Can we please have a 'What I ate today' thread, vegan style?

I'll start!

B: bran sticks and oat milk, glass of OJ.
L: Hummus and tomato toastie.
D: Stir fry: pepper, courgette, onion, garlic, ginger, carrot and Quorn chicken-style pieces, noodles and lots of soy sauce. First time I've tried the chicken-style pieces; they were on offer. Nice and low cal/high protein, but nothing special in terms of taste.
Snacks: apple, banana, bombay mix.

Today breakfast was marmite and butter on seeded toast. The. A LOT of coffee. Lunch at Yo Sushi (miso soup, salt and pepper cauliflower, sesame aubergines and seaweed salad). Then a vegan pistachio bar and more coffee in Starbucks. Dinner will be leftovers-probably some sort of lentil chilli with roast sweet potatoes and Mediterranean veg.

B: Swedish crispbreads with cream cheese and pesto
S: some gingerbread house, Bombay mix
D: guac and chips, slice of root veg tart, veggie tagine with giant couscous salad
Lots of red wine

Roasted cauli, broccoli and green beans with mashed potato.

I've also got some GF seeded crackers in the oven for snacks. First time I've tried them so am looking forward to them!

Could you share the recipe for the crackers cricket? They sound lovely.

Here, breakfast was toast and posh Christmas present jam, lunch was fish fingers, chips and beans, dinner will be done sort of vegetable soup.

Really really easy and you can mix up flavourings too. I've gone for chilli, garlic and thyme on these but thinking maybe a basil, garlic and vegan Parmesan on the next batch?

Hi, joining in to keep myself motivated

I did about 2 months of whole food plant based but fell thundering off the wagon on a trip home for Christmas

Can’t believe how quickly I started to feel my old unhealthy sluggish self

So

B: almond butter and banana on sourdough

L: huge salad or shredded red cabbage, carrots, radishes, spring onions, beetroot with a tahini ginger, date syrup and apple cider vinegar dressing. Lots of mixed seeds on top

D: butter nut squash soup

S: pop corn, satsuma

The kfc burger was nice, but to be honest it wasn’t that much nicer than a fairly standard frozen vegan chicken burger with Hellman’s vegan mayo with a bit of lettuce in a shop bought white bun. The novelty of being able to order it from KFC was good though!

I try to avoid food waste so often base meals on any leftovers or food that needs used up quickly.
B- porridge with sliced pear and walnuts
L- large salad with romaine lettuce, tomato, radish, avocado, mushrooms. Left over black bean pasta and roasted sweet potato and aubergine and a slice seeded bread.
D- vegetable bake with celeriac (from The Happy Pear cookbook, substituting any dairy ingredients in recipe for vegan alternatives- love this!). Served with some sprouts and cabbage I had in fridge.

L: leftover giant couscous salad
D: Mexican salad from Tocaya
Went to see Dear Evan Hansen in a City 2 hours away because my friend is in the tour so brought her home and was starving so had leftover hummus and roasted cauliflower and a massive salad she brought with her - and half a bottle of wine

Excellent thread! I’ve been eating plant based for three months and need some ideas. Here’s mine for today:
B - cappuccino made with oat milk and sugar free syrup (gingerbread)
L - homemade carrot, coriander and orange soup from a vegan soup book I got for Christmas.
D - fajitas made with thick slices of portobello mushroom as the ‘chicken’, peppers, homemade guacamole and coleslaw (made with coconut yoghurt)
S - aldi dark chocolate orange rice cake bar, banana, Granny Smith apple with peanut butter

Yesterday - no breakfast as I was running late

Lunch - tortilla wrap with vegan “tuna mayo” (crushed chickpeas with vegan mayo) and salad. 2 satsumas.

Tea - roasted Mediterranean veg and tomato risotto

Today

Breakfast - weetabix with almond milk

Lunch - root veg, lentil and cumin soup

Tea - will be veg curry with brown rice

B - Apple with peanut butter & yoghurt
L - 2 x small hot cross buns with sunflower spread
D - LMs red pepper and chorizo sausages with pasta

For anyone interested in trying the Pappa johns pizza the Sheese was nice but next time I’d ask for a little less of that (just my tastes) and more veg toppings as they weren’t very generous 2 bits of mushroom on the whole pizza! But that might just be our local one. The little potato tots were nice tho. Overall I felt it was expensive for what it is and would prob just make at home next time.

D: not sure yet. Kid coming home late from after school club so will have to be something quick

Alpro cherry yoghurt with banana and oats
Packet salt and vinegar crisps.
No cheese and onion pasty from Iceland - delish.
Nice big jaffa orange.
Dinner later will be a vegan fry up - this is bacon, shroomdogs, hash browns, mushrooms, beans and roasted cherry tomatoes.

L - 2 multi seed crackers (homemade) with violife cream cheese
D - leftover jackfruit chilli, brown rice. A few chips and violife grated cheese (total gamechanger for me on chips and definitely helps my crazy cheese cravings!!)
