Sorry if there is already one of these on the go. I used to be on a vegan what’s for dinner thread and it was fab.

Wondered if anyone would like to join me on this one?

I’m not actually vegan, but try to eat vegan most of the time.

Tonight we’re having either jacket potatoes with hummus and salad or Asian coconut broth with rice noodles, veg and peanuts.

Vegan fishfinger sandwich with ketchup is my guilty pleasure. I’ve been vegan years and the only thing I ever really missed was a fish finger sandwich so I’ve eaten approx 8474738 Quorn ones since they came out 😬

Have you tried the new Vivera fish goujons? My goodness they're an absolute game changer. The texture is wonderful and they're so meaty!

The fake bbq pulled pork on crusty bread with hummus, salad.

Tonight red pesto gnocchi and more salad.

A bit of a convenience meal here too tonight. Spice Tailor Tarka Dahl, which looks vegan to me from the ingredients list. Serving with brown rice. I have some nice baby potatoes too, so I might try to fashion saag aloo out of them if I cba.

ivenoidea and avocado glad it’s not just me with the fake finger cravings! I’ve no idea if they taste like real fish fingers but at this point I don’t care. Vegetable fingers make an ok runner up in a sandwich but can be a bit soggy.

Haven’t tried the vivera goujons but the V Bites ones are pretty good. I want to find a Greene King pub that does vegan fish & chips but there’s none by me.

Today’s brekkie was facon sandwiches, I cook it for much longer than recommend to make it crispy. Tonight will be bbq, going to go shopping when the football is on - any vegan bbq recommendations??

Oh I haven’t bbq’ed anything vegan yet. Other than veg skewers, but that’s probably a bit boring!

How about portobello mushroom ‘burgers’ with garlic & rosemary? Baked potatoes maybe? You can bake them in the oven and then cut in half, cut a crisscross pattern on the flesh side, put on salt and olive oil and then warm through on the bbq.

We have a birthday party this afternoon and I don’t know what we’ll do for dinner after that. I have a hankering for gazpacho, but that takes time to chill etc. Maybe will make that tomorrow.

I’m pescatarian currently but looking to reduce/cut out dairy and the fish, so following this thread for ideas.

Tonight I’m going for a stir fry - fancy something cooked but minimum time cooking in this heat! So veggie stir fry with peanuts/cashew nuts (whichever we have in, can’t remember) and either brown rice or noodles. I’ll do a lime, coriander and sesame dressing.

Last night was falafel, flatbreads, hummus and salad - all shop bought but I really need to start making my own falafel, anyone have a failsafe recipe?

I don’t really like any of the meat substitutes, they weird me out for some reason, and eating out the veggie/vegan option is often mushrooms which give me horrendous ibs, so that’s when I tend to fall back on fish or cheese dishes but I really need to stop doing that.

Last night we ended up just snacking on olives, fruit & nut mix, crisps and crusty bread. Not especially healthy or interesting, but really cba to cook in this heat.

I’m planning to go lowish carb this week... We’ll see how that goes with veganing! I know it can be done, as some RL friends do it. I think there’s a poster on here who does it too?

It’s just a lack of will power which might be my downfall!

I made a low carb, vegan, chilled soup last week and that was delicious. Might do it again. It also involved zero cooking, so even better.

Is there such a thing as low carb gazpacho? I’ve got such a hankering for it, but the one I make has bread in it...

Also @alias. Not falafel, but falafel burgers. I used to make this^^ a lot, (before my food processor gave up the ghost Sad). It must be easy if I can do it Grin.

So, tonight I’m planning on doing courgette ribbons (instead of pasta) with roast tomatoes, garlic, olives, chilli flakes and basil. I was planning to do spaghetti, but then realised I’d prefer the courgette anyway and I can start my low carb this evening instead of in the morning.

Lowish carb fruit compote and plain coconut yoghurt (which I think is low carb?) for pudding.

I forgot when I posted before that I was supposed to be at my friends for dinner so have left DP to fend for himself! My friend made us spaghetti with olives, capers, cherry tomatoes and olive oil and balsamic vinegar. Yummy.

Just ordered some vivera goujons from Tesco. Made of wheat! Interested to see how they are.

It seems everywhere I turn there’s some dilemma - soya and almond terrible for the rainforests it seems, the thought of quorn made in a huge vat grosses me out, vegetarian in general means I tend to go so carby, meat eating is bad for environment and waistline.... will I ever find an anxiety-free way of eating?? 🤣🤣 oh dear!

Mmm these dinners sound lovely.

Today I made a sweet-spicy-made up on the spot curry.
Used an onion, pack of chopped veg (carrot, cauliflower, broccoli), garam masala, hot chilli, veg stock, red lentils, pineapples and pineapple juice, tin of tomatoes and a sprinkle of ground almonds. Cooked it all up, minimal effort but very tasty.

Tonight’s dinner was jacket potato with roasted pepper ajvar & Sainsbury’s free from garlic cream cheese, was gorgeous.

What’s everyone’s favourite margarine? We have Vitalite but I’m going off it, tried the coconut one and didn’t really work well with Marmite on toast Grin

Hmmm, I’m craving jacket spuds tonight, but wondering what to top them with - as I said I’m not actually vegan (yet? Not sure yet if I’m aiming for 100% or just most of the time) so could just go butter and cheese or similar - we have some to use up, but I really want to make as many of my meals vegan as possible so I need to think of an alternative. Like the sound of yours @Peppa - what’s ajvar please?

I could just go for beans but fancy something different.

I love jacket potatoes and hummus / roast veg / both. Bloody love jacket spuds! They’re my Achilles heel. I can eat so many Blush.

Last night was a truly uninspiring salad Sad. Tonight I’m doing veg jalfrezi with coconut cream. I might do cauliflower rice if I cba with all the grating. Otherwise it’ll be brown rice. Not low carb but hey ho.

Ajvar or aivar is basically chargrilled peppers with oil & salt but somehow delicious! I get Pelagonia brand from Sainsbury’s and Granny’s Secret from Ocado but I’m sure it’s available elsewhere, I keep meaning to scour the Eastern European shops for it.

Fake tuna & sweetcorn mayo is lovely on a jacket. It’s chickpeas mashed in mayo (I use Follow Your Heart Veganaise it’s the best!) with sweetcorn stirred in, tastes surprisingly authentic.
