I'll start!

B: bran sticks and oat milk, glass of OJ.
L: Hummus and tomato toastie.
D: Stir fry: pepper, courgette, onion, garlic, ginger, carrot and Quorn chicken-style pieces, noodles and lots of soy sauce. First time I've tried the chicken-style pieces; they were on offer. Nice and low cal/high protein, but nothing special in terms of taste.
Snacks: apple, banana, bombay mix.

Today I've eaten:

Homemade bread, toasted with peanut butter for breakfast

Tonight's dinner is loaded nachos using quorn mince, homemade salsa, guacamole, soured cream and I'm going to finish off some vegan cheese slices that I bought on offer last week (90p!), which actually taste ok, especially melted.

Baileys4two · 10/01/2020 17:31

The cheese is by Violife.

jess3817 · 10/01/2020 17:52

@Baileys4two they look lovely.
Today I've had
Beans on toast.
Minestrone soup.
Packet of prawn cocktail crisps.
Orange.
We have had what the kids call 'stuff in a bowl' - sweet potato wedges, quinoa, avocado, cherry toms, roasted chickpeas, roasted peppers and kale. Alpro caramel pot for dessert.

L: 2 satsumas, grapes, 1/2 carton of carrot and butternut soup, greggs sausage roll (no steak bakes in my local yet)

S: 3 dates, chipsticks and salted cashews

SapatSea · 10/01/2020 22:50

jess stuff in a bowl sounds really good

SapatSea · 10/01/2020 22:55

I slept badly and couldn't face breakfast so ended up snacking all morning on unsalted crisps and biscuits. Not healthy! I did have some grapes.
L: Beanburger, pink pickled onions, salad
D: pasta with red pepper and almond "pesto", tenderstem broccoli tossed in olive oil, lemon, chilli flakes and lemon with toasted slivered almonds.
S: a few more biscuits. I'm not buying them next week.

SapatSea · 10/01/2020 22:57

I read the article in the Guardian about bee populations getting ill from mites after being hired out for pollination duties in US almond farms and now feel guilty about using almonds in my pesto.

Today has been

Slice of granary toast with flora and marmite when I got up

Vegan brunch of 1 shroomdog sausage, 1 hash brown, baked beans, mushrooms, spinach and roasted cherry tomatoes

Cafe Rouge vegan afternoon tea (which was very nice)

Currently don't feel I could eat any more today, but I might have something else later

cricketmum84 · 11/01/2020 17:58

Woke up too late for breakfast so had a brunch of alpro plain yoghurt, blueberries and a sprinkle of granola.

Dinner is roasted peppers filled with lentil chilli topped with a little grated violife! I've made a ranch style dip to go with them with alpro yoghurt, ground garlic, thinly sliced spring onion, parsley and salt and pepper.

ForTheLoveOfCatFood · 11/01/2020 18:08

@jess3817 It’s a deliciously Ella recipe. Says they keep for 7 days in an airtight container.

200g almonds (I used mixed nuts)
400g medjool dates
4 tablespoons raw cacao powder
2 ½ tablespoons almond butter (I used peanut butter)
2 tablespoons coconut oil

I tweaked the recipe as above based on what I had in the fridge Smile

Method:
Begin by placing the almonds in the food processor and pulsing until they are nicely crushed.
Add the medjool dates and coconut oil and pulse until it’s fully mixed.
Add the almond butter and cacao and then mix again in the food processor.
Take a tablespoon of the mixture and roll into a ball. Continue doing this until the mixture has finished.
Place the rolled balls into the freezer for around 1 hour, then remove and store in an airtight container in the fridge.

SapatSea · 12/01/2020 15:21

L: Out and about so had a "packed lunch" of apple, nuts and pannini filled with some griddled courgettes and toms and a bit of balsamic in the dressing

Taco bar had chipotle roast butternut squash and chickpeas with walnuts, red cabbage baja slaw, roasted sweetcorn in a jalepeno mayo sauce thing, pinto beans, pico se Gallo and chipotle in adobo salsa, and tons of guac

Oh....and 2 glasses of wine, 2 glasses of sloe gin and a gin and tonic. J said no to the cake though Halo
