I'm new at veganing and I'd like ideas and somewhere to record my meals... please let me know what vegan food is on the menu in your house tonight (or eating out too actually) I am really interested 😊

So tonight I am making veggie chilli out of sweet potato/courgette/peppers/carrot/baby corn/kidney beans etc served with guacamole and tortilla chips. I have homemade vegan brownies for dessert.

Don't think I will miss meat/dairy at all Grin

I adapted a recipe for Brazil nut and pea pesto from Deliciously Ella. I didn't have enough brazil nuts so topped up with the half packet of pine nuts I had and added an avocado as well. It turned out really delicious but did need extra liquid as the avocado made it a bit thick. Served it with spaghetti.

DH decided to BBQ so I had some Thai vegan burgers from the shop (they were ok, prob better if he hadn't burnt them), BBQ' courgettes, red pepper and sweet potato cooked in the coals. And IPA

I'm making garlicky black beans from Deliciously Ella to have with brown rice and a rocket and tomato salad. Will probably drizzle the lot with tahini too.

Been really lazy lately - making various pesto with roast veg type pastas and chipotle black bean chillies, veggie noodles etc a lot recently. Need to get my mojo back to branch out a bit

Very humid here today so will probably make a meze type dinner - spicy mixed bean salad, peppers stuffed with rice, pine nuts mushrooms, tomatoes, dill with garlicky soy yoghurt, olive and new potato salad, green salad or the like.

*Laura'smum" I've been off line for while, sorry it took so long to reply. When my freezer fills up I eat some of the food! (today I defrosted my rice, and pea, broad bean salad, it was lovely warm with lettuce and chopped radishes). On the terrace !

Oh yes I love the summer just because no one wants to cook and it's not necessary! Dh just came back from shopping with the most amazing canary yellow tomatoes which he ate sliced thinly with basil and olive oil\lemon dressing. He ate it with carpaccio of beef which he made too , bur the less said about that the better. I 'm allergic to both tomatoes and beef though!

I made a huge ratatouille on Sunday but forgot to freeze some. It's still in the fridge. Do you think it will still be OK to eat today?

Yes it will be fine. I often leave things in the fridge for up to 4/5 days. Actually I really fancy ratatouille now Smile

poppym I think that rat's toollies Grin tastes better after a day or so. (when I used to eat it) the flavours seem to melt together nicely. Though I don't think it freezes well.

We're having buckwheat and beetroot risotto, from Deliciously Ella. I've made it a few times now and it's one DH loves as well.

You could try quinoa but it would have a different texture. The buckwheat acts more like risotto rice so when it's all mixed together it's quite creamy in texture. It is really delicious Smile

Thanks ! Did you see my idea of using tahini\oliveoil lemon juice as dressing for a beetroot salad with chopped shallots? that is also lovely. And no cooking if you buy the ready cooked!

That sounds good. I love beetroot anything!

I sometimes make the Deliciously Ella warm beetroot, carrot and apple juice, which is gorgeous. I add some root ginger to it when juicing for added flavour.

I miss beetroot! I have ceramic braces so can't eat it because of staining

But the day they come off I'm going to have a seriously crunchy apple with crusty bread and riverford's orange and beetroot soup

I have a friend for dinner too so either going to make ribollata or buddh bowl style thing as I have a hankering for quinoa and loads of kale from the garden to use up...also a jicama so thinning of roasting it like chips

Have been on a roll this week.

Made katsu curry for dinner yesterday with potato, carrots, mushrooms and fried tofu served on a bed of rice. S&B curry powder is the magic ingredient for a truly authentic Japanese curry

Today, I cooked up coconut rice and beans with a side of plantain. So easy and so delicious.

  • 2 cups black eyed beans
  • 1 cup rice
  • 1 can cooking coconut milk (400ml)
  • ½ medium onion (sliced)
  • 2 garlic cloves
  • salt
  • black pepper
  • thyme

nessus both of those sound amazing - how do you do your tofu exactly?

I made a bit of a mexican buddha bowl in the end: baked jicama chips, roasted baby squash, chipotle adobo kale and black beans, and coriander quinoa topped off with avocado

DeliveredByKiki If I am making salt + pepper tofu I use extra firm tofu coated in seasoned tapioca starch and then lightly pan or wok-fry.

For ramen and curry, I buy ready made tofu puffs from a Chinese supermarket. Haven't braved making puffs at home yet!
