Vegan what’s for dinner thread?

Sorry if there is already one of these on the go. I used to be on a vegan what’s for dinner thread and it was fab.

Wondered if anyone would like to join me on this one?

I’m not actually vegan, but try to eat vegan most of the time.

Tonight we’re having either jacket potatoes with hummus and salad or Asian coconut broth with rice noodles, veg and peanuts.

Oh that sounds lovely!

Tonight will either be Asian coconut broth (aforementioned^^), or cauliflower fajitas with guacamole.

We're eating the fridge up and the V Bites duck pieces are tonight's forraye.

I'm currently low carbing it so I'm having a duck salad with hoisin dressing and DH will be having Duck Fried Rice.

Tomorrow will be lentil and M&S mince chilli with homemade guacamole and salsa in flatbreads with some lettuce and a 'cheese' style sauce

Ooh good thread. I’m the same as you, almost vegan. No idea what’s for tea but watching with interest!

Probably be frozen veg burgers and waffles 😄 although we have loads of beans in the cupboard so maybe i’ll Make some bean burgers.

Duck fried rice sound amazing - I’d forgotten about that Linda McCartney duck! Is that the one you use?

Here is a picture of last night’s cauliflower fajitas and homemade guacamole. Was lovely, (if I do say so myself).

Tonight I’m doing Thai curry with veg, peanuts and brown rice. If I leave out the chillis then dd might actually eat that too! Makes things easier if she eats what we do. Rarely happens though.

I'm not vegan but try to eat mostly vegan. Tonight I'm having Thai red curry rice & vegetable soup.

We're not vegan, but tonight's dinner is a family favourite that happens to also be vegan Nigella's vegetable pot Also delicious cold.

I really need to put more effort in. I only ever cook proper meals in slow cooker or batch cooking. I never just whip up a Thai curry! Need to be more organised, I used to be great. Buh. DS1 (3 yrs) would deffo reject it but got to keep trying to nourish him 😄

What is the fake duck made of? I try and avoid meat substitutes (/processed food) but depends what it’s made of.

Same here re processed fake meat, but that duck is seriously delicious. I wouldn’t eat it all the time or anything, but nice as a treat. It has soya in it.

Tonight is quite boring it's mushroom stoganoff in broccoli rice. Tomorrow is viviera pulled pork with romanesco mini muffins (bit like American tater tots but with romanesco because I'm low carb)

Last night’s dinner was Goodfellas vegan falafel pizza with salad. Tonight will be baked sweet potatoes with hummus & inevitabie salad.

I'm having baked sweet potato with red kidney bean and lime 'dip' (I would usually blend it but having it chunky tonight) and salad.
I really need to make more effort but I'm finding it hard to be motivated in this weather. Been eating lots of salad-y stuff and stir-fries

Today I'm having my main meal at lunchtime because I'm running a 10k trail race tonight.

I'm having pasta with vegan pesto, kale and pine nuts.
Tomorrow I'm out with work colleagues in the evening. I'm hoping there will be some vegan options. If not, I will probably choose something vegetarian.

Im still quite new to a plant based diet, so this thread will be really useful for inspiration.

Oh good luck @hound! Sounds lovely as long as not too hot.

I’m the same just now @blanche. Nothing too elaborate.

My curry tonight will be fairly basic; ginger, lemongrass, coriander coconut milk and garlic with veg and peanuts. I won’t be standing making a proper paste or anything. Too much for this heat and I don’t have a food processor atm.

Changed my mind about the curry - too hot for any stove action! I’m now having some much less interesting hummus, breadsticks, crudités and olives. Also a Wine. Cheers all!

Cauliflower rice stir fry with tonnes of vegetables. Sesame oil, Chinese 5 spice, garlic and soy sauce. Plus leftovers for lunch!

I've got a tonne of herbs in the garden, so lots of them in tomato pulp sauce, jalapenos, brown rice pasta, and Something Yet To Be Determined.
