Vegan what’s for dinner thread?

Sorry if there is already one of these on the go. I used to be on a vegan what’s for dinner thread and it was fab.

Wondered if anyone would like to join me on this one?

I’m not actually vegan, but try to eat vegan most of the time.

Tonight we’re having either jacket potatoes with hummus and salad or Asian coconut broth with rice noodles, veg and peanuts.

I’ve got a few possible options tonight...

What would you have?

I’m considering;

  • satay rice noodles (new recipe from a friend’s blog)
  • roast veg & ciabatta
  • spinach, tomato & mushroom wraps, maybe with homemade potato wedges
  • hummus, homemade potato wedges and crudités

PS: I’m obviously a low carb failure Blush. As evidence above^^. Wraps AND potatoes Blush??

I do need to lose a few lbs though. Now trying a No S approach. Easier to do with vegan food and also feeding the whole family. That’s my excuse and I’m sticking to it!

Personally I'd go for the satay rice noodles (and ask you to share the recipe Smile )

Chicken style chunks in satay sauce are lovely, or just veggies. I use crunchy peanut butter for extra, well, crunch!

Bit boring but for low carb try substituting wraps for a big iceberg lettuce leaf?

^^ that was referring to the aivar, but all the suggested jacket toppings do sound great so thanks guys.

I’m going to make sweet potato, spinach and cashew nut curry tonight - kind of a mash up of a recipe I found on a blog and the ingredients I happen to have in! Hopefully it will turn out ok.

I had lots of veggies going floppy so made loads of rich stock for the freezer overnight. Boxed it for the freezer this morning but have decided to make pho for dinner as it's quite light and just too hot for cooking anything for long!
I have some lovely field mushrooms, so will use those along with tofu (not v Vietnamese I know), edamame and choy sum.

My curry was amazing - in a food processor I made a paste with ginger, garlic, coriander, a chilli, some extra chilli flakes a little veg oil and lemon juice. Toasted some cumin seeds and cashew nuts and whacked those in and whizzed it up, then did my usual ‘meh, might as well bung some of that in’ across my spice collection. Then fried some onions, garlic and a red pepper, chucked in a load of sweet potatoes, mixed it up, tipped in some light coconut milk and veg stock then let it bubble away for a few hours till we were ready, throwing some spinach and a few more (while this time) cashew nuts plus extra coriander. A tiny bit sweet might try with some other veg next time but gorgeous, and DP loved it too.

Oh @alias, that looks damned delicious!

I just had my rice noodle salad, which was also delicious, but rather rich. Only needed a small portion, which is a bonus as I now have my lunch for tomorrow sorted.

Getting some brilliant ideas from this thread!

Tonight I’ve been inspired to make satay with Ocado vegan chicken pieces - they’re my favourite as they’re really big chunks & great for skewers.

Tofu macaroni 'cheese', as per this recipe

It really doesn't resemble macaroni cheese, but is very nice nonetheless (I add a lot of well wrung-out spinach, and some brocolli)

I just wanted to post this article here, as there’s some interesting points made about soya consumption. Just as you mentioned the rainforest thing up thread^^. Makes me feel a little better about consuming soy over animal products!

Don't want to hijack the thread but just wanted to have a tiny vent. I'm on mat leave and there is a works do in a nice restaurant next week. Ive been invited which was nice and was told lunch will be in the form of a buffet. I checked the menu as you do and there are 3 vegan options there. "Hooray" I thought. Emailed my boss (the organaiser- knows I've been vegan forever) and said "ooh great there are some vegan options- is it ok to request that one be included? Happy to pay in advance" and got a reply saying that the food has been ordered, there will be no vegan food but will be vegetarian food and side salad. (In a sort of "and that is that" way). Can't really say anything as the same person is currently considering my flexi working request. boohoo

I could always order a separate meal but I'd feel like the troublesome vegan twat. I'm sure I'll get over it. #firstworldproblems

Anyway, what's for dinner tonight ?! I'm hungry !!

@Bea1985 that’s horrendous!!! They need to accommodate you. Ugh hate that attitude. If I was you I’d phone the place and explain and see if they’ll do you a vegan option at the same cost as the buffet. Sucks being singled out though!

Last night’s dinner was ravioli from Waitrose and Tesco red pesto, really nice.

Had fried rice with leftover rice, red capsicum, frozen corn, spring onions and chopped marinated tofu cooked with sesame oil, tamari, and Chinese spicy mushroom sauce. It was quick and yum!
