I'm new at veganing and I'd like ideas and somewhere to record my meals... please let me know what vegan food is on the menu in your house tonight (or eating out too actually) I am really interested 😊

So tonight I am making veggie chilli out of sweet potato/courgette/peppers/carrot/baby corn/kidney beans etc served with guacamole and tortilla chips. I have homemade vegan brownies for dessert.

Don't think I will miss meat/dairy at all Grin

I'm doing my first vegan roast tonight:
Mushroom and ale pie
Roast potatoes and other veg
Chocolate tart: oreo and coconut butter base and chocolate and coconut milk filling. Fingers crossed the meat eaters will like it

ppeatfruit · 02/07/2017 13:57

I love mushroom pie, esp. with the dried ceps, I've made it Xmas, it's very rich, which recipe are you using? I doubt if anyone notices if you don't mention it Grin

The choc. tart sounds delicious.

Greenbread · 03/07/2017 17:55

The choc tart was nice but I didn't cook the ale down enough so was a bit bitter. Also the pastry needs some tweeking. I might try an olive oil pastry next time. I just chucked some mushrooms with cornflour and ale. Next time i'll add chestnuts , caramelise the mushrooms and cook down more Grin

ppeatfruit · 04/07/2017 10:55

No onions and garlic? The ceps are brilliant because you can use the water they're soaked in as stock with the beer, they add a richness.

Yes the mushrooms onions and garlic need gentle frying (for quite a long time with no top on the pan because they give out juice) in olive oil before mixing with the cornflour.
