurt/sour cream. Very nice and so simple.

B: coffee and soy creamer
L: salad bar selection at DH’s work (lettuce, tofu, grilled mushrooms and aubergines, green beans in a coconut sauce thing and some steamed broccoli
D: instapot kale and sweet potato soup

L: go gourmet vegan lunch of quorn ham/salad sandwiches on whole meal bread, 2 mini onion bhaji and 2 mini fig rolls
D: Asda nut cutlet, roasted salad potatoes and a HUGE plate of mixed veg to compensate for no veg at lunchtime lol. With gravy
S: 2 large dates, 3 ginger nuts, Brazil/cashew nuts, an orange

PartTime was the Asda nut cutlet nice? (always looking out for a quick freezer staple)
IJumped your DH's work canteen sounds very healthy and nice

S: Original Pringles (keep them away, I can't stop)
D: Chinese bowl of stuff: hom mali rice, shitakes, pak choi, roast cashews, carrot and mooli pickle, soy, kecap, sriracha etc.

I’ll take the Armenian lentil soup recipe too! I have a ton of mung beans in my cupboard and some very fresh Iranian saffron - anyone got a good Persian soup recipe?!

B: overnight oats with coffee, almond butter and maple syrup
L: leftover kale, lentil and sweet potato soup
D: odds and ends salad (mushrooms, radishes, lettuce, tomatoes and hummus)

Out all day so had to plan ahead and bring food with me - hope I don’t get too hungry!

I am not vegan but try and have a couple of veggie/vegan dinners a week.

Today I had rice, with Chinese leaf, sugar snap peas, spring onion and fermented black beans and chili. It was yummy.

@SapatSea I think they're decent and they're convenient, especially when the others are having fish/meat. Best with gravy imo

B: porridge with sultanas, mixed seeds and soya milk
L: bol chilli non carne soup pot, beetroot, 2 small satsumas
Dinner was at ikea and I had veg biryani with veggie balls
S: 2 large dates, Brazil/cashew nuts, grapes

Am not vegan but we've had this recipe a few times in the last couple of weeks and love it. We eat a fair few lentils but this may have become my favourite red lentil recipe

Marmite on toast.
Alpen jaffa bar.
No turkey feast sandwich and sweet chillie.
2 plums..1 apple.
Mushroom stroganoff with kale and rice.
Dry roasted peanuts.

Today
Smoked tofu salad wrap.
Beetroot hummus salad sandwich.
2 apples. Dry roasted peanuts.
Dinner will be a baked potato with garlic mushrooms, beans,cheese and a salad.
May have a bowl of bananas and custard later as that's what the kids have got for dessert tonight.
