Vegan what’s for dinner thread?

Sorry if there is already one of these on the go. I used to be on a vegan what’s for dinner thread and it was fab.

Wondered if anyone would like to join me on this one?

I’m not actually vegan, but try to eat vegan most of the time.

Tonight we’re having either jacket potatoes with hummus and salad or Asian coconut broth with rice noodles, veg and peanuts.

Am I ever going to get this fecking gazpacho 😂???

Change of plans here, as I didn’t get my arse into gear early enough to make and then chill the soup. So we’re now having homemade wedges with hummus and crudités.

I’ll have more child free time tomorrow as it’s weekend, so I’ll make my gazpacho then.

Whenever I think about gazpacho I think of the Simpsons episode where Lisa goes vegetarian and her family have a BBQ and she tries to stop everyone eating meat-

Lisa: Wait Dad! Good news, everyone! You don’t have to eat meat, I made enough gazpacho for all! It’s tomato soup, served ice cold.

Ooh! Had a great meal tonight using two recipes from Vegan Eats World by Terry Hope Romero (of Veganomican fame).

Vegan crepes (her recipe) with a sauted mushroom & thyme creamy filling (my own recipe) followed by a fabulous baked cashew & tofu citrusy cheesecake which I baked onto an ad hoc almond biscuit crumb base & served with So Good Vanilla vegan Icecream. Yummity yum!

First time I had used her recipe for cheesecake filling and it didn't disappoint.

The ever elusive gazpacho is a mysterious beast. I still haven’t made it! Completely my fault as I ate all the ingredients.

Last night was bread, oil & vinegar, tomatoes and fruit. We had been out for tapas earlier in the day though, so didn’t need much.

Tonight I don’t know, but I can smell someone’s bbq from outside, so I’m considering firing ours up. I saw a recipe for teriyaki tofu on the bbq. If I cba to get to the shops I might try that. I think someone else on here was barbecuing recently..? I’ll look back on the thread for ideas!

Making gazpacho today, but shall have it for lunch instead of dinner.

Dinner tonight is going to be risotto (maybe pearl barley risotto if my corner shop has barley) with mushrooms, spinach and courgette.

Just found this sub forum and loving the thread for dinner inspo!
Am not vegan, I am vegetarian but vegan curious Grin. Dh is technically a meat eater but happy with veggie and vegan offerings, having veggie parents.
Tonight is lentil Ragu out of the freezer for quickness because I have a busy day Smile

I’ve been a vegan for a veeeery long time, it’s lovely to see more of these threads pop up.

Last nights dinner was green coconut noodles.
(We we’re out until late at a school do so needed something quick and easy, and green noodles are one of my go to quick and easy meals)

It’s basically edamame beans, peas, kale, spinach and courgette quickly stir fried with garlic lemongrass, ginger and a generous squirt of sirancha.
Throw in a can of coconut milk and some udon noodles, simmer for 10 minutes and when the noodles are cooked it’s done.

I make it with rice noodles sometimes too.

Those both look lovely recipes^^. I’m a sucker for noodles and coconut milk recipes especially.

Tonight is going to be garlic portobello mushrooms “steak”, roast baby potatoes, corn on the cob and vine tomatoes. We’re starting to wean my 6mo, so he’ll be able to try all of that. Dh is having w vegan quorn burger too / instead of mushroom, but I’ll give it a miss unless I’m ravenous. Trying to lose a little weight, so do not need the burger bun and bready burger!

I’m making this^^ aubergine tagine tonight, minus the honey. I’ve finally replaced my food processor, so I’ll make cauliflower ‘couscous’ to go with it.

So I ended up not being arsed with the tagine and just did chunks of aubergine, sliced onion, garlic, a tin of tomatoes, salt and extra virgin olive oil in the oven. Just had it with cauliflower ‘rice’ / ‘couscous’ which I’d sautéed for a few minutes. It was really delicious and reasonably low carb, so that made me happy Halo. Alrhough, the less said about the bread roll and crisps beforehand the better... Blush.

Oh well. Nice to find a lovely, low
carb vegan meal for dh and me anyway.

Tonight is tesco sausage rolls with mash, carrots & corn on the cob.

Oooh I need a good tagine recipe, doing a Moroccan dinner party on Friday so pistachio falafels to start, tagine and jeweller couscous for main and going to try to find time to make a rose, pistachio and cardamom cake for pud

Tonight was homemade chowmein noodles with steamed dumplings from the Chinese shop and stir fried veg.

Tomorrow is a full roast dinner with the works... anyone got a good Yorkshire recipe that doesn’t resemble a pancake?!

I am having butternut squash risotto. I have heard nutritional yeast is similar to Parmesan so might have that sprinkled on top.
