I'm new at veganing and I'd like ideas and somewhere to record my meals... please let me know what vegan food is on the menu in your house tonight (or eating out too actually) I am really interested 😊

So tonight I am making veggie chilli out of sweet potato/courgette/peppers/carrot/baby corn/kidney beans etc served with guacamole and tortilla chips. I have homemade vegan brownies for dessert.

Don't think I will miss meat/dairy at all Grin

Split Oh yes beetroot juice (sorry kiki!!) i've got to set up my juicer now the warmer weather is here.

I bought a good copy of The Vegan Magazine last month it had lots of useful ideas for egg replacers I only just read it!.

Currently roasting parsnips and Carrot's with garlic and rosemary to be blended with nut butter once cooked and cooled to a dip /sauce consistency to mix with cooked cooled pasta and served sprinkled with spicy roasted chickpeas and a green salad

I'm making Spicy Lentil and Aubergine Pasta from Deliciously Ella Every Day but substituting one aubergine for courgette. Didn't have a red pepper available either but I don't think it will make a huge difference. There looks like there's going to be enough to feed an army Grin

I don't reckon that green or red peppers add anything for me except belly ache!

Restaurants put them in most veggie\vegan dishes.

I actually had a vegan meal in restaurant in Fr. yesterday (it's not the norm Grin ) Even veggies's have a hard time here!

FF that looks amazing - you made it all??!

I tried those weird miracle noodles for the first time today and realised they're the same as kelp noodles I love in a few of my local vegan restaurants, so I copied a recipe from one of them doing a vegan caco di pepe pasta dish with them and it was lush.

Planning a take away from chipotle tonight - with their tofu sofritas which I LOVE

Indian tonight: Homemade onion bhajis with a sweet and hot tomato chutney and/or peanut, coriander and green chilli chutney (to sub for yoghurt) as a starter and then Cauliflower, pea, cashew and coconut milk curry and rice.

Split Sushi is quite easy. I make it with short grain whole rice (which I let go sticky). You can get the ingredients (sheets of nori etc.) in health food shops.

Sounds very nice.

Sun is splitting the trees now but was raining and miserable at lunchtime so made Vegan Shepherds pie with a celeriac and potato mash topping with lemon dressed cavolo nero and peas. So full up I don't think I'll need dinner.

I liked my fresh pea and broad bean\spring onion and herb salad so much I made another one and mixed it with rice tagliatelli and that peanut butter dressing.

If it's just you I'd recommend avocado on good toast, with a green salad lemon\ olive oil\tahini or peanut butter dressing, if you're feeling indulgent! Our granddaughter loves it but probably not many other 10 yr. olds would!

Yes that's my and dm's lunch of choice when I'm looking after her, so easy and so delicious! It has to be pure sour dough rye toast for us though.

did the TK puttanesca polenta for dinner thinking it would be a sure fire hit. DS only liked the puttanesca sauce, DD refused all of it.

On the plus side, my vegetable refusing daughter ate her broccoli on the side
