Sorry if there is already one of these on the go. I used to be on a vegan what’s for dinner thread and it was fab.

Wondered if anyone would like to join me on this one?

I’m not actually vegan, but try to eat vegan most of the time.

Tonight we’re having either jacket potatoes with hummus and salad or Asian coconut broth with rice noodles, veg and peanuts.

Friends for dinner tonight so a Moroccan feast:
Appetizer board of olives, macrona almonds, harissa houmous, pita bread, babaganoush, dolmades and sliced cucumber

Root veg and chickpea tagine with jewelled quinoa

Rose water, cardamom and pistachio cake with lemon “sour cream”

Going to orange blossom water gin and tonics to start then vegan wine

Do you have lots cookery books or goto places for ideas?

Not vegan family but one child veggie,one can't have dairy so we all ear vegan sometimes as I'm lazy because it's easier

Last night-roasted squash,mushrooms,peppers,sweet potatoes and chickpeas on bed couscous with lots herbs and sprinkled with toasted seeds

Beany pumpkin balls,kale and cashew stir-fry and rice

hello, am going to revive this thread for inspiration

I have one vegetarian child who is milk allergic so other than eggs, is almost a vegan by default (she has now left home)

and another child who is a total carnivore :)

I had the falafel pizza last night (the goodfellas one).

For breakfast I have a protein shake which is banana, peanut butter, oats, soy or almond milk, flaxseed and agave syrup. It's quite a lot of calories but it stops me being hungry till lunch!

lunch is normally some sort of bean salad or leftover from the night before

stock meals - lentil shepherd's pie (i love the green puy lentils), lentil curry.

I'm not a fan of fake cheese or meat so I tend not to eat those. Looking to branch out into cooking more so hoping to get some ideas from the thread.

last night i had peas and purple sprouting broccoli in a vegan pesto sauce with roast butternut. And a vegan magnum for pudding - they are delicious if you haven't tried them.

I am a SUCKER for a good meat replacer.

DH (not vegan) and I had the cheatin’ doner meat in home made flatbread with shredded lettuce and onions.

Honestly it was like the real thing.

It’s nearing Christmas so it’s time for the annual freezer defrost so we’re stocked up! Last night was popcorn chick’n with home made chips, corn on the cob and southern fried gravy with beans.

Tonight is mince with a jar of uncle ben’s chilli sauce with rice, spring onions and cheesy nachos made with Tesco smoked cheese.

You know those nights when you look in the fridge and feel thoroughly uninspired? Tonight was one of those, but I’m now feeling proud as I’ve created a delicious ‘something from nothing’ meal.

Stir fried loads of veg that needed using up with some frozen chilli/ginger/garlic, then made a satay type sauce with peanut butter, coconut milk and some spices. Mixed it all together with some tofu.

Vegan satay. Yum!

@daffo I got it from Holland and Barrett! They have a website though and you can order online - I really recommend giving them a try!

Great thread following with interest!
I am not vegan I would miss the cheese and milk and eggs 🤣
But realise it's a good idea not to eat these things every day.
I love making a tofu pho with ginger, chilli, spy, veg & rice noodles 🍲😁

Had a very nice tofu curry tonight with rice followed by stewed apple (done in microwave) with some soya yoghurt. Delicious!

Tonight I'm eating bombay mix for dinner. I might have a slice of toast later...

Had a chilli tonight - kidney beans, aduki beans, tomato and onions and chilli. Absolutely delicious!

Had beetroot falafel for lunch

Tonight, spinach and pea soup with some hearty crusty bread. Yum.

For lunch I made polenta in the instant pot (really yum) with roast kohl rabai ( a revelation - so delicious).

Had a Thai style stew of veg (onions, peppers, mange toutes, peas, mushrooms, tumeric, garlic, chilli, ginger, lemongrass, cardamom, fresh corriander and lime with tofu and coconut milk - it was yummy!

Just ordered Gaz Oakley's Vegan Christmas, it's been the first book where I can see myself using every single recipe!

Definitely worth the tenner!
