I'll start!

B: bran sticks and oat milk, glass of OJ.
L: Hummus and tomato toastie.
D: Stir fry: pepper, courgette, onion, garlic, ginger, carrot and Quorn chicken-style pieces, noodles and lots of soy sauce. First time I've tried the chicken-style pieces; they were on offer. Nice and low cal/high protein, but nothing special in terms of taste.
Snacks: apple, banana, bombay mix.

A week in to veganuary and I'm eating so well!
B: wholemeal toast with naturli and marmite

Overnight oats with cherry alpro yoghurt and blueberries.
Alone jaffa bar.
Chickpea salad - whatever was in the fridge with marmite rice cakes and hummus.
Packet salt and vinegar crisps.
Dinner will be mexican black bean stew with lemon parsley cous cous and kale

B - 2 x crumpets with sunflower spread & marmite
S - apple with a tiny bit of peanut butter & banoffee nkd bar (snacky lunch today as had a late breakfast)
D - lasagne trying the vivera mince and using cashew milk to make the white sauce rather than oatly. (Had a nice creamy taste when I was putting it together earlier ready for tonight’s dinner) serving with garlic bread and a nice salad Smile

Yesterday:
L: spiced cashew butter and mango chutney sandwich, crispy rice with avocado and yuzu
D: DS cooked shepherds pie from Oh She Glows, salad
S: (so many!) hummus and cauliflower, cashews and almonds and cranberries, an orange, might have eaten a fair amount of the mashed potato when helping DS with the pie....

Greggs vegan roll. They sold the last flipping steak bake the guy in front of me!! Sooo upset!!

Dinner is Asda's new plant based sausages with roasted cauliflower, broccoli and green beans with a little harissa.

L - vegan sausage sandwich, satsuma, ruffles raspberry bar
D - potato salad with dill, sweetcorn, onion rings, salad. Followed by vegan raspberry torte

B: Porridge, grated apple, toasted seeds and prunes
S: crisps
L: Beans on toast, hot sauce
S: biscuits
D: Wholewheat giant couscous, ras el hanout roasted red onion, cauliflower, courgette, capers, lemon juice , toasted silvered almonds, 1/4 flatbread.

B - bagel with marmite (it turns out marmite without butter is awful - need to stock up on some Naturli for work!), handful of grapes
L - 2 x wraps with hummus, salad with lettuce leaves, tomatoes and a handful of leftover black beans
D - Jamie Oliver's mushroom and puy lentil bolognese. A couple of squares of dark chocolate for dessert

I just realised that I accidentally had a totally vegan day today! (I'm vegetarian)

Breakfast - olive bread with "buttery" spread

Lunch - pasta with tomato and veg sauce

Dinner - mango and chickpea curry

Snacks - Apple, carrots, hummus

B - muesli & oatly with some frozen blueberries
L - bagel with sheese garlic cream cheese which was on offer and quite nice, clementine and yoghurt
D - will be LM sausages with roast potatoes & veg
S - I’ve already eaten two Oreos Blush but out this afternoon which should help haha

D will be lemon and garlic orzo with roasted veg

L - salad leaves, tomatoes, wrap with hummus
D - vegetable biryani with cauliflower, carrot and peas. Probably some more dark chocolate for dessert

Has anyone tried any of the supermarkets' vegan pizza? I bought the M&S one on a whim for tomorrow night's dinner. I think the 'cheese' is made from cauliflower and cashews.

Overnight oats with banana.
Big salad of kale spinach grated carrot cucumber tomatoes and radishes, and the imitation tuna I found in aldi with lemon and hellmans vegan mayo. Bread and butter.
Orange and some cashews.
Sausage chips and peas.

Hope you don't mind me posting a lovely breakfast recipe and a dinner recipe that I made yesterday.

I'm also not vegan (or veggie for that matter), but I'm trying to reduce refined carbs and we only buy high welfare meats, so we don't eat meat every day.

Breakfast was a homemade cereal bar using dates, figs, coconut oil, linseeds, sunflower seeds, pumpkin seeds, sesame seeds, oats, salt, cranberries, and mixed chopped nuts.

Lunch was a cup of tea

Dinner was butternut squash, roasted with smoked garlic oil, salt, thyme, pepper and smoked paprika. Then topped with a mixture of red/yellow peppers, leek, spring onion and passata, salt pepper, thyme and paprika and sprinkled with breadcrumbs, fried dried onions, parmesan, and goat's cheese, which you could leave out for vegans. Back in the oven until golden.

For the cereal bar, I blitzed the dates, figs and coconut oil with some warm water to get a smooth puree. I then added the rest of the ingredients, and some cinnamon and pressed mixture into shallow tray and baked at 170°C fan for 15 mins. Cut into slices whilst still warm.
