I'll start!

B: bran sticks and oat milk, glass of OJ.
L: Hummus and tomato toastie.
D: Stir fry: pepper, courgette, onion, garlic, ginger, carrot and Quorn chicken-style pieces, noodles and lots of soy sauce. First time I've tried the chicken-style pieces; they were on offer. Nice and low cal/high protein, but nothing special in terms of taste.
Snacks: apple, banana, bombay mix.

And I've just had a Cleo's peanut butter cup pack. Best vegan equivalent to reeses that I've found. Eye wateringly expensive (I buy them in packs from eBay) but that helps me eat fewer Blush

Could I ask a question please? It's my ds 5th birthday in march and after going round in circles I've decided to do a party at home for him. I think a lot of the parents will stay. Probably about 10 children coming.
Want to make sure there's something for the parents to nibble on while the kids are earing. What shall I put out for them? Thanks!

Redpriestandmozart · 25/01/2020 20:15

@jess3817 the one snack that seems to really wow non-vegan guests with me is curry pinwheels. I just use a sheet of puff pastry, spread some curry paste on it, finely chopped red onions, finely chopped coriander (I use Tesco frozen), roll up, slice, place on baking tray and bake for about 12-15 minutes. I also do a marmite & vegan cheese one and sundried tomato and olive but it's the curry one that really goes down well.

jess3817 · 25/01/2020 20:29

Redpriestandmozart wow they do sound really nice! Will be making those 😁 thanks!

PartTimeDomesticGoddess yes please that'd be great, thank you.

PartTimeDomesticGoddess · 26/01/2020 14:36

@jess3817 it's the only recipe I still cook in imperial measurements as I've never bothered to convert it. It keeps well (certainly over a few days) and freezes well. It's also excellent with custard for pudding. I make this in 2 loaf tins so you could easily do a half qty if you wanted, and I've never adjusted the cooking time to do that. My mum makes it in a tray bake type tin (she's been making it since the late 70s, it just happens to be naturally vegan Smile) and I've written below what the original recipe says for tin size.

11oz self raising flour
3 tsp ginger
1 tsp bicarb of soda
1/2 tsp salt
8 fl oz hot water
4 oz margarine
4 oz Demerara sugar
8 oz golden syrup

Heat oven to 160 fan. Sieve flour, ginger, bicarb and salt into large bowl. Place remaining ingredients in a saucepan and heat gently, stirring occasionally, until margarine has melted and sugar has dissolved.
Add the contents of the saucepan to the flour mix and mix together really thoroughly, ideally with a mixer.
Bake in a lined shallow tin, 11" x 9" for 45 mins.

Seeing as you're all brilliant cooks, was wondering if you could help me? Having a family get together. 11 of us. 6 vegan 5 not, but they're brilliant and will happily eat whatever I make. It'll be on a Sunday lunchtime. Can't be spicy as my nan is 93 and cant take it😂wich is fair enough.
Things we've had before
Various roast dinners and stews.
Pies. Quiches. Different pasta dishes.

Any ideas gratefully received 👌

TheReef · 28/01/2020 13:02

Just made the slimming works version of tomato soup which is lovely

1 tin of baked beans
1 tin of carrots
3 picked onions
1/2 pint of veg stock

Simmer for 20 mins then liquidise when cool enough. Really nice.

jess3817 The Bosh mushroom and nut wellington is pretty easy to make. It serves 4 so you would need to make 3.
