I'm new at veganing and I'd like ideas and somewhere to record my meals... please let me know what vegan food is on the menu in your house tonight (or eating out too actually) I am really interested 😊

So tonight I am making veggie chilli out of sweet potato/courgette/peppers/carrot/baby corn/kidney beans etc served with guacamole and tortilla chips. I have homemade vegan brownies for dessert.

Don't think I will miss meat/dairy at all Grin

Udon noodles stirred into tofu fried with green beans, mushrooms, ginger, green onions, garlic, and teriyaki-sesame-ginger sauce.

My favourite meals at the mo are:

Zoodles with avocado, cashew, parsley and lemon pesto.
Mushroom and black bean balls in a noodle soup with peanut butter, miso, spinach and sweetcorn, topped with avocado, parsley and spring onions
Wholewheat pizza with kale, cashew pesto , garlic mushrooms and baked sweet potato chips.
Spinach and chickpea curry
Black bean chilli in a tomato, cocoa, coffee, peanut butter sauce. Sounds weird but it tastes amazing. Great topped on a sweet potato.

My favourite dressing for everything at the mo is Sriracha sauce. Very addictive!

I ended up making red pepper pesto with cashews and having pasta!

Tonight it's beany balls-root veg,nut butter and beans,garlic and herbs rolled into balls baked- served with couscous and green salad

I'm making my favourite Farro Salad (leaving out the feta and subbing a bit of agave for the honey)www.ottolenghi.co.uk/farro-and-roasted-red-pepper-salad-shop and Vegetable kebabs

The vegetable kebabs are marinating in lemon olive oil, herbs and garlic.Will cook them on a ridged grill pan. Making a sriracha, lemon, herb, garlic and oil dressing to drizzle over after cooking. Green salad on side.

sushirocks that's a geat list, I've always put chocolate in my chilli but not tried coffee or PB, how much do you add?

We're having soup - celeriac, potato, apple, garlic, onion - and a part bake seedy loaf. Probably ice lollies for pudding!

I love cold soup on hot days, it's so easy and you can ring the changes all the time, the basics are cucumber, lettuce, spring onion some garlic, lemon juice, from a whole one. Avocado for creaminess and tahini for extra creaminess, olive oil, seasalt . I just use filtered water but vegan stock would be fine. Chop up the ingredients in a nice bowl use a hand held blender. Yum.

So tonight for dinner, we are having a fennel and oranges salad, braised onions with a sauté of celery, carrots and fennel, a freshly backed wholemeal rustic bread and Dh and the boys will have Halloumi and parmesan with it.

ppeafruit that soup sounds lovely, I have a lot of green Veg from my box delivery so will give it a go

We had friends for dinner last night so I did a fully vegan taco dinner
Corn or collard leaf tacos
Tropical fruit and mushroom ceviche
BBQ jackfruit
Tempeh with paprika and olives
Lime, chipotle adobe salsa
Guacamole

Then did an easy but delicious pud of vegan vanilla ice cream with hot raspberries

Last night I made what was supposed to be a lentil bolognese but it tasted more like a lentil chilli so had it with brown rice instead of pasta. And asparagus on the side.

DEliveredbyKiki sounds great. I keep reading about how great jackfruit is but it's not trendy enough yet here (UK) to be widely available. Looking forward to trying it some day.

My eldest DD arrived unexpectedly to stay with her BF so I had to quickly whip up a lot of side dishes as we were just planning on having some Goodlife (shop bought) carrot and nut burgers and a big green side salad. I made a white bean, tomato and red onion salad. An avocado and broad bean dip. Veg roasted on a rideged grill pan with a herb and oil viniagrette. The fridge supplied baby beetroots, kalamata olives, jalapeno and garlic stuffed queen olives and pitta breads. It ended up being a bit of a feast!

I'm bookmarking this thread. Am not strictly vegan or veggie but we do eat a lot of vegan/veggie meals. Looking for inspiration as they tend to be the same "boring" curry or lasagne or hot salad.

Some things mentioned here look yummmm

Delivered Thanks Grin I missed out one of the most important ingredients which are the green herbs of your choice, my herbal lady in the market yesterday had some lovely small leaved basil plants which would be great in the soup.

I don't know what jackfruit is!

I have just made hummus with two cans chickpeas, the whisked aquafaba from one of the cans, 1 tablespoon peanut butter, one clove garlic and a pinch of salt. This will be great for a sandwich spread

It's actually quite hard to find the tinned jackfruit here even though every vegan vendor makes and sells it. But I found some in my local grocery and it was lovely and super easy so I'm going hunt more down in the Asian supermarkets

I love the summer with all the fresh produce , it's sooo easy being a vegan\veggie. We're lucky to have so much. I've even decided to eat just fruit and veg for a day !

I'd already got a lentil shepherds pie made before pick up kids.
I've been given a beautiful homegrown cauliflower by a friend at school gates.I don't want just use it as an accompaniment to tonights tea,so plan use it tomorrow
Was thinking maybe roast it Moroccan spices some chickpeas and a spinach salad with flaked almond?!
Anyone got any other great cauli ideas?
