Can we please have a 'What I ate today' thread, vegan style?

I'll start!

B: bran sticks and oat milk, glass of OJ.
L: Hummus and tomato toastie.
D: Stir fry: pepper, courgette, onion, garlic, ginger, carrot and Quorn chicken-style pieces, noodles and lots of soy sauce. First time I've tried the chicken-style pieces; they were on offer. Nice and low cal/high protein, but nothing special in terms of taste.
Snacks: apple, banana, bombay mix.

L: Bosh gumbo and rice, beetroot
D: aloo Gobi, rice, Dahl, naan, mango chutney. Swedish glacé ice cream.
S: 3 dates, 2 small satsumas, s&v snack a jacks

D: Mexican Sweetcorn salad, beetroot, guacamole, black bean chilli, rice and oatly creme fraiche

B - cereal bar, orange and yoghurt
L - Tesco pesto and roasted veg wrap - really yummy! Only £2.50 or £3 as meal deal
D - packed of quinoa & rice mixed with cashews, sesame seeds & veg with black bean sauce
S - fry’s chocolate orange bar & some Oreos plus a few glasses of wine Wine Blush

L: Mushroom and thyme fettucine
S: Crisps
D: Roasted fennel, balsamic harissa tomatoes, chickpeas with preserved lemon and agave syrup (subbed for honey in the recipe), flatbread. Going to try Oatly creme fraiche if I get to a supermarket.

Really interested that you all like Vivera "meat" etc. Have things improved a lot since the TVP and Quorn days? I've always given fake"meats" a swerve (been veggie since 1980) since they were so dire, sounds like they have improved!

Not 100% vegan but getting there.

Yesterday

Breakfast was
Whole meal toast with peanut butter and sliced banana. Oat milk in all hot drinks.
Lunch was green lentil and tomato soup. Oat crackers Fruit. Soya yogurt.
Dinner was Beyond burger, homemade oven chips, salad. Melon. And then far too many rich tea biscuits with a huge mug of tea.

Breakfast - alpro plain yoghurt with gluten free granola and raspberries.
Snack - apple.
Lunch - tomato and basil soup and gluten free roll. Banana.
Cup of tea and bag of ready salted.
Tea will be - jacket potato, beans and salad.

Blue dragon thai spicy noodle bowl for lunch.

Dinner is Iceland no porkies sausage with butternut squash mash and broccoli and onion gravy.

D: Sainsbury's plant based burger (as good as beyond burger imo and half the price) in a bun with sriracha mayo and American mustard, large salad and sweet potato fries with more sriracha mayo

I didn't have a recipe, I used one of the soup mixed veg bags from Sainsbobs and added garlic and more onion and two potatoes...fried it up for about 15 mins with loads of dried herbs, salt, pepper, fennel seeds, then let the mixture cool (I didn't and my pastry melted!), wrap it up in your short crust (I used the pre-rolled which makes two big one) then brush with plant milk and back at 180 fan assist for about an hour...nom!

Ummmmmm and then I had a second dinner of leftover sweet potato and peanut stew and mashed potatoes at 10pm Blush
